There’s no denying it: we love brinjal! Packed with flavour, this Mediterranean veg has the perfect texture to use it as a meat substitute. If you have been looking for a new veggie weeknight dinner, we think you’ll enjoy our brinjal schnitzels with coriander mayo.
SERVES 4 // cooking time 15 min
INGREDIENTS
2 cups dry breadcrumbs
Salt and cracked black pepper
2 eggs, beaten
2 brinjals, cut into ¼ cm slices
¼ cup vegetable oil
½ cup mayonnaise
¼ cup coriander pesto
METHOD
1. Place the breadcrumbs in a shallow dish and season. Pour the eggs into another shallow dish.
2. Dip each slice of brinjal in the egg, then the breadcrumbs, coating well.
3. Heat the vegetable oil in a non-stick frying pan over medium heat. Fry the brinjal slices for 3 minutes on each side, until golden and crispy. Remove and drain on paper towel. Season.
4. Mix the mayonnaise and pesto. Season. Serve with the brinjal schnitzels.
