<p class="p1"><b>INGREDIENTS<br />
</b><span class="s1"><b>125 g</b></span> butter, at room temperature<span class="Apple-converted-space"><br />
</span><span class="s1"><b>½</b></span><b> </b><span class="s1"><b>cup</b></span> sugar<br />
<span class="s1"><b>2</b></span> eggs<br />
<span class="s1"><b>½ cup</b></span> plain yoghurt<br />
<span class="s1"><b>2 tsp</b></span> lemon zest <span class="s2"><br />
</span><span class="s1"><b>1</b></span><b> </b><span class="s1"><b>tsp</b></span> vanilla essence<br />
<span class="s1"><b>1</b></span><b> </b><span class="s1"><b>cup</b></span><b> </b>self-raising flour<br />
<b>250 g</b> white chocolate, melted<br />
<b>¼ cup</b> grated coconut</p>
<p class="p1"><b>METHOD<br />
</b><span class="s4"><b>1. </b></span>Cream together butter and sugar until pale and fluffy.<br />
<span class="s4"><b>2. </b></span>Add eggs one at a time, beating well after each one.<br />
<span class="s4"><b>3.</b></span> Mix in the yoghurt and lemon zest.<br />
<span class="s4"><b>4.</b></span> Gently fold in the flour, in a figure-of-eight motion.<br />
<b>5.</b> Pour 1 cup batter into your waffle iron. Place a stick at the base of each waffle. Cook until golden, carefully remove and cool on a wire rack.<br />
<b>2.</b> Dip the top half of each waffle into the chocolate and sprinkle with coconut. Allow to set.</p>
