Slice 1 punnet (350g) baby marrows and yellow patty pans lengthways. Season and toss in ¼ cup olive oil. Griddle both sides over a high heat. Toss with the 1 wheel (40g) cubed black pepper feta and ¼ cup olives of choice. Whisk the dressing ½ cup olive oil, ¼ cup of sherry vinegar, ½ tsp chilli flakes and a big pinch of caster sugar. Pour over the cucumbers, set aside to marinate for at least 20 minutes. Serve cold as a side.</span><span data-ccp-props="{}"> </span></p>

<li><span data-contrast="auto"> Mix together the yoghurt, lemon juice, tahini, olive oil, honey and cumin and season. </span>(Loosen with a little water for a thinner sauce.)<span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Dry-fry seeds and nuts over high heat until browned and mix with the crispy onions.</span></li>

<li><span data-contrast="auto"> Remove and rinse in cold water, then drain well. Toss the potatoes through the flour until evenly coated.</span></li>
<li><span data-contrast="auto"> Place the duck fat in a roasting tray and toss the potatoes through it until fully coated. Sprinkle with the garlic, salt and rosemary and roast for 20 minutes, tossing the potatoes every five minutes, until golden and crispy.</span></li>

<li><span data-contrast="auto">Spread cooked quinoa over two baking trays and roast in the oven, stirring every few minutes until crispy and golden. Cool. </span></li>

<li><span data-contrast="auto">Place spinach on a serving dish and top with quinoa mixture. </span></li>

<li><span data-contrast="auto"> On a lightly floured surface, roll the dough out to 35cm in diameter. Press it into the tin, lining the base and sides. Trim the edges. Freeze for 1 hour.</span></li>
<li><span data-contrast="auto"> Preheat oven to 200°C.</span></li>
<li><span data-contrast="auto"> Blind-bake the pastry shell for 15–20 minutes until golden.</span></li>

<h3>Ingredients</h3>
<p>6-8 large chipping potatoes, peeled and cut into 2cm matchsticks<br />
Vegetable oil, for deep-frying<br />
Fine salt or flavoured salt, for serving</p>
<h3>Method</h3>
<p>1. Rinse chips under cold water until water runs clear to remove excess starch.<br />
2. Place chips in a large pot and cover completely in cold water.<br />
3. Par-cook on a medium heat for 5 minutes (take care not to boil).<br />
4. Remove with a slotted spoon and place on a cooling rack to drip-dry.<br />
5. Place the rack on a baking tray or chopping board and freeze for about 45 minutes. (This dries out t, the chips properly).<br />
6. Fill a large pot with oil to about 3/4 full and heat to about 130°C.<br />
7. Deep-fry chips in batches for about 3-5 minutes and drain on kitchen paper. Set aside to cool slightly.<br />
8. Increase oil temperature to 180°C and deep-fry chips in batches for about 3 minutes, until golden and crispy.<br />
9. Drain on kitchen paper, season and serve.</p>
<h2 style="text-align: center;">Crunchy pickled veg</h2>
<p style="text-align: center;"><em><strong>Serves about</strong> 3-4 cups</em></p>
<p style="text-align: center;">Pickling vegetables not only makes them last longer but adds a sweet and sour tang that cuts perfectly through fatty steaks like rib-eye.</p>
<h3>Ingredients</h3>
<p><em>For the pickling liquid</em></p>
<p>1 cup each vinegar, water and sugar</p>
<p>2 tsp coriander seeds<br />
2 tsp mustard seeds<br />
2 star anise, optional<br />
2-3 red onions, cut into thin wedges<br />
2-3 carrots, cut into matchsticks<br />
About 2-3 baby marrows, cut into matchsticks</p>
<h3>Method</h3>
<p>1. Combine vinegar, water and sugar in a saucepan.<br />
2. Add coriander seeds and mustard seeds, and star anise (if using) and simmer, stirring, until sugar dissolves.<br />
3. Remove from heat and infuse for 5 minutes.<br />
4. Place prepared onions in a sterilised jar, and remaining veg in another. (This will help prevent the veg from changing to a red colour.)<br />
5. Top up with slightly cooled pickling liquid.<br />
6. Pickle for at least 60 minutes or up to 3 hours before serving (the longer the veg is pickled, the more tangy and limp veg will go.)<br />
7. Cover jar with the lid after using and refrigerate. (Keeps for about three weeks.)</p>

<p>1/2 cup grated Cheddar<br />
1/2 cup grated mozzarella<br />
3 Tbsp fresh thyme leaves<br />
1kg store-bought bread dough<br />
Melted butter, for brushing</p>
<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Combine cheeses and thyme leaves in a bowl. </span></li>
<li><span data-contrast="auto"> Knock down bread dough and divide into 8 portions. </span></li>
<li><span data-contrast="auto"> Stretch each portion into a rough disc using your fingers. </span></li>
<li><span data-contrast="auto"> Place 2-3 Tbsp cheese mixture into the centre of each disc. </span></li>
<li><span data-contrast="auto"> Fold over the sides and pinch all around to enclose filling. </span></li>
<li><span data-contrast="auto"> Repeat with remaining dough and cheese. </span></li>
<li><span data-contrast="auto"> Place buns over medium coals and cook for 4-5 minutes, brushing with melted butter and turning regularly. Serve hot.</span></li>

<p class="p1"><b>INGREDIENTS<br />
</b><b>3</b> brinjals<br />
<b>3 cloves</b> garlic, peeled and crushed<br />
<b>2 tbsp</b> lemon juice<br />
<b>3 tbsp</b> tahini<br />
<b>⅓ cup</b> olive oil<br />
<b>¼ cup</b> chopped parsley<br />
Salt and pepper<br />
Pita, toasted and cut into wedges, to serve</p>
<p class="p1"><b>METHOD<br />
</b><b>1.</b> Light the braai.<br />
<b>2.</b> Wrap each brinjal in foil and place directly on the hot coals. Cook for about 25 minutes, turning occasionally, until charred on the outside and cooked through.<br />
<b>3.</b> Unwrap the brinjals, cut them in half and scoop out the soft flesh with a spoon. Place the flesh in a sieve set over a bowl and squeeze out excess moisture, then transfer to a bowl.<br />
<b>4.</b> Add the garlic and lemon juice to the brinjal and stir with a fork until it breaks down into a rough paste. Add the tahini and then the olive oil in a thin stream, stirring constantly. The mixture should be pale and creamy.<br />
<b>5.</b> Mix in the parsley and season.<br />
<b>6. </b>Serve with toasted pita wedges.</p>
