<p class="p1"><b>INGREDIENTS<br />
</b><b>4</b> eggs<br />
<b>1 tbsp </b>vegetable oil<br />
<b>4</b> <strong>cloves</strong> garlic, peeled and crushed<br />
<b>1 tsp</b> ground ginger<br />
<b>1 L </b>vegetable stock<br />
<b>200 g</b> mushrooms (we used exotic mushrooms, but any sort will be yummy!)<br />
<b>1 tbsp</b> soy sauce<br />
<b>3 cups</b> baby spinach<br />
<b>1</b> carrot, peeled and julienned<br />
<b>2 tbsp</b> chopped spring onions<br />
<b>2 × 70 g</b> packs instant noodles</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Boil the eggs for 6 minutes, then immediately drop into cold water (for a soft yolk).<br />
<b>2. </b>Heat the oil in a large pot over medium heat. Add the garlic and ginger and fry for 2 minutes, until fragrant.<br />
<b>3.</b> Whisk in the stock, then add the mushrooms and soy sauce.<br />
<b>4.</b> Bring to the boil, then reduce the heat and simmer for about 10 minutes, until mushrooms have softened.<br />
<b>5.</b> Stir in the spinach, carrot and spring onions. Add the noodles and simmer for 5 minutes, until al dente.<br />
<b>6. </b>Serve immediately, topped with halved boiled eggs.</p>

</b><b>For the pork belly<br />
</b><b>1.6 kg</b> bone-in pork belly 1.6 kg<br />
<b>For the broth<br />
</b>Pork bones (from the roasted belly)<br />
<b>2 L</b> chicken stock<br />
<b>2</b> carrots, roughly chopped<br />
<strong>Handful</strong> spring onions, roughly chopped<br />
<b>4 cm </b>piece fresh ginger, sliced<br />
<b>4</b> garlic cloves<br />
<b>½ cup</b> soy sauce<br />
<b>2–3 tbsp</b> ponzu, to taste<br />
<b>2 tbsp</b> miso<br />
<b>2 tbsp</b> fish sauce<br />
<b>To serve<br />
</b><b>200 g</b> rice noodles, cooked<br />
<b>4</b> boiled eggs, cooked to preference<br />
<b>2</b> carrots, julienned<br />
<strong>Handful</strong> spring onions, sliced<br />
Sesame seeds</p>
<p class="p1"><b>METHOD<br />
</b><b>For the pork belly<br />
</b><b>1.</b> Preheat oven to 160°C.<br />
<b>2. </b>Rub the pork belly with salt and pepper, then roast for 1½–2 hours, until cooked through. Remove from the oven and leave to cool.<br />
<b>3.</b> Carefully pull the meat from the bones. Refrigerate while you prepare the broth.<br />
<b>For the broth<br />
</b><b>1. </b>Place roasted pork bones in a large pot and add all the remaining broth ingredients. Bring the broth to a boil, then reduce the heat and allow to simmer for 2–3 hours, until golden brown and aromatic. strain, then set aside.<br />
<b>2. </b>Slice the pork belly. Add it to the broth to warm for 5 minutes.<br />
<b>3.</b> To serve, ladle broth into 4 bowls, add the noodles, and top with boiled egg, carrots, spring onions, sesame seeds and a slice of pork belly.</p>

</b><b>4 × 75 g</b> two-minute noodles<br />
<b>2</b> eggs<br />
Vegetable oil, to fry<br />
<b>For the patties<br />
</b><b>800 g</b> beef mince<br />
<b>½ cup</b> chopped coriander<br />
<b>¼ cup</b> soy sauce<br />
<b>¼ cup</b> sesame oil<br />
<b>4 cloves</b> garlic, peeled and chopped<br />
<b>4</b> spring onions, chopped<br />
<b>1 tsp</b> Chinese five-spice<br />
<b>½ tsp</b> chilli powder<br />
Salt and pepper<br />
Vegetable oil, to fry<br />
<b>To serve<br />
</b><b>4 slices</b> cheddar<br />
<b>4</b> eggs, fried<br />
Mayonnaise<br />
<b>¼ cup</b> chopped coriander<br />
<b>2</b> spring onions, chopped</p>
<p class="p3"><span class="s1"><b>METHOD<br />
</b></span><b>For the ‘buns’<br />
</b><b>1.</b> Cook the noodles in salted <span class="s3">boiling water for 3 minutes, </span>then drain.<br />
<b>2.</b> Lightly whisk the eggs, then add to the noodles.<br />
<span class="s4"><b>3.</b> Divide noodles into 8 portions</span> <span class="s3">and place in hamburger-patty moulds or ramekins. Wrap in </span><span class="s4">cling film and place something </span><span class="s3">heavy on top. Refrigerate for </span><span class="s4">10–15 minutes, </span>to set.<br />
<span class="s4"><b>4.</b> Heat a little oil in a non-stick</span><span class="s3"> pan and fry the noodle ‘buns’ </span><span class="s4">for about 5 minutes a side, until</span> cooked through and golden.<br />
<b>For the patties<br />
</b><b>1.</b> Combine all the ingredients (except vegetable oil) and form into 4 patties to fit the buns.<br />
<b>2. </b>Heat a little vegetable oil in a <span class="s4">non-stick pan and fry the patties</span> for about 5 minutes a side, until cooked through and browned.<br />
<b>To serve<br />
</b><span class="s3"><b>1.</b> Top each bun with a patty, </span><span class="s4">cheese, a fried egg, mayonnaise, </span><span class="s3">coriander and spring onions. Sandwich with another bun.</span></p>
