Add a twist to your regular burger evenings this Sunday, by making our Greek lamb burgers in pita pockets recipe instead. They won’t disappoint!
SERVES 4
INGREDIENTS
For the tzatziki
½ large cucumber, grated
1 tsp salt
¾ cup plain yoghurt
1 garlic clove, peeled and minced
1 tsp dried mint
1 tsp red wine vinegar
For the burgers
600 g lamb mince
8 spring onions, sliced
2 cloves garlic, peeled and minced
1 tsp dried thyme
Salt and pepper
2 tbsp oil
2 pitas, cut in half and toasted
Fresh mint, chopped, to garnish
METHOD
For the tzatziki
1. Place the cucumber and salt in a sieve and squeeze out as much liquid as you can.
2. In a medium-sized bowl, combine the salted cucumber, yoghurt, garlic, mint and red wine vinegar.
For the burgers
1. In a large bowl, combine the lamb mince with the spring onions, garlic and thyme, and season well with salt and pepper. Press the mince into four equally sized patties.
2. Brush each patty with a little oil and cook for 10 to 12 minutes on a medium-hot griddle pan.
3. Serve the grilled lamb patties in the halved pita pockets. Top with a large dollop of tzatziki and garnish with fresh, chopped mint.
