<h3><b><span data-contrast="auto">Method</span></b><span data-ccp-props="{}"> </span></h3>
<ol>
<li><span data-contrast="auto">For the toffee sauce, add juice and sugar to a pot over medium heat. Stir to dissolve sugar completely.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Bring to a boil and reduce until it turns a dark amber colour, about 10-12 minutes. (The mixture will change from a rapid boil to a slow bubble, becoming syrupy).</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Add the cream and stir, then add the butter and salt. Remove and set aside.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Preheat oven to 180°C.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">For the pudding, cream together sugar, butter and vanilla until fluffy. Add the eggs one at a time, incorporating them well.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Add dates and boiling water to a pot and bring to a simmer for 1-2 minutes, stirring to soften dates. Mash lightly with a fork until chunky.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Stir the dates through the batter.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Sift together the salt, flour, baking powder, bicarb and spices, then fold through the batter.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Pour into eight 6cm round ramekins, filling ¾ full. Bake for 15-20 minutes, until cakes are puffed up and a skewer inserted comes out clean.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Immediately poke lots of holes into each pudding, all the way to the base.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Heat the toffee sauce until runny, then drizzle over pudding. Set aside to soak.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Unmould puddings, if you like. Serve topped with ice cream and extra toffee sauce.</span><span data-ccp-props="{}"> </span></li>

<p>What better way to end your evening than with this delicious dessert, sticky banana pudding. It&#8217;s guaranteed to be a crowd-pleaser!</p>
<p><strong>SERVES</strong> 6 //<strong> COOK TIME</strong> 1 hour 10 min</p>
<p><strong>INGREDIENTS</strong><br />
<strong>For the pudding</strong><br />
<strong>220 g</strong> flour<br />
<strong>1 tsp</strong> baking powder<br />
<strong>1 tsp</strong> bicarbonate of soda<br />
Pinch salt<br />
<strong>150g</strong> white sugar<br />
<strong>125 g</strong> butter, melted<br />
<strong>2</strong> eggs<br />
<strong>1 cup</strong> mashed bananas (2–3)<br />
<strong>2 tbsp</strong> lemon juice<br />
<strong>1 tsp</strong> vanilla essence<br />
<strong>For the toffee sauce</strong><br />
<strong>250 ml</strong> cream<br />
<strong>125 g</strong> brown sugar<br />
<strong>125 ml</strong> golden syrup<br />
<strong>60 g</strong> butter<br />
Pinch salt</p>
<p><strong>METHOD</strong><br />
<strong>For the pudding</strong><br />
<strong>1.</strong> Preheat oven to 180°C. Butter and flour a 20 cm baking dish.<br />
<strong>2.</strong> In a bowl, whisk flour, baking powder, bicarb and salt.<br />
<strong>3.</strong> In another bowl, beat sugar and butter. Add eggs, bananas, lemon juice and vanilla.<br />
<strong>4.</strong> Combine the dry and wet ingredients (don’t overmix).<br />
<strong>5.</strong> Pour into the dish and bake until golden, 30–35 minutes.<br />
<strong>For the toffee sauce</strong><br />
<strong>1.</strong> Bring the cream, sugar, golden syrup, butter and salt to the boil, whisking until sugar dissolves.<br />
<strong>2.</strong> Reduce to low heat and keep simmering for 15 minutes.<br />
<strong>3</strong>. Spoon ½ sauce over pudding. Bake for another 5 minutes.<br />
<strong>4.</strong> Cool for 30 minutes. Serve with the rest of the sauce.</p>

</b><b>20</b> strawberries<br />
<b>1 cup</b> sugar</p>
<p class="p1"><b>METHOD<br />
</b><b>1.</b> Line a baking tray with baking paper and insert a lolly stick into each strawberry.<br />
<b>2. </b>Place sugar in a pot over low heat. Cook, stirring for 3 minutes, or until sugar is dissolved, then increase the heat to a boil. Cook without stirring for 6–8 minutes, until the mixture turns golden. Set aside for 30 seconds, until the bubbles subside.<br />
<b>3. </b>Dip each strawberry in the hot toffee. Place on the baking tray and leave until the toffee is fully hardened, about 15 minutes.</p>
