Whether you’re lactose intolerant, going dairy-free or just can’t resist this beautiful recipe, you won’t miss the milk in this decadent banana split health shake.
SERVES 2 // COOKING TIME 20 min
INGREDIENTS
2 large bananas, peeled and frozen overnight
2 tbsp cacao powder
1 tbsp nut butter
¼ cup dairy-free milk of choice
½ tsp vanilla essence
Dates or xylitol, to taste, optional
For the coconut whipped cream
1 tin coconut milk, refrigerated overnight
1 tsp honey
To serve
1 ripe banana, peeled
1 tbsp coconut flakes, toasted
1 tbsp cacao nibs
METHOD
1. Place the frozen bananas, cacao powder, nut butter and milk in a blender and blend until thick and creamy. Add vanilla, with more milk to adjust to your desired thickness. Add dates or xylitol for added sweetness. Blend.
2. Store the smoothie jug in the freezer.
For the coconut whipped cream
1. Scoop the thick coconut cream into a bowl, leaving the water behind.
2. Whip with the honey until light and fluffy.
To serve
1. Cut the ripe banana lengthways into 4 slices.
2. Place 2 banana slices into 2 serving glasses and press with a spoon to adhere to the sides.
3. Pour the smoothie into the glasses and top with coconut whipped cream, toasted coconut flakes and cacao nibs.
