Summer Picnic Iced Tea

If you’re planning a spring picnic anytime soon, we’ve got you covered with a drinks recipe that the whole family will enjoy!

MAKES 2–4 litres

 

INGREDIENTS

Water 4 cups 

Granulated sugar ¾ cups

Bicarbonate of soda ¼ tsp

Black tea bags 12

Juice from 5 lemons 

Lemons, thinly sliced 2

Mint sprigs 3 

Peaches, sliced 2 

1. Bring the water to a boil, add to a heat-proof jug along with the baking soda and sugar. Mix well to dissolve.

2. Add the tea bags and steep for 10 minutes (the more time steeped, the stronger the flavour).

3. Remove the tea bags without squeezing them (this prevents the tea from becoming bitter).

4. Add the lemon juice and fill the rest of the jug with cold water.

5. Refrigerate until chilled.

6. Add lemon slices, mint and peaches, along with a few handfuls of ice to the jug. 

7. Seal and refrigerate until you leave for your picnic, at least an hour.
