<b>3 tbsp</b> olive oil<br />
<b>2</b> slices sourdough, toasted<br />
<b>½</b> avocado, mashed<br />
Handful rocket<br />
<b>1</b> lemon, zested and juiced</p>

</b><b>1. </b>Mash the beans with the oil. Season with salt and pepper.<br />
<b>2.</b> Smear bean mash on toast.<br />
<strong>3.</strong> Add avo and rocket.<br />
<strong>4.</strong> Sprinkle with lemon zest and juice.</p>
