<h2><span data-contrast="auto">Ama-zing </span><span data-ccp-props="{}"> </span></h2>
<p><span data-contrast="auto">Buttermilk, or amasi as it’s fondly known here in Mzansi, is more that just a fermented dairy drink made from the liquid left behind after churning butter. If you’re treating the family by throwing some meat over the coals this month, why not opt for a buttermilk marinade as a twist to the norm. The lactic acids in buttermilk do a brilliant job of tenderising meat and adding heaps of flavour. It also works well with both red and white meat. Do note that the longer the meat marinates, the more the outer layer of the meat breaks down – so smaller cuts will naturally marinate quicker. Here’s my favourite buttermilk marinade that’s just as simple as it is effective: </span><span data-ccp-props="{}"> </span></p>
<h3><span data-contrast="auto">Basic buttermilk marinade recipe </span><span data-ccp-props="{}"> </span></h3>
<p>Whisk together 1 bottle buttermilk, 2-3 deseeded and chopped red chillies,  2 tsp grated ginger, 3 crushed garlic cloves,  1 tsp salt,  3 Tbsp chopped fresh coriander, 1 lemon zested and juiced.</p>
<p><strong>Make it Malay</strong><br />
Add 1 Tbsp mild curry powder, 2 tsp turmeric, 1 tsp ground coriander and 1 tsp ground cumin.</p>
<p><strong>Make it French<br />
</strong>Omit chillies and ginger. Add 1 Tbsp wholegrain mustard and use thyme and rosemary instead of coriander. You can also add 1 tsp finely chopped capers and/or anchovies for extra saltiness and flavour.</p>
<h2><span data-contrast="auto">Buns of steel</span></h2>

<p><span data-contrast="auto">If you’re like me, you’ll be stocking up on hot cross buns before they fly off the shelves come Easter weekend. T</span><span data-contrast="auto">he </span><i><span data-contrast="auto">MK </span></i><span data-contrast="auto">team has whipped together some interesting ways to turn those buns into some showstopper meals and treats. Now, the one thing I do hate is food waste, so if you find yourself with excess hot cross buns that are about to go stale, don’t throw them away. Roughly chop the </span>buns<span data-contrast="auto">, place onto a greased baking tray, drizzle with </span>oil <span data-contrast="auto">and season. Pop into a 180°C preheated oven for about 4-6 minutes until golden and crispy. Then use them as croutons to add crunch to your favourite salad, swirl through vanilla ice cream for lovely texture or enjoy as is for a quick snack between meals. </span><span data-ccp-props="{}"> </span></p>
<h2><span data-contrast="auto">Trendsetter</span><span data-ccp-props="{}"> </span><span data-ccp-props="{}"> </span></h2>
<p><span data-contrast="auto">The tornado omelette has been going viral for a while now, and I must admit: I was not convinced until I tried it out myself. Not only is it incredibly easy to achieve (as long </span><span data-contrast="auto">as you have a pair of chopsticks), but it’s also super fun to create. Simply follow these easy steps!</span><span data-ccp-props="{}"> </span></p>
<ol>
<li>Whisk 3 eggs and a glug of milk in a bowl. Season.</li>
<li>Add oil to a large pan and swirl to coat the base.</li>
<li>Pour in your eggs. Once you see a yellow rim form around the edges of the egg, use chopsticks to pull the outer edges towards the centre.</li>
<li><span data-contrast="auto">Holding the eggs and chopsticks in the centre, start spinning the pan in a circular motion to create the “tornado”. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Once the “tornado” starts to form, shift eggs to one side of the pan while you continue spinning so that all the egg is incorporated.</span></li>
<li><span data-contrast="auto">Transfer to a plate and enjoy immediately.</span></li>

<li><span data-contrast="auto"> In a bowl, combine the cake flour, garlic powder (if using) and season. </span></li>
<li><span data-contrast="auto"> Heat oil in a large pot or pot for shallow frying. 5. Toss the calamari into seasoned flour, dust off excess and fry in batches for about 2-3 minutes each. Drain on paper towel. </span></li>
<li><span data-contrast="auto"> Blanch the sugar snap peas in a pot of salted boiling water and refresh in ice water. </span></li>

<li><span data-contrast="auto"> Preheat oven to 180 ̊C. </span></li>
<li><span data-contrast="auto"> Combine the buttermilk, garlic, chilli flakes and herbs. </span></li>
<li><span data-contrast="auto"> Season the steak well and add to the marinade, tossing to coat evenly. Set aside to marinate for at least 30 minutes.</span></li>
<li><span data-contrast="auto"> Toss baby potatoes with oil and season well. Place onto a baking tray and bake for about 20-25 minutes. </span></li>
<li><span data-contrast="auto"> Meanwhile for the sauce, heat a glug of oil in a pot and fry onions, garlic and peppercorns for about 4-6 minutes, stirring regularly. </span></li>
<li><span data-contrast="auto"> Add the butter and stir through flour until smooth. </span></li>
<li><span data-contrast="auto"> Pour in the cream and stir through mustard and herbs. Simmer gently over a low heat while stirring until the cream has thickened.</span></li>
<li><span data-contrast="auto"> Stir through lemon zest, juice and season well. Set sauce aside.</span></li>
<li><span data-contrast="auto"> Remove the potatoes from the oven and use the back of a fork to smash each potato gently. Drizzle with melted butter, sprinkle with Parmesan and return to the oven for another 15 minutes or until golden and cooked through.</span></li>
<li><span data-contrast="auto"> Remove the steak from the marinade, pat dry and heat a glug of oil in a large pan.</span></li>
<li><span data-contrast="auto"> Fry the steaks for about 3-4 minutes per side for medium rare. Set aside to rest for at least 5 minutes before slicing.</span></li>

<li><span data-contrast="auto"> Heat oil in a large pan and fry onions for 3-5 minutes. </span></li>
<li><span data-contrast="auto"> Add garlic, thyme and chilli and fry for a further 2-3 minutes until golden. </span></li>
<li><span data-contrast="auto"> Add pork mince and cook for about 6-8 minutes until well browned. </span></li>
<li><span data-contrast="auto"> Toss in the butter, spices and cook for 2 minutes. </span></li>
<li><span data-contrast="auto"> Add the tomato relish or chopped tomatoes, Worcestershire sauce and sugar and cook for about 10-12 minutes while stirring regularly. </span></li>
<li><span data-contrast="auto"> Stir through coriander and season well. Set aside to cool completely. </span></li>
<li><span data-contrast="auto"> Preheat oven to 180 ̊C. </span></li>
<li><span data-contrast="auto"> Roll out dough onto a lightly floured surface to about 3mm thick.</span></li>
<li><span data-contrast="auto"> Using a side plate or large cookie cutter, cut out circles of about 12cm in diameter. You should end up with between 12-15 circles. </span></li>

<li><span data-contrast="auto"> Add butter and once melted, remove from heat and whisk in the flour. </span></li>
<li><span data-contrast="auto"> Place the pot back onto a low heat then add milk and cream, while stirring until thickened. This should take about 6-8 minutes. </span></li>
<li><span data-contrast="auto"> Stir through mustard and sun-dried tomatoes and simmer gently for about 3-5 minutes. </span></li>
<li><span data-contrast="auto"> Season well and fold through baby spinach, simmer for 1 minutes and remove from the heat. </span></li>
<li><span data-contrast="auto"> In a bowl, toss the cooked pasta with the sauce and coat evenly. </span></li>

<p><span data-contrast="auto">Quick tips on how to use gelatine in bakings</span><span data-ccp-props="{}"> </span></p>

<li><span data-contrast="auto"> Gelatine contains animal products and isn’t vegetarian or halal. Substitutes such as Agar Agar (made from seaweed) or Xanthan gum (corn and sugar) can create effects similar to gelatine.</span></li>
</ol>

<li><span data-contrast="auto"> 1 tsp powdered gelatine equals 2 leaves gelatine – but each one has different setting abilities. Substituting them may not result in the required consistency. 3 tsp gelatine (6 sheets) sets 500ml liquid.</span></li>
</ol>
<ol start="3">
<li><span data-contrast="auto"> Processing gelatine is called “blooming”. To bloom sheets, submerge completely in cold water for 10 min then gently wring out the liquid. The hydrated sheets are now ready to be used in recipes or can be melted.</span></li>
</ol>

<li><span data-contrast="auto"> To melt gelatine, microwave for 3 seconds at a time, stirring in-between. You can also heat a small pot of water on the stove, place gelatine in a glass jug and lower into the hot water, stirring gently until melted. Don’t overheat as it will lose its setting capacity.</span></li>
<li><span data-contrast="auto"> When adding melted gelatine to a cold mixture, the process needs to be fast. Whisk the specified amount of cold water into granules and set aside for 10 minutes. (FYI: It’s a powder, so you can’t put it under water like a sheet.)</span></li>

</span><span data-contrast="auto">3 Tbsp barbecue spice</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">4 eggs, whisked </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">2-3 cups crushed cornflakes </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">Vegetable oil for deep-frying</span><span data-ccp-props="{}"> </span></p>
<h3><span data-contrast="auto">Method</span><span data-ccp-props="{}"> </span></h3>
<ol>
<li><span data-contrast="auto"> Place the brine ingredients into a pot and bring to a boil. Stir until sugar dissolves and remove from the heat. </span></li>
<li><span data-contrast="auto"> Add 1L cold water and 2 cups ice to the brine then allow to cool completely. </span></li>
<li><span data-contrast="auto"> Meanwhile using a skewer or fork, poke holes into each chicken drumstick (this allows the brine to absorb better). </span></li>
<li><span data-contrast="auto"> Place the chicken into the cold brine, cover and refrigerate for at least 3-4 hours, overnight is best. </span></li>
<li><span data-contrast="auto"> Remove the chicken from the brine and pat dry with paper towel. </span></li>
<li><span data-contrast="auto"> Whisk together the cake flour, salt, pepper and barbecue spice in a bowl. </span></li>
<li><span data-contrast="auto"> Fill two bowls, one with the whisked egg and the other with crushed cornflakes. </span></li>

<li><span data-contrast="auto"> Add half the corn flour and toss to coat evenly, creating a wet paste. Set aside to marinate for about 30 minutes, overnight is best. </span></li>
<li><span data-contrast="auto"> Add the remaining corn flour and toss to coat. </span></li>
<li><span data-contrast="auto"> Deep-fry wings in batches for 3-4 minutes (do not cook them all the way through). Drain on paper towel. </span></li>
