</span><span data-contrast="auto">1 cup shredded kale or spinach</span><span data-ccp-props="{}"><br />

<ol>
<li><span data-contrast="auto"> Use about two thirds of the dressing to coat the tofu and mushrooms and marinate for at least 30 minutes. </span></li>
<li><span data-contrast="auto"> Heat oil over medium heat and fry tofu, mushrooms and marinade liquid until golden and sticky, about 10-12 minutes. Set aside. </span></li>
<li><span data-contrast="auto"> To assemble, divide the cauli rice between two bowls and top with sticky tofu, mushrooms and vegetables. </span></li>
<li><span data-contrast="auto"> Drizzle with the reserved dressing, scatter with spring onion and serve topped with pickled ginger.</span></li>

<li><span data-contrast="auto"> Fry the edamame beans until golden, about 5-8 minutes. </span></li>

<b>1 tbsp</b> vegetable oil<br />
<b>For the veg topping<br />
</b><b>½ cup</b> smooth cottage cheese<br />
<b>1 tsp</b> finely chopped parsley<br />
<b>⅓<span class="Apple-converted-space">  </span>cup</b> chopped cucumber<br />
<b>1</b> baby marrow, ribboned<br />
<b>⅓<span class="Apple-converted-space">  </span>cup</b> breadcrumbs, toasted<br />
<b>For the minted pea topping<br />
</b><b>½ cup</b> plain yoghurt<br />
<b>2 tsp</b> lemon juice<br />
<b>1</b> garlic clove, minced<br />
<b>½ cup </b>peas, blanched<br />
<b>1 tsp</b> olive oil<br />
<b>¼ </b>red onion, sliced<br />
<b>4</b> mint sprigs<br />
<b>For the cheesy bacon topping<br />
</b><b>½ cup</b> mayonnaise<br />
<b>1½ cups</b> grated Cheddar<br />
<b>1 tsp </b>paprika<br />
<b>6 slices </b>bacon, chopped and fried<br />
<b>1</b> spring onion, sliced</p>
<p class="p1"><b>METHOD<br />
</b><b>For the potatoes<br />
</b><b>1. </b>Preheat oven to 200°C.<br />
<b>2.</b> Prick the potatoes with a fork, brush with the oil and season.<br />
<b>3. </b>Arrange on a baking tray and bake for 1 hour to 1 hour 15 minutes, until crispy on the outside and soft on the inside.<br />
<b>4.</b> Slice a big X into each potato and cool slightly before stuffing.<br />
<b>For the veg topping<br />
</b><b>1.</b> Mix the cottage cheese with the parsley. Season with salt and pepper, then fill the potatoes.<br />
<b>2. </b>Top with the cucumber and baby marrow, and then sprinkle with toasted breadcrumbs.<br />
<b>For the minted pea topping<br />
</b><b>1. </b>Mix the yoghurt, lemon juice and garlic and season. Toss the peas with the olive oil.<br />
<b>2.</b> Fill the potatoes with the yoghurt and peas and then top with red onion and mint leaves.<br />
<b>For the cheesy bacon topping<br />
</b><b>1. </b>Scoop out half of the flesh from each potato and mix with the mayonnaise, 1 cup of the Cheddar and the paprika. Season well and use to fill the potatoes.<br />
<b>2.</b> Sprinkle with the remaining cheese and bake for 5 minutes, until the cheese is melted.<br />
<b>3.</b> Top with crispy bacon and sliced spring onion.</p>

<p class="p1"><b>SERVES</b> 4 <b>// COOKING TIME </b>1 hour</p>
<p class="p1"><b>INGREDIENTS<br />
</b><b>½ cup</b> vegetable oil<br />
<b>3</b> potatoes, thinly sliced<br />
<b>3 tbsp</b> butter<br />
<b>5</b> leeks, sliced lengthwise<br />
Salt and pepper<br />
<b>100 g</b> feta, crumbled<br />
<b>½ cup</b> cream<br />
<b>½</b> <strong>sprig</strong> rosemary, chopped<br />
<b>250 g</b> shortcrust pastry<br />
<b>1</b> egg, beaten<br />
<b>1 tbsp</b> sesame seeds</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Heat the oil and shallow-fry the potatoes until golden, then set aside to cool.<br />
<b>2. </b>Melt the butter and fry the leeks until softened. Season with salt and pepper.<br />
<b>3.</b> Use a fork to whip together the feta, cream and rosemary.<br />
<b>4.</b> Lay out the pastry on a lined baking tray and cut into a rough circle. Spread with the feta filling and arrange cooked potatoes and leeks on top.<br />
<b>5.</b> Fold in the edges of the pastry, tucking and overlapping them.<br />
<b>6. </b>Brush the pastry with beaten egg and sprinkle with sesame seeds. Store in the fridge until ready to eat.<br />
<b>7. </b>Bake at 180°C for 25 minutes, until pastry is golden.</p>

<b>2</b> <strong>sprigs</strong> thyme, chopped<br />
Sea salt and black pepper</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Cook the potatoes in boiling water for 10–15 minutes, until parcooked. Drain and set aside to cool to room temperature.<br />
<b>2.</b> Heat the oil to 180°C. Fry the potatoes until golden and crispy, 15 minutes.<br />
<b>3.</b> Place the garlic and herbs in a bowl and add the warm potatoes. Season with salt and pepper, and toss to coat.</p>

<p class="p1"><b>INGREDIENTS<br />
</b><b>1 tbsp </b>olive oil<br />
<b>2</b> onions, peeled and grated<br />
<b>1½ tbsp</b> paprika<br />
<b>1½ tbsp</b> ground ginger<br />
<b>1 tbsp</b> turmeric<br />
<b>2 tsp</b> ground black pepper<br />
<b>2 tsp</b> cinnamon<br />
<b>1 tsp</b> cayenne pepper<br />
<b>3</b> <strong>cloves</strong> garlic, peeled and crushed<br />
<b>3</b> beetroots, peeled and chopped<br />
<b>1 </b>butternut, peeled and chopped<br />
<b>2 × 400 g</b> tin chopped tomatoes<br />
<b>2 × 400 g</b> tin chickpeas<br />
<b>600 ml</b> vegetable stock<br />
<b>½ cup</b> raisins or chopped dried apricots<br />
<b>2 tbsp </b>sugar or honey<br />
Salt and pepper<br />
<b>2 tbsp</b> chopped parsley</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Heat the oil in a large pot over medium heat. Add the onions and spices and fry for 10 minutes, until the onions are soft and spices are fragrant.<br />
<b>2. </b>Add remaining ingredients (except the parsley). Bring to a simmer and cook for 45 minutes, until liquid is slightly reduced.<br />
<b>3. </b>Season with salt and pepper. Garnish with parsley and serve with rice or flatbread.</p>
