</span><span data-contrast="auto">1¼ cup cranberry juice </span><span data-ccp-props="{}"><br />

</span><span data-contrast="auto">¼ cup sherry or red wine vinegar </span><span data-ccp-props="{}"><br />

<li><span data-contrast="auto">Preheat oven to 200°C. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> Parboil beetroots for about 8 minutes. </span></li>
<li><span data-contrast="auto"> Char onion halves over an open flame until almost blackened. (Alternatively, heat a griddle- or non-stick pan over medium-high heat and dry-fry to get a similar result.) </span></li>
<li><span data-contrast="auto"> Place vegetables in a single layer in a 5–8cm deep dish. Season. </span></li>
<li><span data-contrast="auto"> Whisk together juice, oil, vinegar and honey and pour over vegetables. Season well. </span></li>
<li><span data-contrast="auto"> Roast for 40–45 minutes until tender, but vegetables still have bite. </span></li>
<li><span data-contrast="auto"> Spoon vegetables onto a serving platter, separating onion petals if you like. Set platter aside, keeping warm. </span></li>
<li><span data-contrast="auto"> Reduce cooking liquid on the stove over medium-high heat for about 15 minutes until slightly thickened. </span></li>

<li><span data-contrast="auto"> Place cheese in the centre of platter and scatter tomato mixture around it. </span></li>

<li><span data-contrast="auto"> Place carrots and Brussels sprouts on a baking tray. Drizzle with oil, sprinkle with garlic and season. </span></li>
<li><span data-contrast="auto"> Roast for 10-12 minutes or until cooked through. </span></li>
<li><span data-contrast="auto"> Spread cooked quinoa over two baking trays and roast in the oven, stirring every few minutes until crispy and golden. Cool. </span></li>
<li><span data-contrast="auto"> Combine quinoa, lemon juice and coriander, and season. </span></li>
<li><span data-contrast="auto"> Place spinach on a serving dish and top with quinoa mixture. </span></li>
<li><span data-contrast="auto"> Add roasted carrots and Brussels sprouts, radish and crispy chickpeas. </span></li>
<li><span data-contrast="auto"> Combine dressing ingredients and season to taste. </span></li>

<ol>
<li><span data-contrast="auto"> Preheat oven to 200°C</span></li>
<li><span data-contrast="auto"> Pierce brinjals all over with a fork, place in an oven tray and brush with a li le olive oil and balsamic vinegar. </span></li>
<li><span data-contrast="auto"> Roast for 20-25 minutes, then remove baby brinjals. Set aside. </span></li>
<li><span data-contrast="auto"> Roast the large brinjals for another 20-30 minutes until they look limp and deflated, with almost blackened skin. </span></li>
<li><span data-contrast="auto">Cool large brinjals slightly, then scoop out flesh, discarding seeds. </span></li>
<li><span data-contrast="auto">Blitz large brinjal flesh with olive oil, garlic, tahini, and ground cumin. Season. </span></li>
<li><span data-contrast="auto"> Toss baby brinjals with bulgar wheat, herbs, feta and lemon juice and peel. </span></li>
<li><span data-contrast="auto"> Spread mixture on a platter and scatter with bulgar wheat salad mix, cucumbers, rocket and crimson salad leaves. </span></li>
<li><span data-contrast="auto"> Garnish with spring onion, chilli and sesame seeds just before serving.</span></li>

<h2 style="font-weight: 400;"> 1. Spring salad</h2>

<p style="font-weight: 400;"><strong>INGREDIENTS</strong></p>
<ul>
<li>3 eggs</li>
<li>Half a cup of olive oil</li>
<li>Juice and zest of 1 lemon</li>
<li>1 tsp mustard Salt and black pepper</li>
<li>1 bunch radishes, thinly sliced</li>
<li>1 cucumber, thinly sliced</li>
<li>500 g mangetout</li>
<li>1 bunch fresh mint, roughly chopped</li>
<li>100 g feta, crumbled</li>
</ul>
<p style="font-weight: 400;"><strong>METHOD</strong></p>
<ol>
<li style="font-weight: 400;">Bring a pot of water to the boil. Add the eggs and boil for 1 minute. Remove from the heat, cover and set aside for 4-6 minutes. Drain the eggs and cover with cold water to cool.</li>
<li style="font-weight: 400;">Combine the olive oil, lemon juice and zest, and mustard. Season.</li>
<li style="font-weight: 400;">Toss the radishes, cucumber, mangetout, mint and feta together. Stir in the dressing and set aside for 10-15 minutes.</li>
<li style="font-weight: 400;">Peel the boiled eggs and cut each one in half. Arrange the eggs on top of the salad. Season and serve.</li>

<li>2 tbsp white-wine vinegar</li>

<li>Pinch garlic powder</li>
<li>Add some finely chopped blue cheese to the dressing for extra zing.</li>
</ul>

<ul>
<li>2 baby cos lettuces, quartered</li>
<li>1 cup exotic tomatoes, halved</li>
<li>200 g pancetta, cooked</li>
</ul>
<p style="font-weight: 400;"><strong>METHOD</strong></p>
<p style="font-weight: 400;"><em>For the dressing</em></p>
<ol>
<li style="font-weight: 400;">Whisk together the mayonnaise, buttermilk and milk until smooth.</li>
<li style="font-weight: 400;">Whisk in the vinegar, sugar and garlic powder. Season to taste.</li>
<li style="font-weight: 400;">Chill for serving.</li>
</ol>
<p style="font-weight: 400;"><em>For the salad</em></p>
<ol>
<li style="font-weight: 400;">Arrange all the ingredients on a platter, season with salt and pepper and drizzle with the dressing just before serving.</li>

<li>Half cup walnuts, toasted</li>
<li>2 discs feta, sliced</li>
<li>Half cup chopped spring onions</li>

<li style="font-weight: 400;">Cook barley until tender, 30-45 minutes.</li>
<li style="font-weight: 400;">Mix oil, honey, cumin, cinnamon, salt and pepper in a bowl. Add the barley, mint, raisins and nuts.</li>
<li style="font-weight: 400;">Serve the salad with feta and spring onions.</li>
</ol>
<h2 style="font-weight: 400;"> 4. Loaded lemon and radish salad</h2>
