Makes 2ℓ
Ingredients
1 cup sugar
3.5 cm ginger, peeled and grated
7½ cups filtered water
3 tbsp lemon juice
1 tsp dry yeast
Method
1. Over medium heat, dissolve the sugar and ginger in ½ cup of water. Take off heat and steep for an hour.
2. Pour into a plastic bottle with the remaining water, lemon juice and yeast. Shake to dissolve the yeast, then leave to stand for 2–3 days until it starts to fizz.
3. Refrigerate to slow down fermentation and consume within 2 weeks.
