<h3>Method</h3>

<li><span data-contrast="auto"> Add canned tomatoes, balsamic vinegar, sugar and stock. Season.</span></li>
<li><span data-contrast="auto"> Simmer soup on low heat for 30-40 minutes with the lid on. Give it a stir halfway through. </span></li>

<li><span data-contrast="auto"> Stir in spinach, peas and coconut milk and simmer for 3-5 minutes to infuse and reduce.</span></li>
<li><span data-contrast="auto"> Create indents in the mixture and gently break eggs into the “nests”.</span></li>
<li><span data-contrast="auto"> Cover and simmer for 6-8 minutes for medium-done eggs.</span></li>

<li><span data-contrast="auto"> Remove blackened skins from peppers by rubbing and peeling off. </span></li>
<li><span data-contrast="auto"> Discard skins, deseed and cut into thick strips. </span></li>
<li><span data-contrast="auto"> Combine canned tomatoes, stock, tomato paste, sugar, thyme, garlic and chilli flakes in a large roasting dish. </span></li>

<li><span data-contrast="auto"> Place peppers, tomatoes, garlic and thyme in a large, deep oven dish. </span></li>
<li><span data-contrast="auto"> Toss with oil and season well. </span></li>
<li><span data-contrast="auto"> Roast at 200°C for about 12-15 minutes. </span></li>
<li><span data-contrast="auto"> Melt butter in a pot over medium heat and whisk in flour until smooth.</span></li>
<li><span data-contrast="auto"> Slowly pour in milk while whisking until sauce has thickened, about 8-10 minutes. </span></li>
<li><span data-contrast="auto"> Season well and stir through mustard. </span></li>
<li><span data-contrast="auto"> Toss cooked pasta and white sauce through the roasted vegetables in oven dish. </span></li>
<li><span data-contrast="auto"> Bake at 180°C for 12-15 minutes until golden. </span></li>

</b><b>1 </b>onion, finely chopped<br />
<b>2</b> red peppers, thinly sliced<br />
<b>3</b> garlic cloves, minced<br />
<b>1½ tsp</b> ground cumin<br />
<b>1 tsp</b> smoked paprika<br />
<b>½ tsp</b> cayenne pepper<br />
<b>½ tbsp</b> red-wine vinegar<br />
<b>2 tbsp </b>tomato paste<br />
<b>1 tin </b>chopped tomatoes<br />
<b>3 tbsp</b> chopped parsley<br />
<b>4</b> eggs<br />
<b>½ cup</b> feta, crumbled</p>
<p class="p1"><b>METHOD<br />
</b><b>1.</b> Preheat oven to 200°C.<br />
<b>2. </b>Heat some olive oil in an oven-proof pan over medium-high heat. Add the onions and red pepper and fry for 6–7 min.<br />
<b>3. </b>Add the garlic and spices and fry for another 2–3 minutes.<br />
<b>4. </b>Add the vinegar and tomato paste and cook for 1–2 minutes.<br />
<b>5.</b> Add the chopped tomatoes and parsley. Season well with salt and pepper.<br />
<b>6. </b>Make 4 wells in the mixture and crack an egg into each.<br />
<b>7.</b> Sprinkle with feta and bake in the oven for 10 minutes, until the eggs are done.</p>

</b></span><span class="s3"><b>1.</b> Heat the olive oil in the slow cooker. Add spring </span><span class="s4">onions and garlic, and cook on medium heat </span>for 20 minutes until caramelised.<br />
<span class="s5"><b>2.</b></span> <span class="s6">Add cumin, origanum, spinach</span> <span class="s7">and peas. </span>Season, then simmer on medium heat with <span class="s6">the lid on, until the spinach </span><span class="s7">has wilted.<br />
</span><span class="s5"><b>3.</b></span> <span class="s4">Crack eggs into the slow cooker and cook</span> for 10 minutes, covered.<br />
<span class="s5"><b>4.</b></span> To serve, sprinkle mint and crumble feta over the shakshuka.</p>
