Set aside to “velvet” – this will create a crispy exterior on the chicken and tenderise. </span><span data-ccp-props="{}"> </span></li><li><span data-contrast="auto">For the sauce, add oil and garlic to a hot pan and fry for 30 seconds until lightly fragrant. </span><span data-ccp-props="{}"> </span></li><li><span data-contrast="auto">Spoon in tomato paste and Italian herbs, then fry for another 30 seconds to cook the tomato slightly. </span><span data-ccp-props="{}"> </span></li><li><span data-contrast="auto">Pour in chicken stock and tinned tomato mix, stir, then bring to a low simmer and cook for 15 minutes until reduced and thickened. </span><span data-ccp-props="{}"> </span></li><li><span data-contrast="auto">Add oil to a separate hot pan and fry chicken in batches until lightly golden but not cooked through, about 5-8 minutes. Remove. </span><span data-ccp-props="{}"> </span></li><li><span data-contrast="auto">Once sauce is reduced, either leave chunky or carefully blitz with a stick blender to create a smooth liquid. </span><span data-ccp-props="{}"> </span></li><li><span data-contrast="auto">Add chicken to the sauce and bring to a simmer to cook for another 6-8 minutes.</span><span data-ccp-props="{}"> </span></li><li><span data-contrast="auto">To serve, arrange cooked pasta in a serving bowl and top with sauce. Finish with a sprinkling of feta and roasted beans. </span><span data-ccp-props="{}"> </span></li></ol><p><span data-ccp-props="{}"> </span></p><p><b><span data-contrast="auto">Cook&#8217;s note<br /></span></b><span data-contrast="auto">To make the roasted beans, drain and rinse before tossing with oil and spices of choice (think smoked paprika, cumin or even curry powder). <p><span data-contrast="auto">½  cup sweet chilli sauce </span><span data-ccp-props="{}"> </span></p>
<p><span data-contrast="auto">Salt and milled pepper </span><span data-ccp-props="{}"> </span></p>
<p><span data-contrast="auto">1 Tbsp olive oil </span><span data-ccp-props="{}"> </span></p>
<p><span data-contrast="auto">6 cups water </span><span data-ccp-props="{}"> </span></p>
<p><span data-contrast="auto">1 tsp salt</span><span data-ccp-props="{}"> </span></p>
<p><span data-contrast="auto"> 1 cup pearl barley </span><span data-ccp-props="{}"> </span></p>
<p><span data-contrast="auto">200g green beans, blanched </span><span data-ccp-props="{}"> </span></p>
<p><span data-contrast="auto">2 carrots, washed and cut into thin strips </span><span data-ccp-props="{}"> </span></p>
<p><span data-contrast="auto">1 cup shredded red or green cabbage </span><span data-ccp-props="{}"> </span></p>
<p><span data-contrast="auto">¼  cup mayonnaise </span><span data-ccp-props="{}"> </span></p>
<p><span data-contrast="auto">1 Tbsp honey </span><span data-ccp-props="{}"> </span></p>
<p><span data-contrast="auto">2 limes </span><span data-ccp-props="{}"> </span></p>
<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Remove the bone from the chicken and cube the breasts into 2cm cubes. (See Cook&#8217;s Tip.) </span></li>
<li><span data-contrast="auto"> Combine the chicken with half of the sriracha and sweet chilli sauces. Season. </span></li>
<li><span data-contrast="auto"> Heat a pan with olive oil and fry the chicken for 10-12 minutes or until cooked and golden. </span></li>
<li><span data-contrast="auto"> Bring a pot with the water and salt to the boil. Add barley and cook until tender, about 15-20 minutes. Remove and rinse under cold water to cook.</span></li>
<li><span data-contrast="auto">To assemble, toss together chicken, barley, green beans, carrots and cabbage. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Mix the remaining sriracha and sweet chilli sauce with the mayo, honey and zest and juice of 1 lime.</span></li>
<li><span data-contrast="auto"> Drizzle the bang bang sauce over the salad and serve with lime wedges. </span><span data-ccp-props="{}"> </span></li>

<p><span data-contrast="auto"><strong>Cooks tip:</strong> </span><span data-contrast="auto">Reserve the chicken bones and roast to make a home-made chicken stock or soup. <h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Heat 1 Tbsp olive oil in a medium pot over moderate heat. Sauté onion for 5-8 minutes. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Add garlic and split peas, and stir well. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Add stock and coconut milk, lower heat and simmer for 12-15 minutes or until the split peas are tender. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Once cooked, remove from heat. Season. </span></li>
<li><span data-contrast="auto">Add lemon zest, a squeeze of juice and some parsley. </span></li>
<li><span data-contrast="auto"> For the spiced cauliflower, combine 1 Tbsp of olive oil, curry powder and cumin seeds with cauliflower and toss to combine. Season well. </span></li>
<li><span data-contrast="auto"> Cook the cauliflower in the air fryer on 180°C for about 15-20 minutes or until cooked and crisp. </span></li>
<li><span data-contrast="auto"> Serve the split pea sauce on a bed of brown rice topped with the spiced cauliflower. </span></li>
<li><span data-contrast="auto"> Sprinkle with parsley, micro leaves and milled black pepper.</span></li>

<li><span data-contrast="auto"> Season pork well. To crumb the pork, dust the strips in flour, shake off excess, cover in beaten egg followed by breadcrumbs. </span></li>
<li><span data-contrast="auto"> Heat canola oil and fry the pork for about 8-10 minutes, turning regularly. Drain on kitchen towel. (See Cook&#8217;s Note.) </span></li>
<li><span data-contrast="auto"> For the stir-fry, heat olive oil in a large pan or wok thenstir-fryonion and carrots for 4 minutes. Add green pepper and stir-fry another 4 minutes. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Add garlic and ginger then fry for 2 minutes. </span></li>

<li><span data-contrast="auto"> Heat olive oil in pan over medium heat then sauté onion and carrot for 8-10 minutes. Add garlic and fry for 1 minute. </span></li>
<li><span data-contrast="auto"> Add beans and chakalaka. Once heated through, remove from heat. Season. </span></li>
<li><span data-contrast="auto"> Toast tortillas in a dry pan or over an open flame for about 30 seconds per side. </span></li>
<li><span data-contrast="auto">5. Place the tortilla into a 12-cm ovenproof ceramic bowl, creating a tortilla bowl shape. Place each individual bowl with the tortilla into the oven for 5 minutes. Remove from oven and allow to cool for a few minutes, still in the ceramic bowl. </span></li>
<li><span data-contrast="auto"> Fill the tortilla bowls with the bean mixture and sprinkle with cheese. Pop back into the oven until cheese is melted. </span></li>
<li><span data-contrast="auto"> For the salsa, combine tomatoes, onion,corianderand olive oil. Season. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Serve the tacos with salsa and a dollop of yoghurt.</span></li>

<p>4 large <strong>chicken breasts</strong><br />
2 tbsp <strong>za’atar or dukkah spice</strong><br />
2–4 tbsp<strong> olive oil</strong><br />
1 cup pitted <strong>green olives</strong><br />
Handful <strong>dried apricots</strong><br />
2 cups <strong>vegetable stock</strong><br />
1 cup <strong>couscous</strong><br />
2–3 wheels<strong> feta cheese</strong>, chopped to serve<br />
<strong>Chives</strong>, chopped to serve</p>

<h3><b><span data-contrast="auto">Method</span></b><span data-ccp-props="{}"> </span></h3>
<p class="p1"><b>1. </b>Coat the chicken in the spice.<br />
<b>2. </b>Preheat a pan with oil on a high heat, then add the chicken. Allow to brown for 3 minutes on each side. Add the green olives, apricots and season.<br />
<b>3.</b> Prepare the stock, add it into the pan with the couscous. Cover the pan with a lid and allow to simmer for 3 minutes. Remove from heat and allow to stand for 3 minutes to steam. Serve with feta and fresh chives.</p>

<p><strong>For the lamb potjie</strong><br />
1 kg <strong>lamb neck</strong>, cubed<br />
1 tsp <strong>ground coriander</strong><br />
1 tsp <strong>cumin</strong><br />
2 tsp <strong>smoked paprika</strong><br />
¼ cup <strong>flour</strong><br />
2 tbsp <strong>vegetable oil</strong><br />
1 cup <strong>red wine</strong><br />
1 cube <strong>beef stock</strong><br />
2 tbsp <strong>soy sauce</strong><br />
2 tbsp<strong> tomato paste</strong><br />
2 <strong>thyme sprigs</strong><br />
2 <strong>bay leaves</strong><br />
½ bulb <strong>garlic</strong>, cloves intact<br />
350g <strong>baby onions</strong>, peeled<br />
225g <strong>baby carrots</strong><br />
4 <strong>celery stalks</strong>, chopped<br />
250g <strong>mushrooms</strong>, halved</p>
<p><strong>For the roosterkoek</strong><br />
2 cups <strong>flour</strong><br />
1 tsp <strong>salt</strong><br />
10g packet <strong>instant dry yeast</strong><br />
1 tsp <strong>sugar</strong><br />
1 cup <strong>lukewarm water</strong></p>
<p><strong>For the green harissa</strong><br />
2 <strong>green peppers</strong>, deseeded and quartered<br />
2 <strong>green chillies</strong><br />
1 <strong>garlic clove</strong>, chopped<br />
1 cup <strong>fresh coriander</strong><br />
Zest and juice of 1 <strong>lemon</strong><br />
½ cup <strong>olive oil</strong><br />
½ tsp <strong>ground coriander</strong><br />
½ tsp <strong>cumin</strong><br />
1 tsp <strong>smoked paprika</strong><br />
1 tbsp <strong>red-wine vinegar</strong><br />
1 tbsp <strong>sugar </strong>or<strong> honey</strong></p>

<h3><b><span data-contrast="auto">Method</span></b><span data-ccp-props="{}"> </span></h3>
<p><b>For the potjie</b><br />
<strong>1.</strong> Season the lamb with ground coriander, cumin and paprika, then dust each piece in flour until well coated.<br />
<strong>2.</strong> Heat the oil in a pot over medium heat and brown the lamb in batches, until golden all over.<br />
<strong>3.</strong> Transfer all the lamb and juices to a heated potjie pot and add the red wine, stock cube, soy sauce, tomato paste, thyme, bay leaves, garlic and enough boiling water to just cover the meat.<br />
<strong>4.</strong> Bring to the boil, then reduce the heat and simmer for at least 1 hour or until the lamb is tender.<br />
<strong>5.</strong> Add the onions, carrots, celery and mushrooms, and cook for a further 30 minutes or until the vegetables are soft.</p>
<p><b>For the roosterkoek</b><br />
<strong>1.</strong> Mix together the flour and salt in a bowl. Mix yeast, sugar and water in a separate bowl. Set aside for 5 minutes.<br />
<strong>2.</strong> Add the yeast mixture to the flour and mix until combined. Knead for 5 minutes, until it is smooth and elastic. Place the dough in an oiled bowl, cover with a damp cloth and allow to proof in a warm place for 1 hour, until doubled in size.<br />
<strong>3.</strong> Turn the dough out onto a floured surface and knead for 1-2 minutes. Divide the dough into 8 balls. Place the dough balls on an oiled baking tray and allow to rise again for about 20 minutes.<br />
<strong>4.</strong> Place the dough balls between an oiled braai grid and cook them over low coals for 15-20 minutes, turning occasionally, until they are all cooked through.</p>
<p><b>For the green harissa</b><br />
<strong>1.</strong> Preheat the oven grill.<br />
<strong>2.</strong> Place the peppers, cut-side down, and the chillies on a baking tray and pierce a few holes in the chillies so that they don’t explode. Grill until blackened and blistered. Remove from the oven, wrap in foil and set aside for 10 minutes.<br />
<strong>3.</strong> Peel the peppers and chillies, then remove the seeds from the chillies. Place the peeled peppers, chillies and remaining ingredients in a blender and blend to form a paste.<br />
<strong>4.</strong> Drizzle each serving of potjie with green harissa and serve with roosterkoek on the side.</p>
<p><em><strong>Quick tip:</strong> Cut down on prep time by using store-bought  bread dough for your roosterkoek, available at most supermarkets.</em></p>

<p class="x_MsoNormal"><strong>Burger</strong> <strong>Patties</strong><br />
600g pork mince or pork sausage meat<br />
2 Pink Lady® apples, diced<br />
1 Tbsp (15ml) sage, chopped<br />
1 egg<br />
3 Tbsp (45ml) breadcrumbs<br />
Salt and pepper<br />
Oil for frying<br />
4 hamburger buns</p>
<p><strong>Coleslaw</strong><br />
1 cup (250ml) shredded red cabbage<br />
1 cup (250ml) shredded cabbage<br />
⅓ cup (80ml) plain yogurt<br />
⅓ cup (80ml) mayonnaise<br />
2 Tbsp (30ml) parsley<br />
Lemon zest<br />
Salt and pepper</p>
<p><strong>Method<br />
</strong>1. Combine the mince, apples, sage, egg, breadcrumbs together in a bowl and season.<br />
2. Shape into patties, cover with cling film and refrigerate for 20 minutes.<br />
3. Heat oil in a pan and fry patties until browned and cooked through.<br />
4. Combine slaw ingredients and season to taste.<br />
5. Top buns with patties and a generous helping of coleslaw<strong><br />

<p><b>INGREDIENTS</b><br />
<b>300 g </b>spaghetti<br />
<b>1<span class="Apple-converted-space">  </span>200 g pack</b> bacon<br />
<b>2</b> cloves garlic, minced<br />
<b>1</b> <b>tin</b> <b>(410 g)</b> tomato &amp; onion mix<br />
Parmesan, to serve<br />
<b>Handful</b> basil, to serve</p>
<p><b>METHOD</b><br />
<b>1.</b> Cook the pasta according to package directions. Drain, reserving 1 cup of pasta water.<br />
<b>2.</b> Fry the bacon over medium-high heat until golden. Remove and drain on a paper towel. Chop into pieces.<span class="Apple-converted-space"> </span><br />
<b>3.</b> In the same pan, add the garlic and cook for 30 seconds until fragrant. Add about ½ cup of the reserved pasta water, bring to a simmer and stir, scraping off all the bits stuck to the base of the pan.<br />
<b>4.</b> Add in the tomato and onion mix and cook, stirring, for 2 minutes until slightly reduced. Add your pasta to the sauce and toss until all the sauce is soaked up. Add a little more pasta water if it’s too thick.<br />
<b>5.</b> Place the pasta into serving bowls, sprinkle over chopped bacon and grate over some Parmesan. Garnish with basil leaves to serve.</p>

<p><em><strong>Pro tip: </strong>If the sauce tastes too acidic, add a teaspoon or two of sugar to help balance it out.</em></p>
