6 rooibos tea bags
100g caster sugar
2 lemons, sliced, plus 2 tbsp juice
1. Place the water, tea bags and sugar in a large pot set over low heat. Bring to a simmer. Remove from heat and allow to steep for one hour.
2. Add two thirds of the lemon slices and all the lemon juice. Refrigerate for half an hour, then strain into a glass bottle.
3. Serve with remaining lemon slices.
