<h3>Ingredients</h3>
<p>90ml aquafaba<br />
200g caster sugar<br />
15ml lemon juice<br />
5ml vanilla essence</p>
<h3>Method</h3>
<ol>
<li>Drain chickpeas and reserve the aquafaba. (1 can of chickpeas generally has 100ml-125ml of aquafaba.)</li>
<li>Whip the aquafaba until stiff peaks form, adding the sugar gradually until the sugar has dissolved.</li>
<li>Fold in the lemon juice and vanilla essence.</li>
<li>Lather this fluffy meringue over any vegan sweet treat like cakes, tarts or cupcakes.</li>
<li>Toast the meringue with a kitchen blowtorch to get that delicious fire marshmallow flavour.</li>
</ol>
<p><b>Good to know </b><br />
To bake, dollop the meringue mixture on a lined tray and bake at 100°C for 1 hour, then turn oven off. Cool in oven for 45 minutes, keeping oven door closed. Open the oven door slightly and leave meringue inside overnight to set.</p>

<li><span data-contrast="auto"> Preheat oven to 200°C.</span></li>
<li><span data-contrast="auto"> Mix all the dry ingredients together. Whisking continuously, gradually add in the warm water and mix until smooth. Allow to rest for about 30 minutes.</span></li>
<li><span data-contrast="auto"> Drizzle half the oil in a 20 × 30 cm oven tray and place in the oven for about 5 minutes to heat the oil.</span></li>
<li><span data-contrast="auto"> Pour the socca mixture into the hot tray and bake for 10 minutes. Brush the top with the remaining oil and cook for another 5–10 minutes, until the edges are crisp.</span></li>
<li><span data-contrast="auto"> Remove from the tray and leave to cool on a wire cooling rack.</span></li>

<li><span data-contrast="auto"> Heat oil in a large, deep pan. Add the onion, garlic, ginger and chilli and fry for 3–5 minutes or until the onion is soft.</span></li>

<li><span data-contrast="auto"> Add the vegetable stock, coconut milk, butternut and cashews, and bring to the boil. Lower the heat to a simmer and cook for 20–30 minutes.</span></li>

<li><span data-contrast="auto"> Toast cardamom in a dry pan until fragrant. Allow to cool before gently folding into the meringue.</span></li>
<li><span data-contrast="auto"> Dollop spoonfuls onto a tray to create a circle. Make peaks using the back of a spoon.</span></li>
<li><span data-contrast="auto"> Bake for 40 minutes until set, then turn the oven off and allow the meringue to crisp up for an hour.</span></li>

<p><strong>INGREDIENTS</strong><br />
<strong>2</strong> brinjals<br />
<strong>100 ml</strong> olive oil<br />
<strong>1</strong> garlic clove, halved<br />
<strong>2 tbsp</strong> miso paste<br />
<strong>100 ml</strong> tahini</p>
<p><strong>METHOD</strong><br />
<strong>1.</strong> Preheat oven to 190°c.<br />
<strong>2.</strong> mould 2 foil parcels and add a brinjal to each one. Divide the olive oil between the two and pop half a garlic clove in each one. Season.<br />
<strong>3.</strong> Close the parcels and bake for 90 minutes, until soft to the touch. allow to cool for 30 minutes. then cut off the stems.<br />
<strong>4.</strong> Add the brinjals and the cooking juices from the foil parcels, the miso paste and the tahini to a food processor. Blend until smooth. if it’s too thick, add 2 tablespoons water.<br />
<strong>5</strong>. Season to taste and serve with dippers of your choice</p>
<p><strong>BONUS RECIPE:</strong> Miso paste is a common ingredient used in classic Japanese cooking. it is a fermented sauce made from soy beans. if you can’t find it at your supermarket, just make our cheat’s version: mix together 2 tbsp soy sauce, 1 tbsp tomato paste and 2 tbsp honey. Season to taste.</p>

<b>1 tsp </b><span style="font-weight: 400;">mixed dried herbs</span><br />

<strong>½ </strong><b>cup </b><span style="font-weight: 400;">breadcrumbs</span><br />

<p><b>METHOD</b><br />
<b>For the meatballs</b><br />
<strong>1.</strong> H<span style="font-weight: 400;">eat some oil in a pot over high heat. add the onion, garlic, brinjal and spices. Fry until well browned. allow to cool slightly.</span><br />
<b>2. </b>A<span style="font-weight: 400;">dd the brinjal mixture and all the remaining ingredients to a food processor. Pulse for 2 minutes, until well combined. Season to taste with salt and pepper.</span><br />
<b>3. </b><span style="font-weight: 400;">Form the veggie mixture into balls. heat some oil in a pan and fry the veggie balls over high heat until golden brown and cooked through.</span><br />
<b>4. </b><span style="font-weight: 400;">Serve veggie balls with pitas and sour cream.</span></p>
