<h3><span data-contrast="auto">Method</span><span data-ccp-props="{}"> </span></h3>

<li><span data-contrast="auto"> Preheat oven to 180°C or prepare medium-hot coals on the fire. </span></li>
<li><span data-contrast="auto"> Combine filling ingredients, season and set aside.</span></li>
<li><span data-contrast="auto"> Butterfly the chicken by slicing chicken breast open, keeping one side attached, to create a thinner chicken breast.</span></li>
<li><span data-contrast="auto"> Arrange the chicken on a tray and season well.</span></li>
<li><span data-contrast="auto"> Divide the filling between the chicken breasts making sure to spoon it down the one side of each butterflied fillet. Fold each fillet closed.</span></li>
<li><span data-contrast="auto"> Wrap 3-4 rashers of bacon around each fillet, then heat a pan over medium heat and add oil.</span></li>
<li><span data-contrast="auto">Place fillets seam-side down and fry for about 3-5 minutes or until the bottom is sealed before turning. </span></li>
<li><span data-contrast="auto">Fry for another 3-5 minutes before transferring to a lined</span><br />
<span data-contrast="auto">baking tray.</span></li>
<li><span data-contrast="auto">Roast covered for 20-25 minutes. Remove from oven and set aside</span><br />

<h3><strong>Ingredients </strong></h3>
<p><span data-contrast="auto">3 red onions, cut into wedges</span><br />
<span data-contrast="auto">6 cloves garlic,</span> <span data-contrast="auto">sliced 3 potatoes, cut into wedges </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">Glug canola</span> <span data-contrast="auto">or olive</span> <span data-contrast="auto">oil</span><b><span data-contrast="auto"> </span></b><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">3⁄4 cup (185ml) chicken stock</span><br />

<li><span data-contrast="auto"> Preheat oven to 180°C. </span></li>
<li><span data-contrast="auto"> Place the onions, garlic and potatoes in a baking tray and drizzle with oil.</span></li>
<li><span data-contrast="auto"> Pour over ½ cup (125ml) of stock, season well and toss to coat all vegetables. </span></li>
<li><span data-contrast="auto"> Roast for about 25-30 minutes until potatoes are tender and stock has evaporated, giving it a shake halfway through. </span></li>
<li><span data-contrast="auto"> Add in the plums, sausages and rosemary.</span></li>
<li><span data-contrast="auto"> Mix the vinegar, sugar and remaining stock together, and pour over sausage mixture.</span></li>
<li><span data-contrast="auto"> Season and toss to mix everything well.</span></li>
<li><span data-contrast="auto"> Roast for a further 30 minutes, turning the sausages halfway through. </span></li>
<li><span data-contrast="auto"> Increase heat to 200°C for the last 10 minutes to brown the edges.</span></li>
<li><span data-contrast="auto">Serve sprinkled with the parsley. </span></li>

<h2><span data-contrast="auto">PICK ‘EM RIGHT :</span><span data-ccp-props="{}"> </span></h2>
<ol>
<li><span data-contrast="auto">Look for smooth, plump fruit that has little to no blemishes or dark spots. The fruit should be soft, but not overly squishy.</span></li>
<li><span data-contrast="auto">Not all wrinkles are bad! Wrinkles near the stem area of the fruit is a good indication of sweetness. </span></li>
<li><span data-contrast="auto">Smell it! Nectarines, plums and peaches should have a delicate sweet and fruity aroma. The best test for ripeness is the scent – the fruitier the better!</span></li>
<li><span data-contrast="auto">Buy them ripe and ready if you’re an avid stone fruit eater, or ripen them at home. Simply store on your kitchen counter in a single layer, making sure they’re uncovered and unwashed for at least 3 days. To speed up the ripening process, keep them in a paper bag. </span></li>
<li><span data-contrast="auto">Keeping stone fruit in the fridge before they are fully ripe can often lead to a mealy texture. It’s best to store it in the fridge only after they are fully ripe. </span></li>

<li><span data-contrast="auto"> Cut a cross into the base of each plum and plunge into boiling water. </span></li>
<li><span data-contrast="auto"> Remove with a spoon and peel off the skin. Discard.</span></li>
<li><span data-contrast="auto"> Halve each plum and the stone. </span></li>
<li><span data-contrast="auto"> Line a 12-hole muffin tin with cupcake holders.</span></li>
<li><span data-contrast="auto"> Blitz the plums, syrup (or honey if using), vanilla and yoghurt until smooth. Add more syrup or honey to taste if it’s too tart. </span></li>
<li><span data-contrast="auto"> Divide the mixture between the muffin holes and freeze for 2 hours, or until semi-firm.</span></li>
<li><span data-contrast="auto"> Push a lolly stick into the centre of each mould and freeze until solid. </span></li>

<p class="p1"><b>INGREDIENTS<br />
</b><b>1 tbsp</b> chilli flakes<br />
<b>½ cup</b> balsamic vinegar<br />
<b>1 tbsp</b> brown sugar<br />
<b>2 tsp</b> dried origanum<br />
<b>2 tbsp</b> thyme<br />
<b>4</b> pork chops<br />
<b>3</b> nectarines, sliced<br />
<b>⅓<span class="Apple-converted-space">  </span>cup</b> chopped feta<br />
<b>⅓<span class="Apple-converted-space">  </span>cup</b> basil</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Preheat oven to 250°C.<br />
<b>2. </b>Whisk together the chilli flakes, vinegar, sugar, origanum and thyme.<br />
<b>3.</b> Season the chops well. Heat some oil in a pan over medium-high heat. Brown the pork chops for 5 minutes on each side.<br />
<b>4.</b> Reduce the heat to medium and continue cooking for 8–10 minutes, until cooked through.<br />
<b>5.</b> During the last 2 minutes of cooking, pour the balsamic mixture into the pan.<br />
<b>6.</b> Remove from the heat and add the nectarines.<br />
<b>7. </b>Transfer to the oven for 8 minutes, until the peaches are charred.<br />
<b>8. </b>Top with feta and basil, and serve with the nectarines and the balsamic glaze from the pan drizzled on top.</p>

<p class="p1"><b>INGREDIENTS<br />
</b><b>For the pastry<br />
</b><b>255 g</b> flour<br />
<b style="font-size: 1em;">125 g</b><span style="font-size: 1em;"> cold butter, cubed<br />
</span><b>80 g</b> icing sugar<br />
<b>2</b> egg yolks<br />
<b>1 tbsp</b> ice water<br />
<b>For the filling<br />
</b><b>2</b> eggs<br />
<b>75 g</b> caster sugar<br />
<b>40 g</b> desiccated coconut, plus extra to decorate<br />
<b>35 g</b> flour<br />
<b>75 g</b> butter, melted<br />
<b>450 g (3–4)</b> nectarines, sliced into wedges</p>
<p class="p1"><b>METHOD<br />
</b><b>For the pastry<br />
</b><b>1. </b>Preheat oven to 180°C.<br />
<b>2. </b>Place flour, butter and icing sugar in a food processor and blend until mixture resembles fine breadcrumbs. Add egg yolks and water and blend again until the dough comes together. Turn the dough out and use your hands to form a ball. Wrap in cling film and refrigerate for 15 minutes.<br />
<b>3. </b>Roll out dough on a well-floured surface to about 5 mm thick.<br />
<b>4.</b> Line a 20 cm loose-bottomed tin with the pastry and prick the bottom with a fork. Refrigerate for another 20 minutes.<br />
<b>5.</b> Blind-bake for 15–20 minutes, until golden. Remove from the oven and set aside to cool.<br />
<b>For the filling<br />
</b><b>1.</b> Whisk eggs and sugar until fluffy. Mix in coconut and flour. Fold in the melted butter.<br />
<b>2.</b> Spoon into cooled tart shell and spread evenly. Arrange the nectarine wedges over the filling and sprinkle with extra coconut.<br />
<b>3. </b>Bake for 35–40 minutes, until golden and cooked through.<br />
<b>4. </b>Allow to cool completely before removing from the tin.</p>

<b>For the dressing<br />
</b><b>3 tbsp</b> red wine vinegar<br />
Olive oil, to drizzle</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Drizzle the mielies with 2 tbsp oil and sear in a hot griddle pan until charred. Slice kernels off the cobs.<br />
<b>2. </b>Rub the chicken with the paprika, garlic powder and remaining 2 tbsp oil. Cook in the hot griddle pan for 5 minutes on each side. Cut into chunks.<br />
<b>3. </b>Toss together the corn, chicken, nectarine slices, rocket and basil.<br />
<b>4. </b>Drizzle with red-wine vinegar and olive oil, and season with salt and pepper.</p>

<b>1</b> red onion, peeled and thinly sliced<br />
<b>40 g</b> basil or baby salad leaves<br />
<b>60 ml</b> olive oil<br />
Salt and pepper</p>

</b></span><b>1. </b>Assemble the salad as follows: <span class="s3">Arrange the lettuce at the bottom, </span>then add mozzarella, nectarines and onion.<br />
<b>2.</b> Scatter basil, drizzle <span class="s4">olive oil </span><span class="s5">and season with salt and pepper</span>.</p>
