<p><em>You can swap out salami for shredded chicken and mozzarella for crumbled feta or dollops of cultured crème. </em></p>
<p><span data-contrast="auto">Peel and deseed half a <strong>spanspek</strong> (sweet melon). Cut into 4 wedges, then very thinly slice each wedge lengthways. Halve and slice 2 <strong>nectarines</strong> in the same way. Place 1 packet (80g) <strong>rocket</strong>, ½ punnet (10g)<strong> fresh basil</strong>, stems discarded, and ½ sliced <strong>red onion</strong> into a large salad bowl. Top with fruit slivers and toss together. Dot with 200g <strong>fresh mozzarella balls</strong> (bocconcini) and 1 packet (100g) <strong>Italian salami</strong>. <p><span data-contrast="auto">Place 1 sheet <strong>phyllo pastry</strong> onto a clean surface and brush with melted butter. Top with another pastry sheet and repeat process another four times. Place 1 (125g) <strong>camembert</strong> wheel into the centre of the pastry and scrunch up the ends to enclose, creating a parcel. Wrap the &#8220;parcel&#8221; neatly in two layers of foil making sure it is secure. Create a well with medium-hot coals, placing the phyllo parcel in the centre. Cook for about 8-10 minutes, turning regularly until pastry is cooked and cheese has melted. Unwrap, place on a serving platter, drizzle with <strong>honey</strong> and sprinkle with chopped <strong>mixed nuts</strong>. Slice 1 coil (300g) <strong>chorizo</strong> into 2cm-thick slices and fry for 3-4 minutes until crisp. <li><span data-contrast="none">Heat oil or butter in a large pan. </span></li>
<li><span data-contrast="none">Ladle ¼ cup of the batter into the pan and swirl to coat the base. </span></li>
<li><span data-contrast="none">Fry for about 3–4 minutes over a low heat, then flip and fry the other side until lightly golden and cooked through. </span></li>

<li><span data-contrast="none"> Heat the butter and sugar in a pan. Add the apples, cut sides down, and fry for 5 minutes over medium heat.</span></li>
<li><span data-contrast="none"> Add the water and vodka and cook for 5 minutes.</span></li>
<li><span data-contrast="none"> Mix the oats, almond butter and ¼ cup honey. Spread on a tray and bake for 5 minutes.</span></li>
<li><span data-contrast="none"> Mix the cream cheese with 1 tsp honey and vanilla.</span></li>
<li><span data-contrast="none"> Dollop cream cheese on to plates, top with apples, drizzle with pan juices and sprinkle with oat crumble.</span></li>

<li><span data-contrast="none"> Bake for 8 to 10 minutes, until the cheese is bubbling and the top is golden brown.</span></li>

<p><strong>FOR THE SALMON  </strong></p>

<p><b><span data-contrast="auto">Chef&#8217;s Tip: </span></b><span data-contrast="auto">Counting pennies? Swap out salmon for hake, snoek or kingklip. </span><span data-ccp-props="{}"> </span></p>
<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Preheat oven to 180°C. </span></li>
<li><span data-contrast="auto"> Spread potatoes out on a greased baking tray. Drizzle with oil, season, and sprinkle over half the garlic. Roast for about 20-25 minutes or until golden and cooked through. </span></li>
<li><span data-contrast="auto"> In a saucepan, heat butter and add onions and remaining garlic. Fry for about 5-6 minutes, then add peas and stock, and simmer gently for about 5 minutes. Set aside to cool slightly. </span></li>
<li><span data-contrast="auto"> Blitz pea mixture until smooth. Add herbs, lemon zest and juice, season and stir to combine. </span></li>
<li><span data-contrast="auto"> Season salmon generously. Heat oil in a large pan and fry fish skin-side down for about 2-3 minutes. Flip salmon and fry for 2 minutes. Set aside. </span></li>
<li><span data-contrast="auto"> Crank oven to grill setting and place fillets on a greased baking tray. </span></li>
<li><span data-contrast="auto"> Combine honey, mustard and chilli, and brush salmon with half the mixture. Grill for about 2-3 minutes and remove from oven. Brush with remaining sauce and set aside. </span></li>

<li><span data-contrast="auto"> Add mushrooms and cook for a further 3-5 minutes. Season and set aside. Place mixture into a clean tea towel and squeeze to release extra moisture. </span></li>
<li><span data-contrast="auto">5. In a clean, dry pan, wilt spinach and set aside to cool. Place into a clean tea towel and squeeze to release extra moisture. </span></li>

<li><span data-contrast="auto"> Place puff pastry on a lightly floured surface and roll out to about 3mm thick. </span></li>

<h3>Method</h3>

<li><span data-contrast="auto"> Drizzle lamb with oil and season. Rub with ground coriander, cumin and paprika. </span></li>
<li><span data-contrast="auto"> Heat oil in a large pot and brown lamb in batches for about 2-3 minutes per side. Set aside. </span></li>
<li><span data-contrast="auto"> Add onions and garlic to the same pot and fry for about 5 minutes. </span></li>
<li><span data-contrast="auto"> Return lamb to pot and add fresh coriander, stock and harissa. Simmer gently, covered, for about 21/2 hours or until meat is tender. </span></li>
<li><span data-contrast="auto">5. Remove lamb and blitz remaining liquid until smooth. </span></li>
<li><span data-contrast="auto"> Simmer sauce until reduced by half. Season well and add a squeeze of lemon. </span></li>
<li><span data-contrast="auto"> To make the polenta, bring water and salt to the boil. </span></li>
<li><span data-contrast="auto"> Whisk in polenta, taking care to beat out any lumps. Add butter. </span></li>
<li><span data-contrast="auto"> Whisk until polenta thickens slightly, then cover and simmer gently for about 20 minutes, stirring regularly with a wooden spoon. </span></li>
<li><span data-contrast="auto"><span data-contrast="auto"> Season well and stir through cream cheese and herbs. 11. Serve lamb with polenta and sauce.</span></span></li>

<li><span data-contrast="auto"> Whisk milk, eggs and vanilla in a large bowl until combined. </span></li>
<li><span data-contrast="auto"> Dip bread into egg mixture and allow to soak for about 30 seconds. </span></li>
<li><span data-contrast="auto"> Heat oil or butter in a large pan and fry French toast in batches for 3-4 minutes per side until golden. </span></li>
<li><span data-contrast="auto"> Drain on paper towel and serve with toppings of your choice. </span></li>

<p><strong>Feeding a memory</strong></p>
<p><span style="font-weight: 400;"> </span><i><span style="font-weight: 400;">What important tips did your mother give you about cooking that you still use today?</span></i><span style="font-weight: 400;"> </span></p>
<p><span style="font-weight: 400;">Taste, taste, taste from start to finish when cooking. And she has taught me how to respect food and never waste anything.</span></p>
<p><span style="font-weight: 400;"> </span></p>
<p><i><span style="font-weight: 400;">What is a key lesson your mom taught you when it comes to food?</span></i></p>
<p><span style="font-weight: 400;">Know where your food comes from. I was raised on a farm in Bathurst in the Eastern Cape so most of the protein and vegetables were our responsibility to grow and manage. So from a young age, I knew from whence my food came and had respect for what I ate.</span></p>

<p><i><span style="font-weight: 400;">What is one of your favourite memories of you and your mom in the kitchen?</span></i></p>
<p><span style="font-weight: 400;">Making an insane amount of mince pies each Christmas. My mom used to make them for the local home industries and I just loved getting involved.</span></p>
<p><span style="font-weight: 400;"> </span></p>
<p><i><span style="font-weight: 400;">What is her favourite meal &amp; why? </span></i></p>
<p><span style="font-weight: 400;">As a little girl, my mother used to love making homemade scones with me, encouraging us to get messy with flour and taste along the way. My childhood memories include sifting flour, rolling dough, and the wonderful smell of baking scones. Over time it became a Sunday morning activity while my parents had a lie-in.</span></p>
<p><span style="font-weight: 400;"> </span></p>
<p><i><span style="font-weight: 400;">What were the classic meals she prepared each week? </span></i></p>
<p><span style="font-weight: 400;">I went to boarding school from the young age of 12 &#8211; however during the holidays spaghetti bolognese was a firm favourite as it was a quick and easy supper for mom, and kids loved eating the &#8220;worms&#8221; pasta!</span></p>
<p><span style="font-weight: 400;">  </span></p>
<p><i><span style="font-weight: 400;">What was the most lavish meal she ever made and can you replicate it?</span></i><span style="font-weight: 400;"> </span></p>
<p><span style="font-weight: 400;">The classic roast leg of lamb with all the homely trimmings – roast potatoes, cauliflower cheese sauce, rich gravy &#8211; you name it. It made the birthday and special occasion wish list year after year as nothing surpassed the love that went into it.  And was the “last supper” before returning to boarding school. Nowadays I do consider cooking a “mean” roast!</span></p>

<p><i><span style="font-weight: 400;">What is yours &#8211; linked to her by any chance? </span></i></p>
<p><span style="font-weight: 400;">I wouldn’t call it a lavish meal but I do have a very soft spot for making any roast.  </span></p>

<p><span style="font-weight: 400;">Yes, she has a hand-written cookbook and still uses it with pride.</span></p>
<p><span style="font-weight: 400;"> </span></p>
<p><i><span style="font-weight: 400;">Did your grandmother have one with awesome recipes? </span></i></p>
<p><span style="font-weight: 400;">Not one that my mother handed down to me but one of the things I had my grandmother do in her late 80s was to write a recipe book of her favourite recipes which she gave me as a gift shortly before she passed away. </span></p>
<p><span style="font-weight: 400;"> </span></p>
<p><i><span style="font-weight: 400;">Which cookbooks do you rate? </span></i></p>
<p><span style="font-weight: 400;">Yotam Ottolenghi has a great approach to food and I find his flavour profiles inspiring.</span></p>

<p><i><span style="font-weight: 400;">Are there any favourite chefs you refer to? </span></i></p>
<p><i><span style="font-weight: 400;">I always feel inspired by Franck Dangereux who was my mentor for 12 years. </span></i></p>

<p><i><span style="font-weight: 400;">As a new mom, what key learnings will you share with your child one day?</span></i></p>
<p><span style="font-weight: 400;">Food is the comfort of any home.  Sitting around a dinner table at home and having a conversation is so important. Just eating and talking about everyday life is one of the best habits instilled into me from a young age and I will never let it go.  </span><span style="font-weight: 400;">Cooking isn’t always about being a professional chef obsessed with how the perfect knife cuts and a spotless workstation, it’s that food is the great connector.  I’m grateful that my mom helped me find a career where I can now help others have a meaningful experience with food.</span></p>
