<p class="p1"><b>SERVES</b> 4 <b>// COOKING TIME</b> 30 min</p>
<p class="p4"><span class="s2"><b>INGREDIENTS<br />
</b></span><b>50 ml</b> vegetable oil<br />
<b>1 tbsp</b> peeled, chopped garlic<br />
<b>1 tbsp</b> peeled, grated ginger<br />
<b>300g</b> chicken breasts, cut into small pieces<br />
<b>50 ml</b> soy sauce<br />
<b>150g</b> pineapple, diced<br />
<b>100g</b> cashews<br />
<b>200g</b> cabbage, shredded<br />
<b>150g</b> carrots, grated<br />
<b>100g</b> broccoli, cut into small florets<br />
<b>25g</b> cherry tomatoes, halved<br />
<b>¼</b> green pepper, diced<br />
<b>1</b> onion, peeled and finely diced<br />
<b>3</b> eggs<br />
<b>400g</b> jasmine rice, cooked<br />
<b>150 ml</b> sweet-and-sour sauce</p>
<p class="p4"><span class="s2"><b>METHOD<br />
</b></span><b>1.</b> Heat oil in a wok and fry the garlic, ginger and chicken. Cook until chicken is just done, about 10 minutes.<br />
<span class="s3"><b>2.</b> Add the soy sauce and stir once. Add pineapple, cashews and</span> all of the vegetables. Cook until veg is hot but still crunchy.<br />
<b>3.</b> Add eggs and mix everything <span class="s4">together. Add rice and sweet-and-</span><span class="s5">sour sauce. Cook until heated </span>through and the eggs are done to your liking.</p>
