Absolutely anything stuffed with cheese is bound to be delicious. These mince and cheddar filled gem squash are no exception. Serve them as a fuss-free meal or as a hearty side at your next family dinner.

INGREDIENTS
2 tbsp olive oil
1 onion, peeled and finely chopped
500g beef mince
410g tin chopped tomatoes
3 cloves garlic, peeled and crushed
½ tsp dried origanum
½ tsp dried parsley
½ tsp dried thyme
Salt and pepper
Sugar
4 gem squashes, cut in half
50g cheddar, grated
METHOD
1. Preheat oven to 200°C.
2. Heat the oil in a large pot over medium heat. Add the onion and fry for 3 minutes, until soft. Then turn up the heat, add the mince and fry for 5 minutes, until brown.
3. Add the tomatoes, garlic and herbs. Turn down the heat and let simmer for 25 minutes. Then season and add a pinch of sugar.
4. Arrange the squash halves in the bottom of a large pot and fill with water to reach halfway up their sides. Bring to a simmer and steam for 15 minutes, until cooked through, then spoon out the seeds.
5. Fill the squash with the mince and sprinkle some cheese on top of each one. Bake for 10 minutes, until the cheese has melted, then serve.
