<p class="p1"><span class="s3"><b>INGREDIENTS<br />
</b></span><span class="s3"><b>250g</b> streaky bacon, chopped<br />
</span><span class="s3"><b>2 cups</b> spinach, chopped<br />
</span><span class="s3"><b>1 cup</b> cream<br />
</span><span class="s3"><b>8</b> eggs<br />
</span><span class="s3">Salt and black pepper<br />
</span><span class="s3"><b>1 cup</b> baby tomatoes, halved</span></p>
<p class="p1"><span class="s3"><b>METHOD<br />
</b></span><b>1.</b> Preheat oven to 170°C and grease a 12-hole muffin pan.<br />
<b>2.</b> Fry the bacon in a pan over medium heat until crispy, then remove from the heat. Wilt the spinach in the same pan, then set aside.<br />
<b>3.</b> Mix the cream and eggs together until well combined. Season to taste.<br />
<b>4.</b> Divide the bacon and spinach between the muffin pan holes, then pour in the egg mixture.<br />
<b>5.</b> Place the tomatoes cut side up on the top of each frittata. <span class="s4">Bake in the oven for 15–20 </span>minutes, or until the egg sets.</p>
