SERVES 4 // PREP TIME 10 min // COOK TIME 15 min
INGREDIENTS
For the chicken filling
2 chicken breast fillets, cut into strips
2 tsp chicken spice
1 tsp oil
1 onion, diced
2 cups frozen stir-fry mix
For the sweet-and-sour sauce
½ cup sugar
½ cup lemon juice
4 garlic cloves, minced
1 tbsp dry chilli flakes
1 tsp paprika
Salt and pepper
To serve
4 tortilla wraps
¼ cup cream cheese
Mixed salad leaves
METHOD
For the chicken filling
1. Season the chicken with the chicken spice. Heat oil in a pan and fry until cooked through. Remove from the pan.
2. In the same pan, fry the onion and frozen stir-fry mix for 4 minutes or until tender.
For the sweet-and-sour sauce
1. Heat a pan over low heat and add all the ingredients. Season to taste. Let it simmer and reduce, then remove from the heat.
To serve
1. Place the tortillas on a flat surface, then spread the cream cheese at the edges. Add some salad leaves. Place the stir-fry mix in the middle, drizzle over some sweet-and-sour sauce and fold up the tortilla. Slice in half and enjoy.
