<li><span data-contrast="auto"> Place the peppers on an open flame or grill in the oven on high to scorch and blacken the skin of the peppers. Once blackened, place the peppers in a bowl and cover with cling wrap. Set aside to sweat for about 10 minutes. </span><span data-contrast="auto"> </span></li>
<li><span data-contrast="auto"> Uncover and peel the peppers. Cut the peppers into strips, discarding the skins and seeds. </span><span data-contrast="auto"> </span></li>
<li><span data-contrast="auto"> Heat oil over medium-low and sauté onion for 5 minutes. Add garlic and sauté another 2-3 minutes. </span><span data-contrast="auto"> </span></li>

<li><span data-contrast="auto"> Remove pork sausages from casing and fry with onion, breaking up with a wooden spoon as it cooks, until browned.</span></li>
<li><span data-contrast="auto"> Add paprika and sherry or balsamic vinegar and allow to simmer for 15-20 minutes.</span></li>
<li><span data-contrast="auto"> Add cooked pork mince and chorizo to a food processor and pulse to a course texture. Cool completely.</span></li>
<li><span data-contrast="auto"> Boil potatoes until fork tender and pass through a sieve, or mash using a potato ricer.</span></li>
<li><span data-contrast="auto"> Add olive oil, season and roll into balls (about 20-30g each).</span></li>
<li><span data-contrast="auto"> Using your index finger, make an indent halfway through the centre of each potato ball.</span></li>
<li><span data-contrast="auto"> Fill with about 2 tsp pork and chorizo filling and close potato around filling, smoothing into a ball. Allow to set in the fridge for 20 minutes.</span></li>

<li><span data-contrast="auto">Bake the brownie batter according to box instructions. Cool completely. </span></li>
<li><span data-contrast="auto">Use a cookie cutter to cut small circles out of the brownie tray. Arrange on a serving platter. </span></li>
<li><span data-contrast="auto">Whisk butter and icing sugar together for about 3 minutes or until light and fluffy. Add milk if needed to slightly loosen the mixture. </span></li>
<li><span data-contrast="auto">Place frozen berries in a pot over medium heat. Add lemon juice and bring to a simmer for 10-15 minutes until thick and syrupy, stirring constantly. Add sugar to taste and allow to cool completely.</span></li>
<li><span data-contrast="auto">Add spoons of the berry coulis to the buttercream and swirl through. </span></li>
<li><span data-contrast="auto">Using a piping bag or spoon, dollop buttercream on each brownie. Drizzle with extra berry coulis. </span></li>
<li><span data-contrast="auto">Finish off by adding a bite of candy floss just before serving, to avoid melting.</span></li>

<h2>Method</h2>
<ol>
<li><span data-contrast="auto"> Add mango, tequila, lime juice, water and sugar to a food processor and blitz until smooth, about 1-2 minutes. (Add a splash of extra water if the mixture doesn&#8217;t blend easily at first.)</span></li>
<li><span data-contrast="auto"> Place one plastic bag inside another, creating a double bag. Fill with ice, tie closed and use a rolling pin to smash into small bits. (This makes it easier for the blender to break up the ice).</span></li>
<li><span data-contrast="auto"> Add ice to the blender with the mango mixture and blend for another minute to form a slushy.</span></li>
<li><span data-contrast="auto"> Combine salt and spice on a flat plate.</span></li>
<li><span data-contrast="auto"> Dip glasses into a shallow dish of lemon juice or water, then press into salt mixture, turning around to coat the inside and outside of the rim.</span></li>
<li><span data-contrast="auto"> Decant frozen mangorita into glasses, finish with a wedge of lime and enjoy.</span></li>

<ol>
<li><span data-contrast="auto">Preheat oven to 180°C.</span></li>
<li><span data-contrast="auto">In a large, greased baking tray, combine all the muesli crumble ingredients and toss through to combine.</span></li>
<li><span data-contrast="auto">Bake for about 10-15 minutes, stirring regularly until golden and toasted. Remove and set aside to cool.</span></li>
<li><span data-contrast="auto">Place plums or nectarines into a baking tray or skillet.  </span></li>
<li><span data-contrast="auto">Whisk together orange juice, vanilla and brown sugar. Pour mixture over the stone fruit and bake for about 20-25 minutes or until softened and sticky.</span></li>
<li><span data-contrast="auto">Whisk together the crème fraiche and honey, then set aside.</span></li>
<li><span data-contrast="auto">Serve the stone fruit with muesli crumble and honey crème fraiche.  </span></li>

<h2><b><span data-contrast="auto">Method</span></b><span data-ccp-props="{}"> </span></h2>
<ol>
<li><span data-contrast="auto">Heat oil in a pan and sauté onions and red peppers for about 8-10 minutes or until onions are golden.</span></li>
<li><span data-contrast="auto">Add garlic, fry for a minute and then add tomato paste and spices. Stir and fry until sticky, about 1-2 minutes.</span></li>
<li><span data-contrast="auto">Add chopped tomatoes and stock, then bring to a simmer, cooking for 10-12 minutes.</span></li>
<li><span data-contrast="auto">Cut the tops off the buns, leaving the bottom-half 2-3cm Press down the inside of buns, leaving a clear border all around (this will help hold the shakshuka sauce later).</span></li>
<li><span data-contrast="auto">Brush inside of buns (and the border) with some butter or oil.</span></li>
<li><span data-contrast="auto">Cut the cheese and place inside buns. Bake for 4-6 minutes or until cheese is molten and bread is crisp.</span></li>
<li><span data-contrast="auto"> Spoon filling into bread cavities, place an egg inside and top with coriander. Serve immediately.</span></li>

</span><span data-contrast="auto">Salt and milled pepper</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">2 Tbsp corn flour</span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">¼ cup olive oil  </span><span data-ccp-props="{}"><br />

<h2><b><span data-contrast="auto">Method</span></b><span data-ccp-props="{}"> </span></h2>
<ol>
<li><span data-contrast="auto">Preheat oven to 180°C. </span></li>
<li><span data-contrast="auto">Arrange beans on a baking tray and pat down with paper towel to remove excess moisture. Bake for 10 minutes to dry out. Remove.</span></li>
<li><span data-contrast="auto">Toss beans in seasonings and corn flour. Place on a lined baking tray and coat with a generous drizzle of olive oil.</span></li>
<li><span data-contrast="auto">Roast beans for 20-30 minutes, or until crispy and golden.</span></li>
<li><span data-contrast="auto">Heat oil in a pan over medium heat and fry mushrooms, about 10 minutes or until golden. Remove and set aside.</span></li>
<li><span data-contrast="auto">Add another drizzle of oil in the same pan, along with butter and fry eggs to the desired consistency – we opted for saucy, runny yolks.</span></li>
<li><span data-contrast="auto">Top tortillas with eggs, crispy beans, mushrooms and avocado. Serve warm. </span></li>

<h2><b><span data-contrast="auto">Method</span></b><span data-ccp-props="{}"> </span></h2>
<ol>
<li><span data-contrast="auto">For the whipped feta, combine all ingredients into a blender and blend until smooth. Set</span></li>
<li><span data-contrast="auto">For the crêpes, heat a pot of water and blanch the rocket and baby spinach for 30 seconds. Immediately plunge the greens into a bowl of ice water. Squeeze out any excess water.</span></li>
<li><span data-contrast="auto">Place the greens into a blender with the egg, milk and water. Blend until smooth.</span></li>
<li><span data-contrast="auto">Sift the flour and baking powder into a bowl and add salt.</span></li>
<li><span data-contrast="auto">Add herb mixture and whisk to combine.</span></li>
<li><span data-contrast="auto">Place ½ Tbsp of butter into a shallow pan and pour a cup of the batter into the pan. Swirl the pan to spread the batter evenly and cook for 1-2 minutes per side or until cooked. Place the cooked crêpes on a plate and cover with a clean tea towel until needed.</span></li>
<li><span data-contrast="auto">For the filling, add the butter and oil to a pan over medium heat.</span></li>
<li><span data-contrast="auto">Fry leeks for about 3-4 minutes, then add garlic, peas and tomatoes and fry for another 3-4 minutes. Season well.</span></li>
<li><span data-contrast="auto">Fill each crêpe with whipped feta, pea mixture and a poached egg. Enclose the crêpes and serve with herbs or micro leaves, lemon wedges and enjoy.</span></li>
