It can either be laid on baking paper or on a wire rack to allow the fat to run off into an oven tray below. It’s up to you. If doing the latter, @thestayathomechef advises on YouTube to “just line up your bacon so it’s touching but not overlapping”. </b><b>8 </b>chicken pieces<br />
<b>1 cup</b> buttermilk<br />
Juice of <b>½</b> lemon<br />
<b>1½ cups</b> cornflake crumbs<br />
<b>1 tsp</b> dried mixed herbs<br />
<b>½ tsp</b> garlic powder<br />
<b>½ tsp</b> paprika<br />
<b>¼ tsp</b> cayenne pepper<br />
<b>2 tbsp</b> oil</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Preheat oven to 200°C.<br />
<b>2.</b> Place the chicken in a shallow container so that it can all fit in a single layer. Pour over the buttermilk and lemon juice and toss to coat. Cover and allow to marinate in the fridge for 30 minutes.<br />
<b>3.</b> Mix the cornflake crumbs with the herbs, garlic powder, paprika and cayenne pepper.<br />
<b>4. </b>Roll the marinated chicken in the seasoned crumbs, until fully coated.<br />
<b>5. </b>Arrange on a baking tray and drizzle with the olive oil. Bake for 30–35 minutes, until the chicken is cooked through and the coating is crispy.</p>
