Traditional masala chai

The next time you sit down for your morning cuppa, perhaps consider spicing it up with the delectable taste, aroma and health benefits of a blend tailored in India. Masala chai, or quite simply chai as it is commonly known, dates back to the early 1900s, and comes with a story as unique as its flavour.

MAKES 1 cup // COOKING TIME 30 min

INGREDIENTS
350 ml water
100 ml milk
4 peppercorns
10 green cardamom pods, crushed
Small piece cinnamon stick
1 clove
1 tsp fresh ginger, peeled and sliced
1 black teabag
Sugar, to taste

METHOD
1. In a saucepan heated over medium-high heat, combine water, milk and spices and bring to the boil.
2. Lower the heat to medium and allow the mixture to simmer for 15 minutes until it has reduced to cup size volume.
3. Add the teabag and allow it to brew.
4. Strain the solution into a cup, and serve with sugar, if desired.
