<li><span data-contrast="auto"> Toss the tomatoes with 1 tbsp oil and season.</span></li>
<li><span data-contrast="auto"> Place in a roasting tin and roast for 30 minutes.</span></li>
<li><span data-contrast="auto"> After 15 minutes, add the bread. Dot with butter and sprinkle with lemon zest.</span></li>
<li><span data-contrast="auto"> Bake until the bread is crispy and the tomatoes are slightly shrivelled.</span></li>
<li><span data-contrast="auto"> Allow to cool, then mix 100ml oil, mustard, sugar and lemon juice to make a dressing.</span></li>

Blend 1½  cups spanspek until smooth. Place in a cocktail shaker and add 2 tots (50ml) tequila, 1 juiced lime, 1 tot (25ml) simple syrup, 5 mint leaves and ½ deseeded red chilli (optional). Top up with crushed ice and shake for 30 seconds. Fill glass with ice and strain over cocktail. Serve garnished with melon slices. </span><span data-ccp-props="{}"> </span></p>

<p><em>You can swap out salami for shredded chicken and mozzarella for crumbled feta or dollops of cultured crème. </em></p>
<p><span data-contrast="auto">Peel and deseed half a <strong>spanspek</strong> (sweet melon). Cut into 4 wedges, then very thinly slice each wedge lengthways. Halve and slice 2 <strong>nectarines</strong> in the same way. Place 1 packet (80g) <strong>rocket</strong>, ½ punnet (10g)<strong> fresh basil</strong>, stems discarded, and ½ sliced <strong>red onion</strong> into a large salad bowl. Top with fruit slivers and toss together. Dot with 200g <strong>fresh mozzarella balls</strong> (bocconcini) and 1 packet (100g) <strong>Italian salami</strong>. <p><span data-contrast="auto">Place 1 sheet <strong>phyllo pastry</strong> onto a clean surface and brush with melted butter. Top with another pastry sheet and repeat process another four times. Place 1 (125g) <strong>camembert</strong> wheel into the centre of the pastry and scrunch up the ends to enclose, creating a parcel. Wrap the &#8220;parcel&#8221; neatly in two layers of foil making sure it is secure. Create a well with medium-hot coals, placing the phyllo parcel in the centre. Cook for about 8-10 minutes, turning regularly until pastry is cooked and cheese has melted. Unwrap, place on a serving platter, drizzle with <strong>honey</strong> and sprinkle with chopped <strong>mixed nuts</strong>. Slice 1 coil (300g) <strong>chorizo</strong> into 2cm-thick slices and fry for 3-4 minutes until crisp. <b>Handful </b>fresh mint<br />
<b>1 tbsp </b>vinegar<br />
<b>½ tsp</b> honey<br />
<b>2 tbsp </b>olive oil</p>

</b><b>1. </b>Combine paprika and olive oil, then season with salt and pepper. Rub over the steak. Set the steak aside to come to room temperature.<br />

<p class="p1"><b>MAKES</b> 2 <b>// COOKING TIME</b> 10 min</p>
<p class="p1"><strong>INGREDIENTS</strong><br />
<b>¼ cup</b> cubed spanspek, plus<br />
<b>2</b> thinly sliced wedges<br />
<b>2</b> rooibos teabags<br />
<b>5 tbsp</b> boiling water<br />
<b>5 tbsp</b> honey<br />
<b>¼ cup</b> dark rum<br />
<b>1 cup</b> sparkling white wine<br />
<b>1 cup</b> sparkling water</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Heat a griddle pan over high and char the spanspek cubes and wedges. Allow to cool.<br />
<b>2.</b> Steep rooibos in the boiling water until strong. Let cool.<br />
<b>3.</b> Blend together the spanspek cubes, rooibos tea and honey until smooth. Pass through a fine sieve or piece of muslin cloth to make a melon cordial.<br />
<b>4. </b>Divide the spanspek cordial between 2 glasses. Top with ice, rum, sparkling wine and sparkling water.</p>
