</b><b>½ bulb </b>garlic<br />
<b>2 cups</b> double-cream yoghurt<br />
<b>5</b> mini cucumbers, sliced into matchsticks, plus extra ribbons, to garnish<br />
<b>1 tsp</b> ground cumin, toasted<br />
<b>½ tsp</b> cayenne pepper<br />
Toasted cumin seeds, to garnish</p>
<p class="p1"><b>METHOD<br />
</b><b>1.</b> Preheat oven to 180°C.<br />
<b>2. </b>Wrap the garlic bulb (skin on) in foil and roast for 1 hour.<br />
<b>3. </b>Unwrap the garlic and allow to cool. Squeeze out of the skin and mash. Mix in the yoghurt, cucumbers, ground cumin and cayenne pepper.<br />
<b>4. </b>Garnish with cumin seeds and cucumber ribbons.</p>

<b>2</b> dried red chillies<br />
<b>1</b> fresh curry leaf<br />
<b>1 tbsp</b> coriander seeds<br />
<b>2 tsp</b> black mustard seeds<br />
<b>1 tsp</b> cumin seeds<br />
<b>½ tsp</b> ground black pepper<br />
<b>½ tsp</b> paprika<br />
<b>1½ cups</b> chopped tomatoes<br />
<b>¼ cup</b> white vinegar<br />
<b>1 tsp </b>salt</p>
<p class="p1"><b>METHOD<br />
</b><b>1.</b> Heat ¼ cup oil in a pan and fry onion, garlic, chillies and curry leaf for 3 minutes.<br />
<b>2. </b>In a dry pan, toast the spices for a few seconds until fragrant. Crush with a mortar and pestle.<br />
<b>3. </b>Toss the tomatoes with the garlic mixture, spice mixture, vinegar, salt and remaining oil.</p>

<p class="p1"><b>METHOD<br />
</b><b>For the sambal<br />
</b><b>1. </b>Combine all the ingredients and season with salt to taste. Set aside until ready to serve.<br />
<b>For the grilled fish<br />
</b><b>1.</b> Preheat oven to 180°C. Line 2 baking trays with baking paper.<br />
<b>2.</b> To make the marinade, add the chillies, onions, lemongrass and salt to a food processor. Pulse in your food processor until finely chopped.<br />
<b>3. </b>Add this mixture, along with the oil, to a pan over medium heat. Fry until fragrant. Add the fish sauce, sugar, lime juice and turmeric and cook for another 2 minutes.<br />
<b>4.</b> Lay the fish out on the prepared trays and spread with the marinade. Refrigerate for 30 minutes.<br />
<b>5.</b> Bake for 10–15 minutes, or until cooked through, and serve immediately with the sambal.</p>
