<p class="p1"><b>For the phyllo cheeseburgers</b></p>
<p class="p1"><b>INGREDIENTS<br />
</b><b>1 tbsp</b> olive oil<br />
<b>1</b> onion, peeled and sliced<br />
<b>1 tbsp</b> white wine vinegar<br />
<b>1 tsp</b> sugar<br />
Salt and black pepper<br />
<b>4 </b>beef burger patties<br />
<b>500 g</b> phyllo pastry<br />
<b>¼ cup</b> melted butter<br />
<b>125 g</b> mozzarella, sliced<br />
<b>1</b> egg, whisked<br />
<b>2 tbsp</b> sesame seeds</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Preheat oven to 180°C.<br />
<b>2. </b>Heat oil in a pan and fry the onion until soft. Add vinegar, sugar and seasoning. Fry until onion is golden and caramelised.<br />
<b>3. </b>Cook the burger patties until done to your liking.<br />
<b>4.</b> Layer 2 sheets of phyllo pastry, brushing butter in between. Fold in half. Place a slice of cheese, a burger patty and some onions on top.<br />
<b>5. </b>Fold short sides of the pastry up along the sides of the patty. Fold in one of the long sides. Continue folding the long sides in the same direction until the burger is neatly wrapped up.<br />
<b>6. </b>Brush the burgers with egg and sprinkle with sesame seeds.<br />
<b>7. </b>Arrange on a baking tray and bake for 20 minutes, until the pastry is golden and crispy.</p>
<p class="p1"><b>For the spiked shakes</b></p>
<p class="p1"><b>INGREDIENTS<br />
</b><b>2 cups</b> vanilla ice cream<br />
<b>2 cups</b> ice<br />
<b>1 cup</b> milk<br />
<b>¼ cup</b> whisky<br />
<b>1 tsp </b>vanilla essence<br />
<b>3 tbsp</b> crunchy peanut butter</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Blitz together all ingredients, except the peanut butter, until mixture is smooth.<br />
<b>2. </b>Add peanut butter and pulse until just combined. Pour into glasses and serve.</p>

<p class="p1"><b>INGREDIENTS<br />
</b><b>2 cups</b> mixed berries<br />
Juice and zest of <strong>1</strong> lemon<br />
<b>½ cup</b> sugar<br />
<b>1 tub</b> vanilla ice cream<br />
<strong>Handful</strong> mint</p>
<p class="p1"><b>METHOD<br />
</b><b>1.</b> Heat your potjie (or a braaiproof pot) over medium coals. Add the berries, lemon juice and zest, and sugar.<br />
<b>2.</b> Simmer for 8–10 minutes, until the berries are soft and the syrup is sticky.<br />
<b>3. </b>Divide the berries between 8 tall glasses and spoon the ice cream on top. The hot berries will melt the ice cream to create a thick milkshake consistency.<br />
<b>4. </b>Top with fresh mint and serve. Add a shot of vodka for an adult version.</p>

</b><b>1 tin</b> coconut milk, refrigerated overnight<br />
<b>1 tsp</b> honey<br />
<b>To serve<br />
</b><b>1</b> ripe banana, peeled<br />
<b>1 tbsp</b> coconut flakes, toasted<br />
<b>1 tbsp</b> cacao nibs</p>

</b></span><span class="s1"><b>1.</b> Place the frozen bananas, </span><span class="s4">cacao powder, nut butter </span><span class="s5">and milk in a blender and </span><span class="s3">blend until thick and creamy. </span><span class="s4">Add vanilla, with more milk to adjust to your </span><span class="s3">desired thickness. Add dates or xylitol for added sweetness. Blend</span>.<br />
<span class="s3"><b>2.</b> </span>Store the smoothie jug in the freezer.<br />
<span class="s6"><b>For the coconut </b></span><span class="s3"><b>whipped cream<br />
</b></span><span class="s3"><b>1.</b> </span>Scoop the thick coconut cream into a bowl, leaving the water behind.<br />
<span class="s3"><b>2.</b> </span>Whip with the honey until light and fluffy.<br />
<span class="s3"><b>To serve<br />
</b></span><span class="s4"><b>1.</b> Cut the ripe banana </span><span class="s1">lengthways into 4 slices.<br />
</span><span class="s1"><b>2.</b> Place 2 banana slices </span><span class="s5">into 2 serving glasses </span><span class="s4">and press with a spoon </span><span class="s5">to adhere to the sides.<br />
</span><span class="s1"><b>3.</b> Pour the smoothie into the glasses and top with </span>coconut whipped cream, <span class="s5">toasted coconut flakes </span>and cacao nibs.</p>
