<li><span data-contrast="auto"> Blitz together the feta, yoghurt, coriander, lemon zest and chilli. Season with black pepper and set aside. </span></li>
<li><span data-contrast="auto"> Pat the calamari dry using a paper towel or a clean tea towel. </span></li>
<li><span data-contrast="auto"> In a bowl, combine the cake flour, garlic powder (if using) and season. </span></li>
<li><span data-contrast="auto"> Heat oil in a large pot or pot for shallow frying. 5. Toss the calamari into seasoned flour, dust off excess and fry in batches for about 2-3 minutes each. Drain on paper towel. </span></li>
<li><span data-contrast="auto"> Blanch the sugar snap peas in a pot of salted boiling water and refresh in ice water. </span></li>
<li><span data-contrast="auto"> Toss blanched greens in a bowl with half the olive oil, chilli, lemon zest and juice. Set aside. </span></li>

<ol>
<li><span data-contrast="auto"> Preheat oven to 180 ̊C. </span></li>
<li><span data-contrast="auto"> Combine the buttermilk, garlic, chilli flakes and herbs. </span></li>
<li><span data-contrast="auto"> Season the steak well and add to the marinade, tossing to coat evenly. Set aside to marinate for at least 30 minutes.</span></li>
<li><span data-contrast="auto"> Toss baby potatoes with oil and season well. Place onto a baking tray and bake for about 20-25 minutes. </span></li>
<li><span data-contrast="auto"> Meanwhile for the sauce, heat a glug of oil in a pot and fry onions, garlic and peppercorns for about 4-6 minutes, stirring regularly. </span></li>
<li><span data-contrast="auto"> Add the butter and stir through flour until smooth. </span></li>
<li><span data-contrast="auto"> Pour in the cream and stir through mustard and herbs. Simmer gently over a low heat while stirring until the cream has thickened.</span></li>
<li><span data-contrast="auto"> Stir through lemon zest, juice and season well. Set sauce aside.</span></li>
<li><span data-contrast="auto"> Remove the potatoes from the oven and use the back of a fork to smash each potato gently. Drizzle with melted butter, sprinkle with Parmesan and return to the oven for another 15 minutes or until golden and cooked through.</span></li>
<li><span data-contrast="auto"> Remove the steak from the marinade, pat dry and heat a glug of oil in a large pan.</span></li>
<li><span data-contrast="auto"> Fry the steaks for about 3-4 minutes per side for medium rare. Set aside to rest for at least 5 minutes before slicing.</span></li>
<li><span data-contrast="auto"> Serve the steak, with the peppercorn sauce, crispy potatoes, cucumber and pickles. </span></li>

<li><span data-contrast="auto"> Heat oil in a large pan and fry onions for 3-5 minutes. </span></li>
<li><span data-contrast="auto"> Add garlic, thyme and chilli and fry for a further 2-3 minutes until golden. </span></li>
<li><span data-contrast="auto"> Add pork mince and cook for about 6-8 minutes until well browned. </span></li>
<li><span data-contrast="auto"> Toss in the butter, spices and cook for 2 minutes. </span></li>
<li><span data-contrast="auto"> Add the tomato relish or chopped tomatoes, Worcestershire sauce and sugar and cook for about 10-12 minutes while stirring regularly. </span></li>
<li><span data-contrast="auto"> Stir through coriander and season well. Set aside to cool completely. </span></li>
<li><span data-contrast="auto"> Preheat oven to 180 ̊C. </span></li>
<li><span data-contrast="auto"> Roll out dough onto a lightly floured surface to about 3mm thick.</span></li>
<li><span data-contrast="auto"> Using a side plate or large cookie cutter, cut out circles of about 12cm in diameter. You should end up with between 12-15 circles. </span></li>
<li><span data-contrast="auto"> Fold the cheese into cooled mince mixture and place 2-3 Tbsp onto each dough circle, fold over to enclose and pinch the ends with the back of a fork. </span></li>
<li><span data-contrast="auto"> Place onto a greased baking tray, brush with egg wash and bake for about 15-18 minutes or until golden and cooked through. </span></li>
<li><span data-contrast="auto"> Combine slaw ingredients in a bowl and season well. </span></li>

<li><span data-contrast="auto"> Combine chicken, oil, spices and season well. Toss to coat. </span></li>
<li><span data-contrast="auto"> Heat another glug of oil in a pan and fry the chicken breasts for about 4-6 minutes per side until golden and cooked through. Set aside and keep warm for serving. </span></li>
<li><span data-contrast="auto"> Heat some oil in a pot and fry onions and garlic for 3-5 minutes or until they are golden. </span></li>
<li><span data-contrast="auto"> Add butter and once melted, remove from heat and whisk in the flour. </span></li>
<li><span data-contrast="auto"> Place the pot back onto a low heat then add milk and cream, while stirring until thickened. This should take about 6-8 minutes. </span></li>
<li><span data-contrast="auto"> Stir through mustard and sun-dried tomatoes and simmer gently for about 3-5 minutes. </span></li>
<li><span data-contrast="auto"> Season well and fold through baby spinach, simmer for 1 minutes and remove from the heat. </span></li>
<li><span data-contrast="auto"> In a bowl, toss the cooked pasta with the sauce and coat evenly. </span></li>
<li><span data-contrast="auto"> Divide the pasta and sauce between two serving bowls. </span></li>
<li><span data-contrast="auto"> Top with cooked chicken, drizzle with lime juice and sprinkle with zest. </span></li>

<p><span data-contrast="auto">1. Preheat oven to 180°C and grease a muffin tray.</span><br />
<span data-contrast="auto">2. Heat oil in a pan over high heat. Fry the vegetables for about 10 minutes until al dente.</span><br />
<span data-contrast="auto">3. Stack the phyllo sheets on top of each other and cut them into 4 squares. Make a pile of squares, with 4 layers of phyllo, brushing melted butter between the layers. Repeat until you have 6 piles.</span><br />
<span data-contrast="auto">4. Divide the veggies between the 6 piles, topping each with some ricotta and herbs. Bring the edges of the pastry together and twist to form a bundle.</span><br />
<span data-contrast="auto">5. Place each bundle in a hole of the muffin tray. Bake for 12–15 minutes, until golden.</span><br />

<span data-contrast="auto">2. Toss the butternut with 1 tbsp oil, honey and garlic. Arrange on a baking tray and roast for 25 minutes, until golden brown and cooked through.</span><br />
<span data-contrast="auto">3. Heat the remaining 1 tbsp oil in a pan and fry the salmon for 4 minutes, until it is just cooked through, turning halfway. Keep it warm.</span><br />
<span data-contrast="auto">4. Cook baby marrow noodles as per package instructions, then place in a bowl.</span><br />
<span data-contrast="auto">5. Toss butternut and spinach together, and pile on top of the noodles. Flake the salmon over, scatter with the pumpkin seeds and serve.</span><span data-ccp-props="{}"> </span></p>

</strong></h3>
<p><strong>FOR THE MOUSSE </strong></p>
<p>1. Add the chocolate, marshmallows and half the cream to a large heat-proof bowl over a pot of simmering water.<br />
2. Stir the ingredients until they have all melted, about 10–12 minutes.<br />
3. Remove from the heat and allow mixture to cool to room temperature.<br />
4. In a separate bowl, whip the remaining cream until soft peaks form<br />
5. Fold the cream into the chocolate mixture until its combined well and smooth.<br />
6. Scoop into serving bowls or glasses and chill overnight until set.</p>
<p><strong>FOR THE HONEYCOMB </strong></p>
<p>1. Arrange the peanuts on a lined baking tray. Set aside.<br />
2. Place the sugar in a saucepan over medium heat. Do not stir it.<br />
3. Carefully tilt the pan from side to side to melt the sugar evenly.<br />
4. Once the sugar turns a deep gold colour, add the bicarbonate of soda.<br />
5. Stir to combine and pour onto the tray of peanuts.<br />
6. Cool until honeycomb has set and hardened.<br />
7. Break into shards and serve as a topping with the chocolate mousse.</p>

<p class="p1"><b>INGREDIENTS<br />
</b><b>2 </b>egg whites<br />
<b>¼ tsp</b> cream of tartar<br />
<b>½ cup</b> brown sugar<br />
<b>¼ cup</b> water<br />
<b>500 g </b>strawberries</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Beat the egg whites and cream of tartar together until soft peaks form. Set aside in a cool spot.<br />
<b>2. </b>Dissolve the sugar and water together over low heat. Increase the heat to medium-high and simmer until it turns a dark-golden-brown caramel colour, or until it reaches 110°C.<br />
<b style="font-size: 1em;">3.</b><span style="font-size: 1em;"> Beating continuously, slowly trickle the syrup into the meringue, until thick and glossy and stiff peaks have formed.<br />
</span><b>4.</b> Dip each strawberry into the meringue and roast over a hot braai or pop under the grill until golden brown.</p>

<p class="p1"><b>INGREDIENTS<br />
</b><b>250 g</b> butter<br />
<b>500 g</b> caster sugar<br />
<b>4</b> eggs<br />
<b>2 tsp</b> rose water<br />
<b>375 g</b> cake flour<br />
<b>4 tsp</b> baking powder<br />
<b>½ tsp</b> salt<br />
<b>1 cup</b> milk<br />
Red food colouring</p>
<p class="p1"><b>METHOD<br />
</b><b>1.</b> Preheat oven to 180˚C<br />
<span class="s2"><b>2.</b> Cream the butter and sugar together</span>.<br />
<b>3.</b> Mix in the eggs and rose water.<br />
<b>4.</b> Sift all the dry ingredients into a separate bowl.<br />
<span class="s3"><b>5.</b> Alternately add the dry ingredients</span> and the milk to the creamed butter mixture, mixing well after each addition.<br />
<b>6.</b> Add a few drops of red food colouring to the mixture and pour into a greased and lined loaf tin.<br />
<b>7.</b> Bake for approximately 45 minutes, cool and slice. Press a heart out of each slice and freeze them.<br />
<b>8.</b> Make a second batch of batter following steps 1-5. Line a muffin cupcake tray with paper cases.<br />
<b>9.</b> Fill each case halfway and insert a frozen heart into each one. Cover with the remaining batter.<br />
<b>10.</b> Bake for 15 minutes, cool completely and ice as desired.</p>

Crushed ice</p>

</b></span><b>1.</b> Combine the sugar and water in a small pot over low heat. Stir <span class="s3">until the sugar has dissolved. </span>Remove the syrup from the heat and leave to cool.<br />
<b>2.</b> Combine the syrup, sparkling wine, hibiscus tea and vodka in a Martini glass.<br />
<b>3.</b> Add crushed ice to top-up and serve immediately.</p>
