<p class="p1"><b>MAKES</b> 25 <b>// COOKING TIME</b> 50 min</p>
<p class="p1"><b>INGREDIENTS<br />
</b><b>For the samoosas<br />
</b><b>1½ cups</b> grated Cheddar<br />
<b>½ cup</b> corn kernels<br />
<b>⅓<span class="Apple-converted-space">  </span>cup</b> chopped Peppadews<br />
<b>2</b> spring onions, chopped<br />
<b>1 tbsp</b> chopped coriander<br />
<b>1½ tsp</b> curry powder<br />
<b>½ tsp</b> cumin<br />
<b>25</b> samoosa wrappers<br />
<b>3 tbsp</b> flour mixed with<br />
<b>2½ tbsp </b>water<br />
<b>For the herb sauce<br />
</b><b>⅓<span class="Apple-converted-space">  </span>cup</b> yoghurt<br />
Juice of <b>1</b> lemon<br />
<b>1½ cups</b> coriander<br />
<b>¾ cup</b> mint<br />
<b>½ cup</b> parsley<br />
<b>2 </b>green chillies, chopped<br />
<b>1</b> garlic clove, grated<br />
<b>½ tsp</b> sugar<br />
<b>1 tbsp</b> water</p>
<p class="p1"><b>METHOD<br />
</b><b>For the samoosas<br />
</b><b>1.</b> Mix the Cheddar, corn kernels, Peppadews, spring onions, herbs and spices together. Season.<br />
<b>2.</b> Drop a tablespoon of filling onto the bottom left corner of a samoosa wrapper. Fold up and over into a triangle shape, making sure the corners are sealed and the filling is completely covered.<br />
<b>3. </b>Seal the edges with the flour-water mixture. Repeat with the rest of the wrappers and filling.<br />
<b>4.</b> Heat enough oil to deep-fry over medium-high heat. Fry the samoosas in batches until golden brown and crispy. Drain on a paper towel.<br />
<b>For the herb sauce<br />
</b><b>1.</b> Add all the ingredients to a food processor and blend until smooth. Serve with the cheesy Peppadew and corn samoosas.</p>
<p class="p1"><b>Top Tip<br />
</b>Keep your samoosa wrappers under a damp tea towel while you work so that they don’t dry out while you’re wrapping the other samoosas.</p>

The good news is that they fit into so many categories of the hottest food trends predicted for 2019.</p>
<p class="p3"><span class="s1">The plant revolution wave that’s sweeping the world has special days, weeks and even months dedicated to eating less meat. Think Meatless Monday, Flexitarian Friday and Veganuary. Once again, avocados are right up there, dominating meat-free dishes like veggie bounty bowls, meatless makeover meals like tacos, and nosh platters, the trendy newcomers to the block. No matter when, where or how &#8211; just add an avo!</span></p>
<figure id="attachment_7757" aria-describedby="caption-attachment-7757" style="width: 600px" class="wp-caption alignnone"><img fetchpriority="high" decoding="async" class="size-large wp-image-7757" src="https://mykitchen.co.za/wp-content/uploads/2019/07/AvoGardens-736x1030.jpg" alt="Avocado Gardens" width="600" height="840" srcset="https://mykitchen.co.za/wp-content/uploads/2019/07/AvoGardens-736x1030.jpg 736w, https://mykitchen.co.za/wp-content/uploads/2019/07/AvoGardens-214x300.jpg 214w, https://mykitchen.co.za/wp-content/uploads/2019/07/AvoGardens-768x1075.jpg 768w, https://mykitchen.co.za/wp-content/uploads/2019/07/AvoGardens.jpg 1214w" sizes="(max-width: 600px) 100vw, 600px" /><figcaption id="caption-attachment-7757" class="wp-caption-text">Avocado Gardens</figcaption></figure>
<p class="p3"><span class="s1">It’s not only in the kitchen that avocados are shining on the trend forecasts; they’re also turning heads on the wellness A-list. The popularity of keto, paleo, grain-free and ‘pegan’ (paleo + vegan) diets, as well as neurotrition (which suggests a strong connection between gut health and cognitive function), have put good fats back on the menu. This is also supported by the current move towards embracing healthy fats for healthy ageing (which is fast replacing the old ‘anti-ageing’ idea).</span></p>
<p class="p3"><span class="s1">With avos boasting high amounts of heart-healthy monounsaturated fat, which has been linked to good HDL cholesterol, and being naturally cholesterol-free, it’s no surprise that they tick all the right boxes when it comes to these dietary and lifestyle choices.</span></p>
<p class="p3"><span class="s1">One of the biggest food trends this year is convenience: on-the-go food, nutrient-dense snacks, bite-size surprises and hassle-free, healthy meal replacements that provide satiety and nutrition for time-strapped consumers. Eaten straight out of the skin, avocados offer a quick, easy and fully mobile meal option for breakfast, school and office lunches, and supper.</span></p>
<figure id="attachment_7756" aria-describedby="caption-attachment-7756" style="width: 600px" class="wp-caption alignnone"><img decoding="async" class="size-large wp-image-7756" src="https://mykitchen.co.za/wp-content/uploads/2019/07/AvoIceLollys-735x1030.jpg" alt="Avocado Ice Lollys" width="600" height="841" srcset="https://mykitchen.co.za/wp-content/uploads/2019/07/AvoIceLollys-735x1030.jpg 735w, https://mykitchen.co.za/wp-content/uploads/2019/07/AvoIceLollys-214x300.jpg 214w, https://mykitchen.co.za/wp-content/uploads/2019/07/AvoIceLollys-768x1076.jpg 768w, https://mykitchen.co.za/wp-content/uploads/2019/07/AvoIceLollys.jpg 1180w" sizes="(max-width: 600px) 100vw, 600px" /><figcaption id="caption-attachment-7756" class="wp-caption-text">Avocado Ice Lollys</figcaption></figure>
