INGREDIENTS
180g wholewheat flour
110g brown sugar
70g raisins
60g All-Bran flakes
250 ml grated carrot (±4 carrots)
125 ml coconut flakes
2 small bananas, mashed
500 ml buttermilk
60 ml vegetable oil
1 egg, lightly beaten
1 tsp baking powder
1 tsp bicarbonate of soda
½ tsp cinnamon
Pinch of salt
Dried banana chips, to decorate
METHOD
1. Preheat oven to 180°C and line a muffin tray with muffin cups.
2. Combine all the ingredients (except the dried banana chips).
3. Fill each cup halfway with the mixture. Top each muffin with a dried banana chip.
4. Bake for 20–25 minutes, or until a skewer comes out clean. Remove from the oven and cool on a wire rack.
