300g mixed mushrooms<br />
150g pork mince or pork sausage meat<br />

<li><span data-contrast="auto"> Heat a small drizzle of oil in a hot pan over high heat until almost smoking.</span></li>
<li><span data-contrast="auto"> Add mushrooms in 2-3 batches and fry, occasionally pressing down with a spatula (you should hear a squeaking sound) to brown well. <li><span data-contrast="auto"> Add another drizzle of oil in the same pan and stir-fry mince in 2-3 batches. (This is important, as overcrowding will steam mince instead of sear and brown.) Season lightly and continuously move the mince with a spatula, breaking up lumps of meat, until well browned.</span></li>
<li><span data-contrast="auto"> Add grated ginger, garlic, red chillies, soy-, oyster- and fish sauces. Stir-fry until sticky. Add lemon juice and adjust seasoning to taste.</span></li>
<li><span data-contrast="auto"> Toss through the Swiss chard, stirring to wilt, then return mushrooms to reheat.</span></li>
<li><span data-contrast="auto"> Serve stir-fried mince over noodles, topped with spring onion and coriander.</span></li>

<li><span data-contrast="auto">For the baba ganoush, preheat the oven to 180°C. Create 2 foil parcels, each with 2 brinjals a garlic clove. Drizzle with oil, season well and wrap tightly. Bake for 40 minutes. Open the foil packets and bake for another 20 minutes. Remove and set aside.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">For the onion rings, mix flaxseed flour with the water. This will be your “egg wash”. Dip the onion slices in the egg wash, then the flour to form a coating. Dip in flax seeds for a crispier  Fry the onions in 180°C oil for roughly 4-6 minutes, until golden and crispy. Leave in a warm oven until ready to serve.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">For the tomato paste, place all the ingredients in a blender and blend until smooth. Season with salt and pepper.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">To serve, place the brinjals on a plate, break open with a fork and mash the flesh. Season with salt, pepper and olive oil. Top with tomato paste, onion rings and fresh chilli. Enjoy with crackers or bread.</span><span data-ccp-props="{}"> </span></li>

<li><span data-contrast="auto"> In a food processor, pulse the sesame seeds and pepper until ground. Add the flour, butter and salt. Pulse until combined.</span></li>
<li><span data-contrast="auto"> Add the water, 1 Tbsp at a time, until the mixture comes together into a dough.</span></li>
<li><span data-contrast="auto"> Turn out the dough out on a lightly floured surface and knead until smooth. Roll into a ball, wrap in cling film and place in the fridge to rest for 1 hour.</span></li>

<li><span data-contrast="auto"> Melt ¼ cup butter in a pot over low heat. Remove from the heat and mix in flour, mustard, fried garlic, and salt and pepper.</span></li>
<li><span data-contrast="auto"> Return the pot to the heat. Gradually add the milk, stirring, until the sauce is smooth.</span></li>
<li><span data-contrast="auto"> Remove from the heat again and add the cheeses. Mix until melted.</span></li>
<li><span data-contrast="auto"> Heat 3 Tbsp olive oil, another 3 Tbsp butter and thyme in a pan. Add the mushrooms and fry until golden. Mix half the mushrooms into the cheese mixture.</span></li>

<li><span data-contrast="auto"> Heat oil in a deep pan and fry onion and garlic until golden. Add chicken, stock and spices. Boil for 10 minutes, until chicken is cooked through and the stock has reduced.</span></li>
<li><span data-contrast="auto"> Remove the chicken from the pot. Add the flour and cook until the sauce is thickened.</span></li>
<li><span data-contrast="auto"> Remove from the heat and cool, then add eggs and sour cream. Mix well.</span></li>
<li><span data-contrast="auto"> Shred the chicken into small pieces. Add the pulled chicken to the reduced sauce</span></li>

<li><span data-contrast="auto"> Use your fingers to rub the butter, flour and black pepper together until the mixture forms fine crumbs.</span></li>
<li><span data-contrast="auto"> Add the water and bring together until a dough forms.</span></li>
<li><span data-contrast="auto"> Lightly knead into a ball. (Do not overwork, or it will lose its ‘shortness’ or texture.) Wrap in cling film and refrigerate for 30 minutes.</span></li>
<li><span data-contrast="auto"> Preheat oven to 180°C. Grease a square pie tin or casserole dish.</span></li>
<li><span data-contrast="auto"> Roll out the dough on a floured surface to 5mm thick.</span></li>
<li><span data-contrast="auto"> Cut the dough in half. Press one half into the bottom of the pie tin. Roll the leftover dough into a ball and refrigerate. Blind bake the shell for 15 minutes.</span></li>

<li><span data-contrast="auto"> Fry garlic and leeks for 5 minutes. Add the spices, then the beef, tomatoes and stock.</span></li>
<li><span data-contrast="auto"> Roast in the oven for 1 hour, until beef is tender. Pull beef apart and mix with 2 tsp flour.</span></li>
<li><span data-contrast="auto"> Roll out the remaining dough. Spoon the filling into the pastry shell and top with the dough. Crimp the edges with a fork.</span></li>

<li><span data-contrast="auto"> Roll out the dough to 5 mm thick. Cut out a circle a little bigger than the pie tin. Drape it over the tin and press into the sides and base. Crimp the edges.</span></li>

<p>&#8220;I&#8217;m not one to stand in the kitchen for hours &#8211; I&#8217;d rather buy a sauce and have it taste like I made it! Denny&#8217;s sweet and sour sauce really appeals to me. <p>&#8220;When it comes to the mushroom sauce, Lancewood wins hands down. The sauce tastes like mushrooms because it contains mushrooms, and you get the full herby flavour. Knorr was just not up to scratch.&#8221; <em><strong>&#8211; Christi Nortier (Lifestyle Editor)</strong></em></p>
<p>&#8220;Lancewood wins the category. It&#8217;s tough to compare the two because Knorr is a dry mixture and is thus more muted and artificial. <p>The team&#8217;s reactions were passionate about this one! Knorr wins on affordability and shelf life, but Lancewood&#8217;s fresh offering just pushed it to the side. To make a fresh mushroom sauce from scratch would cost more, so Lancewood is the winner!</p>
