<li><span data-contrast="auto"> Toss the brinjals with ⅓ cup oil, honey and paprika. Season with salt and milled pepper.</span></li>
<li><span data-contrast="auto"> Place on a baking tray and roast for 30 minutes, until caramelised, turning halfway through.</span></li>
<li><span data-contrast="auto"> Toss the lentils with the lemon juice and 2 Tbsp oil. Season.</span></li>
<li><span data-contrast="auto"> To serve, top the lentils with the brinjals, crumble the feta over and sprinkle with mint.</span></li>

<li style="font-weight: 400;">Prepare a smoker or kettle braai by packing the coals so that there is ample room for the chicken to sit in the middle.</li>
<li style="font-weight: 400;">Combine all marinade ingredients and rub the mixture under the skin of the chicken.</li>
<li style="font-weight: 400;">Combine the dry rub ingredients and rub the mixture over the chicken.</li>
<li style="font-weight: 400;">Open the beer and insert it into the cavity of the chicken. Place the chicken in the middle of the braai so it doesn’t cook over direct heat.</li>
<li style="font-weight: 400;">Add smoking chips to the coals, close the lid and smoke for 1½ hours.</li>

<h2>2. Apricot-butter braaied snoek</h2>

<p style="font-weight: 400;"><strong>2 </strong>cloves garlic, peeled and crushed</p>
<p style="font-weight: 400;"><strong>125ml</strong> smooth apricot jam</p>
<p style="font-weight: 400;">Zest and juice of <strong>1 </strong>lemon</p>
<p style="font-weight: 400;"><strong>2 tsp </strong>Cape Malay curry powder</p>
<p style="font-weight: 400;">Splash white wine (optional)</p>
<p style="font-weight: 400;">Olive oil</p>
<h3 style="font-weight: 400;">Method</h3>

<li style="font-weight: 400;">Sprinkle the snoek with salt and leave for 20–30 minutes. Rinse off and pat dry.</li>
<li style="font-weight: 400;">Cook the butter and garlic together in a pan until the butter is foamy. Add apricot jam, lemon zest, curry powder and wine. Stir through and a squeeze of lemon juice and pepper. Remove from heat.</li>
</ol>
<p>Coat the snoek in oil so it doesn’t stick to the grid. Braai for about 15 minutes, basting with the apricot butter and turning frequently. Serve with leftover apricot butter.</p>
<h2>3. Halloumi and vegetable kebabs</h2>

<p style="font-weight: 400;"><strong>1 </strong>green pepper, cut into squares</p>
<p style="font-weight: 400;"><strong>⅓ cup</strong> olive oil</p>
<p style="font-weight: 400;">Salt and black pepper</p>
<p style="font-weight: 400;"><strong>2 tbsp</strong> finely chopped mint, plus leaves to garnish</p>
<p style="font-weight: 400;"><strong>2 tsp</strong> honey</p>
<p style="font-weight: 400;"><strong>1 tbsp</strong> white balsamic vinegar</p>
<h3 style="font-weight: 400;">Method</h3>

<li style="font-weight: 400;">Heat a braai pan over medium coals.</li>
<li style="font-weight: 400;">Toss the halloumi, onion and red and green peppers with 1 tbsp of olive oil. Season. Thread onto skewers in 2–3 layers.</li>
<li style="font-weight: 400;">Whisk together the remaining olive oil with the mint, honey and balsamic vinegar. Season.</li>
<li style="font-weight: 400;">Put the kebabs on the braai grid for 2 minutes on each side. Serve with the mint dressing and garnish with extra mint leaves.</li>
</ol>
<h2>4. Chargrilled steak with chimichurri and shoestring fries</h2>

<p style="font-weight: 400;"><strong>2 </strong>garlic cloves, finely minced</p>
<p style="font-weight: 400;"><strong>1 </strong>red chilli, deseeded and finely chopped</p>
<p style="font-weight: 400;"><strong>40g</strong> finely chopped parsley</p>
<p style="font-weight: 400;"><strong>1 tsp</strong> dried oregano</p>
<p style="font-weight: 400;"><strong>1/2 tsp</strong> coarse salt</p>
<p style="font-weight: 400;">Pepper</p>
<p style="font-weight: 400;"><strong>3 tbsp</strong> red wine vinegar</p>
<p style="font-weight: 400;"><strong>1/3 cup</strong> olive oil</p>
<p style="font-weight: 400;"><strong>For the shoestring fries </strong></p>
<p style="font-weight: 400;"><strong>6 </strong>potatoes, washed and peeled</p>
<p style="font-weight: 400;"><strong>1/4 cup</strong> flour</p>
<p style="font-weight: 400;">Oil for frying</p>
<p style="font-weight: 400;">Sea salt</p>
<h3 style="font-weight: 400;">Method</h3>
<p style="font-weight: 400;"><strong>For the steak </strong></p>
<ol>
<li style="font-weight: 400;">Pat down your steaks using some paper towels. Season both sides of each steak evenly with salt and pepper. Drizzle with a little olive oil and massage into the steak. Cover and set aside. Allow steaks to cool to room temperature before cooking.</li>
<li style="font-weight: 400;">Braai your steak for 3–4 minutes to create a caramelised exterior. Once the cooking side is nice and brown, use a pair of tongs to turn the steak onto its other side. Cook for another<br />
3–4 minutes to medium rare (or your desired doneness).</li>
<li style="font-weight: 400;">Remove steak from the heat and set on a wooden board to rest for 10 minutes before slicing.</li>
</ol>
<p style="font-weight: 400;"><strong>For the chimichurri </strong></p>
<ol>
<li style="font-weight: 400;">Add the garlic, chilli, parsley, oregano, salt and a crack of pepper to a bowl. Mix and press together the ingredients using a spoon.</li>
<li style="font-weight: 400;">Add the vinegar and oil and stir through. Taste and season as needed. Set aside until serving.</li>
</ol>
<p style="font-weight: 400;"><strong>For the shoestring fries </strong></p>
<ol>
<li style="font-weight: 400;">Using a mandoline slicer (or a very sharp knife), cut the potatoes into very thin slices. Once sliced, use a knife to cut long thin rectangles to make fries. Place the cut potatoes into a bowl of water while you&#8217;re busy with the rest of the preparations to prevent browning.</li>
<li style="font-weight: 400;">Heat a pot of oil until very hot (test by adding one fry to the oil). If it starts sizzling, the oil is ready.</li>
<li style="font-weight: 400;">Toss the fries in flour to coat lightly.</li>
<li style="font-weight: 400;">Add the fries to the oil in batches and cook until golden and crispy. Be careful to not overcook or they may burn.</li>
<li style="font-weight: 400;">Remove from the oil using a slotted spoon and place on a paper towel to drain. Season the crispy fries with a sprinkle of sea salt.</li>
</ol>
<p style="font-weight: 400;"><strong>To serve </strong></p>
<p style="font-weight: 400;">Slice your steak and top with a drizzle of chimichurri and crispy shoestring fries on the side. Add some mayonnaise or tomato sauce to have with your fries. Enjoy!</p>

<p><strong>INGREDIENTS</strong><br />
<strong>For the carrot cake </strong><br />
<strong>2½ cups</strong> cake flour<br />
<strong>2 tsp</strong> cinnamon<br />
<strong>1½ tsp</strong> bicarb<br />
<strong>1¼ tsp</strong> baking powder<br />
<strong>½ tsp</strong> salt<br />
<strong>2 cups</strong> sugar<br />
<strong>1 cup</strong> veg oil<br />
<strong>4</strong> large eggs<br />
<strong>1 tsp</strong> vanilla essence<br />
<strong>2 cups</strong> grated carrots<br />
<strong>¾ cup</strong> chopped pecans<br />
<strong>¾ cup</strong> desiccated coconut<br />
<strong>440 g</strong> tincrushed pineapple, drained<br />
<strong>For the banana icing</strong><br />
<strong>1 cup</strong> cream cheese<br />
<strong>1</strong> banana, mashed<br />
<strong> 6 cups</strong> icing sugar, sifted</p>
<p><strong>METHOD</strong><br />
<strong>For the carrot cake</strong><br />
<strong>1.</strong> Preheat oven to 180°C. Grease and line two 20 cm tins.<br />
<strong>2.</strong> In a bowl, mix flour, cinnamon, bicarb, baking powder and salt.<br />
<strong>3.</strong> In another bowl, mix sugar, oil, eggs and vanilla until pale.<br />
<strong>4.</strong> Stir in flour mixture, then add carrots, pecans, coconut and pineapple.<br />
<strong>5.</strong> Divide the batter between the cake tins. Bake for 35 minutes, until a skewer comes out clean. Do not open the oven until just about done. Cool on a wire rack for 10 minutes, then turn out.<br />
<strong>For the banana icing</strong><br />
<strong>1.</strong> Blend the cream cheese and banana until smooth.<br />
<strong>2.</strong> Slowly whisk in the icing sugar, until thickened.<br />
<strong>To assemble</strong><br />
<strong>1.</strong> Sandwich the 2 layers together with half the icing. Ice the top and sides of the cake with the remaining icing</p>
<p><em style="font-size: 1em;"><strong>DID YOU KNOW:</strong> Sugar is hygroscopic, meaning it draws water to itself. Brushing this cake with sugar syrup both adds moisture and preserves it, should the cake sit out for a while before it’s eaten.</em></p>

<b>3. </b>Serve the dressing in one bowl, and the seeds and salt in another. Your guests can dip their own lettuce wedges into the dressing and garnish with seeds.</p>

<p class="p1"><b>MAKES</b> 16 pieces <b>// COOKING TIME</b> 1 hour 15 min</p>
<p class="p1"><b>INGREDIENTS<br />
</b><b>For the sushi rice<br />
</b><b>1 cup</b> short-grain white rice<br />
<b>3½ cups</b> water<br />
<b>1 tsp</b> sugar<br />
<b>½ tsp</b> salt<br />
<b>2 tbsp</b> white vinegar<br />
<b style="font-size: 1em;">To assemble the tuna and veggie sushi<br />
</b><b>1 bunch </b>spinach leaves<br />
<b>1 tin</b> tuna, drained<br />
<b style="font-size: 1em;">2 tbsp</b><span style="font-size: 1em;"> mayonnaise<br />
</span><b>1 </b>carrot, finely chopped<br />
<b>¼ </b>cucumber, finely chopped<br />
<b>½ cup</b> shredded cabbage</p>
<p class="p1"><b>METHOD<br />
</b><b style="font-size: 1em;">For the sushi rice<br />
</b><b>1. </b>Rinse the rice in a sieve until the water runs clear.<br />
<b style="font-size: 1em;">2.</b><span style="font-size: 1em;"> Add the rice and water to a pot over medium heat and bring to a boil. Reduce the heat and simmer, covered, for 30 minutes, until the rice is sticky.<br />
</span><b style="font-size: 1em;">3.</b><span style="font-size: 1em;"> Dissolve the sugar and salt in the vinegar. Pour into the hot rice and stir until combined. Cool to room temperature.<br />
</span><b style="font-size: 1em;">To assemble the tuna and veggie sushi<br />
</b><b style="font-size: 1em;">1.</b><span style="font-size: 1em;"> Cover a clean tea towel with a layer of cling wrap.<br />
</span><b>2. </b>Place the spinach leaves in a bowl and pour over just enough boiling water to cover. Set aside for 1 minute, then drain.<br />
<b style="font-size: 1em;">3.</b><span style="font-size: 1em;"> Arrange the leaves on the prepared tea towel on top of the cling wrap, overlapping them. Pat dry with paper towel.<br />
</span><b>4. </b>Top with an even layer of rice.<br />
<b style="font-size: 1em;">5.</b><span style="font-size: 1em;"> Mix the tuna and mayonnaise together and season with pepper. Spread evenly on top of the rice, leaving a 3 cm border from the bottom.<br />
</span><b>6.</b> Top with the carrot, cucumber and cabbage.<br />
<b>7.</b> Using the towel and cling wrap to help you, fold the bottom 3 cm of the rice and spinach over the bottom of the filling. Then roll up tightly.<br />
<b>8. </b>Refrigerate for 10 minutes.<br />
<b>9. </b>Remove the towel and cling wrap and slice into pieces.</p>
