Legend has it that the Eton mess was ‘invented’ when a Labrador sat on a strawberry Pavlova during the annual cricket game at Eton College. True or not this treat has been a hit at the famous British school, and around the world, for nearly a century.

SERVES 2 // COOKING TIME 30 min

INGREDIENTS
½ cup cream
½ tsp vanilla essence
1 tsp icing sugar
160g raspberries
2 meringues, crushed
1 tbsp raspberry jam

METHOD
1. In a mixing bowl, whisk the cream with the vanilla essence and the icing sugar until it forms soft peaks.
2. Fold in the remaining ingredients, reserving some of the raspberries and meringue to garnish. Chill in the fridge for 10 minutes.
3. To serve, pile the mixture on to a serving plate and garnish with the remaining raspberries and meringue.
