<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Using a pairing knife, pierce the lamb in the shape of an &#8216;X&#8217; and press a garlic clove into each opening.</span></li>
<li><span data-contrast="auto"> Mix together the amasi and spice. Season.</span></li>
<li><span data-contrast="auto"> Rub the lamb with the amasi marinade, season and allow to marinate for 4-6 hours or ideally overnight.</span></li>
<li><span data-contrast="auto"> Preheat oven to 200°C.</span></li>
<li><span data-contrast="auto"> Place the marinated lamb into an ovenproof dish and scatter the onion, carrot and garlic halves around the lamb. Drizzle with olive oil and dot butter around the lamb.</span></li>
<li><span data-contrast="auto"> Roast uncovered for 30 minutes. Lower heat to 160°C, cover with foil and roast for another 1½ hours or until the meat pulls away from the bone.</span></li>
<li><span data-contrast="auto"> Serve the lamb with your choice of sides.</span></li>

<li><span data-contrast="auto"> Combine oat flour and coconut in a large bowl.</span></li>
<li><span data-contrast="auto"> Pat dry hake with kitchen towel, slice into 5cm strips and season well. </span></li>
<li><span data-contrast="auto"> Preheat oven to 200°C. </span></li>
<li><span data-contrast="auto"> Add egg to a bowl and dip fish strips into egg, then coat in oat flour mixture and set aside. (Repeat process for a thicker crumb). </span></li>
<li><span data-contrast="auto"> Place fish strips onto a lined baking tray and bake for 18-20 minutes or until golden. </span></li>
<li><span data-contrast="auto"> To make the taco shells, switch off oven and hang the tortillas over wire racks in the oven for 2-3 minutes.</span></li>
<li><span data-contrast="auto"> Combine avocado and lemon and season well.</span></li>
<li><span data-contrast="auto"> Fill tacos with avo mixture, jalapeño, red cabbage and fresh coriander. Serve immediately.</span></li>

<li><span data-contrast="auto"> For the crust, blitz together flour, salt, zest, egg white and herbs to make a stiff dough. Add more flour if the mixture is too wet and sticky.</span></li>
<li><span data-contrast="auto"> Preheat oven to 200°C.</span></li>
<li><span data-contrast="auto"> Roll out dough on a lightly floured surface to about 5mm thick.</span></li>
<li><span data-contrast="auto"> Brush fish lightly with oil and cover fish with dough, making sure to tightly seal edges.</span></li>
<li><span data-contrast="auto"> Place fish onto a greased baking tray and bake for 25-30 minutes.</span></li>
<li><span data-contrast="auto"> Allow fish to cool slightly before transferring to a serving platter.</span></li>
<li><span data-contrast="auto"> Take care to break open crust to reveal fish – remind guests not to eat the salt crust. Scatter with fresh rocket and serve with lime or lemon wedges and crispy baby potatoes.</span></li>

<li><span data-contrast="auto"> Combine butter, lime or lemon zest and juice, maple syrup and thyme to create a glaze.</span></li>
<li><span data-contrast="auto"> Brush chicken with 1/4 of mixture, taking care to coat it evenly.</span></li>

<li><span data-contrast="auto"> Stir through leeks and potatoes, season, cover and cook for about 10-15 minutes or until tender. Stir occasionally to prevent mixture from sticking.</span></li>
<li><span data-contrast="auto"> Tip mixture onto a plate and chill in the fridge for 15 minutes. </span></li>
<li><span data-contrast="auto"> Preheat oven to 180°C. </span></li>
<li><span data-contrast="auto"> Roll pastry out onto a lightly floured surface to make a rectangle of about 50cm in length. Brush edges with egg yolk. </span></li>
<li><span data-contrast="auto"> Mix cheese through cooled vegetables and spoon along the length of one half of the pastry. </span></li>
<li><span data-contrast="auto"> Fold over pastry to cover filling and crimp edges to seal. </span></li>

</b></span><b>1.</b> In a wok or large frying pan, heat <span class="s1">the oil until sizzling. Add the pork </span>mince and fry until browned all the way through.<br />
<b>2. </b>Add the garlic and ginger and cook for a further 5 minutes. Then add the lime zest and juice and soy sauce, and <span class="s1">continue cooking until the sauce has thickened. Add the peanuts and 1 chilli</span> and season.<br />
<b>3.</b><span class="s1"> Separate the lettuce leaves and fill with spicy mince. Garnish with extra chilli and peanuts, and serve </span>with lime wedges.</p>

The coconut adds a delicious flavour, while balancing the heat from the spices.</p>
<p class="p1"><b>SERVES</b> 4 <b>// COOKING TIME</b> 25 min</p>
<p class="p1"><b>INGREDIENTS<br />
</b><b>1 tbsp </b>coconut oil<br />
<b>1</b> onion, finely chopped<br />
<b>2 </b>garlic cloves, minced<br />
<b>1</b> red chilli, thinly sliced<br />
<b>1 tsp</b> finely chopped ginger<br />
<b>1 tsp </b>fennel seeds<br />
<b>1 tbsp </b>curry powder<br />
<b style="font-size: 1em;">½ tsp</b><span style="font-size: 1em;"> ground turmeric<br />
</span><b>½ cup</b> vegetable stock<br />
<b>1 tin (400ml) </b>coconut milk<br />
<b>1 tsp</b> fish sauce<br />
<b>3</b> hake fillets, cut into chunks<br />
<b>1½ tbsp</b> lemon juice<br />
<b>To serve<br />
</b><b>½ cup</b> fresh coriander<br />
<b>1½ cups</b> cooked brown rice<br />
<b>2</b> multi seed wraps, torn in half</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Heat the oil in a deep pan over medium heat. Add the onion and cook until soft and translucent, about 5 minutes.<br />
<b>2. </b>Add the garlic, chilli, ginger and fennel seeds and stir fry for 1-2 minutes.<br />
<b>3. </b>Add the curry powder and turmeric and fry until fragrant, about 1 minute.<br />
<b>4. </b>Pour in the stock, coconut milk and fish sauce, reduce the heat and simmer for 5 minutes until slightly reduced.<br />
<b>5.</b> Add the fish and simmer until cooked through, about 5 minutes. Remove from the heat and stir through the lemon juice<br />
<b>6. </b>Garnish the coconut fish curry with fresh coriander, and serve with rice and oven baked wraps on the side.</p>

<p class="p1"><b>INGREDIENTS<br />
</b><b>For the pea falafel<br />
</b><b>2 cups</b> peas, steamed<br />
<b>1 cup</b> pearl barley, cooked<br />
<b>¼ cup </b>cake flour<br />
<b>2 tbsp</b> chopped parsley<br />
<b>1 tsp</b> cumin<br />
<b>½</b> onion, peeled and chopped<br />
Vegetable oil, to fry<br />
Lemon wedges, to serve<br />
<b style="font-size: 1em;">For the avo mousse<br />
</b><b>1 </b>avocado<br />
<b>¼ cup</b> cream<br />
<b>For the spinach wraps<br />
</b><b style="font-size: 1em;">3 cups</b><span style="font-size: 1em;"> cake flour<br />
</span><b style="font-size: 1em;">1½ tsp</b><span style="font-size: 1em;"> baking powder<br />
</span><b>1 tsp</b> salt<br />
<b>¼ cup </b>vegetable oil<br />
<b>100 g </b>spinach<br />
<b>¾ cup</b> milk, warmed</p>
<p class="p1"><b>METHOD<br />
</b><b>For the pea falafel<br />
</b><b>1. </b>Pulse all the ingredients until combined, but still with a slightly coarse texture. It should hold together when compressed into a ball. Form into balls.<br />
<b>2. </b>Heat the oil and shallow-fry the balls until golden brown.<br />
<b>For the avo mousse<br />
</b><b>1. </b>Blits together the avocado and cream until smooth and creamy.<br />
<b>For the spinach wraps<br />
</b><b>1. </b>Mix the flour, baking powder and salt. Add the vegetable oil and mix into a crumbly dough.<br />
<b>2. </b>Blend spinach and milk on high until smooth.<br />
<b style="font-size: 1em;">3. </b><span style="font-size: 1em;">Stir the spinach mixture into the dough. If the mixture is too dry, add some water.<br />
</span><b>4.</b> Knead for 5 minutes, until smooth. Form the dough into a ball, wrap in cling film and refrigerate for 30 minutes.<br />
<b>5.</b> Flour a rolling pin and a work surface. Divide dough into 8 golfball- sized balls. Roll out each into a thin circle of about 15 cm.<br />
<b>6. </b>Heat a pan over medium heat. Dry-fry wraps for 1 minute a side.<br />
<b>7. </b>Serve with the pea falafel and avo mousse.</p>
