While you’re taking time to make these delectable condiments, go all in and crack it! Crackers are the perfect partner to all of your preserves.
Phyllo crackers
Makes 26
Ingredients
4 sheets phyllo
Butter Paprika
Salt anti milled pepper
Method
- Preheat oven to 200°C.
- Dust a work surface and place one sheet of phyllo in front of you.
- Brush phyllo surface with butter, then lightly sprinkle over paprika, salt and pepper.
- Place the second layer of phyllo on top of the first.
- Repeat with remaining two sheets of phyllo, brushing with butler and seasoning before adding the next sheet.
- Finish with a final layer of butter on the top, followed by a final seasoning.
- Slice phyllo sheet into rectangles of 10×4.5cm.
- Arrange crackers on a baking tray. cover with a piece of baking paper followed by a second baking tray to weigh it down.
- Bake for 10 minutes, remove the top tray and paper, then bake for another 10 minutes until golden and crisp.
- Remove and cool.
Cheese crackers
Makes 23
Ingredients
1 cup (150g) flour
1 tsp garlic powder
1 Tbsp dried Italian herbs
1 tsp fine salt
½ cup grated Cheddar
1/3 cup cold butter, grated
7 Tbsp ice water
1 tsp paprika
For the seed mix
2 Tbsp black sesame seeds
2 Tbsp white sesame seeds
1 tsp Italian herbs
Method
- Sift together the flour, seasoning and salt.
- Toss through the cheese.
- Add the butter and work together using your fingers to create a breadcrumb texture.
- Add the water and mix to combine, adding more water if the mixture is too dry.
- Press dough and roll into a long, thick coil about 18cm long and 4cm wide.
- Refrigerate for 20 minutes.
- Preheat oven to 180°C.
- Combine seeds and scatter onto a tray in a wide line.
- Roll coil over seed mix, pressing to secure the seeds to the mixture.
- Slice coil into thin biscuits.
- Bake biscuits a batch at a time for 10-14 minutes, until the cheese is golden and biscuits have flattened out slightly. Cool.
Pita crackers
Makes 32
Ingredients
4 pitas
¼ cup butter, melted
10g parsley, finely chopped
2 cloves garlic, minced
1 Tbsp za’atar spice
Method
- Preheat oven to 180°C.
- Stir together butter,parsleyand garlic.
- Brush butter mixture onto each pita, then sprinkle lightly with za’atar.
- Slice each pita into 8 triangles.
- Bake for 10-15 minutes.
- Sprinkle over salt, then cool.
