How to make melted snowman marshmallow biscuits

Makes 20 biscuits

Total time 20 min

Ingredients

Icing sugar 1 1/2 cups

Water 3 tbsp Chocolate 1/2 slab Vanilla biscuits 20

Chocolate nibs 60

White marshmallows 10

Orange sweets 20

Method

In a small bowl, whisk the icing sugar and water until smooth.

Melt the chocolate in a double boiler, stirring every 20 seconds. (Take care when doing this, even just a few seconds too long can leave you with a burnt mess.)

Place a spoonful of icing on each biscuit and spread it to cover the biscuit’s surface.

Place 3 chocolate nibs and a halved white marshmallow on the icing before it sets.

Stick an orange sweet at the base of each marshmallow with the remaining icing to make a nose and draw the eyes using a skewer dipped in chocolate.

Leave the marshmallow snowmen to stand until the icing has set.

A bonus tip to melt your chocolate quickly

Melting chocolate in the microwave can speed things up, but you still need to be careful. Break the chocolate up into pieces and heat for 20 seconds at a time, stirring well after each interval. Resist the urge to microwave the chocolate until completely liquid. When it’s shiny and there are still a few lumps left, stop heating it and stir until smooth.

Fun funfetti whoopie pies recipe

Makes 16 pies

Total time 30 min

Ingredients

Butter, softened 1/2 cup

Castor sugar 1 cup

Large egg 1

Flour 3 cups

Funfetti sprinkles 1/2 cup plus extra for dipping

Bicarbonate of soda 1/2 tbsp

Buttermilk 1/2 cup

Mini marshmallows 1 packet

Method

Preheat the oven to 180°C. Line 4 baking trays with baking paper.

Beat the butter and the sugar together using an electric beater until light and fluffy.

Add the egg and whisk until it is well combined.

Mix the flour, sprinkles and bicarb.

Fold this into the butter mixture and then stir in the buttermilk.

Roll the dough into balls the size of a R5 coin. It should make about 32 balls. Place them on the baking trays roughly 5cm apart.

Bake them for 8-10 minutes until the bottom of each ball has flattened slightly and the top has become golden. Leave to cool on the trays.

Place 3 marshmallows on the flat side of each biscuit to make half of the pie.

Microwave the pie halves 3 or 4 at a time until the marshmallows have puffed up. Create the pie by sandwiching two halves together.

Dip the pies in the funfetti sprinkles to stick them on the gooey melted marshmallow. Serve them while they are still warm.

Cute reindeer marshmallows that are easy to make

Makes 12

Total time 15 min

Ingredients

Standard size white marshmallows 12

Paper straws 12

Milk chocolate 2 slabs

Pretzels half a packet

Red sweets handful

Mini white marshmallows, cut in half 6

Black sweets 24

Method

Pierce the bottom of each large marshmallow with a paper straw.

Make a small hole on either side of each marshmallow (this is for the ‘antlers).

Melt the chocolate over a double boiler (or see our microwave tip on page 44 in the December issue of MyKitchen).

Dip each marshmallow into the melted chocolate making sure to cover it completely and allowing the excess to drip off.

Break the pretzels in half and secure them in the little holes to create ‘antlers’.

Place a red sweet in the centre of each marshmallow as a nose and 2 mini marshmallow halves to resemble eyes.

Use the remaining melted chocolate as a ‘glue’ to secure the black sweets onto the mini marshmallow eyes.

Set aside to cool before you dig in.

To make a nose and eyes for your reindeer, use sweets like candy-coated chocolate balls, jelly beans or jelly tots.
