<p><span style="font-weight: 400;"><strong>SERVES</strong> 4 // </span><span style="font-weight: 400;"><strong>COOK TIME</strong> 50 min </span></p>
<p><strong>INGREDIENTS</strong><br />
<strong>⅔</strong><span style="font-weight: 400;"><strong> cup</strong> milk</span><br />
<strong>⅔</strong><span style="font-weight: 400;"><strong> cup</strong> cream</span><br />
<span style="font-weight: 400;"><strong>1</strong> cinnamon stick</span><br />
<span style="font-weight: 400;"><strong>1 tsp</strong> vanilla essence</span><br />
<span style="font-weight: 400;"><strong>4</strong> eggs</span><br />
<span style="font-weight: 400;"><strong>½ cup</strong> castor sugar</span><br />
<span style="font-weight: 400;"><strong>¼ cup</strong> flour</span><br />
<span style="font-weight: 400;"><strong>300 g</strong> frozen mixed berries</span><br />
<span style="font-weight: 400;"><strong>2 tsp</strong> icing sugar</span><br />
<span style="font-weight: 400;"><strong>4</strong> scoops vanilla ice cream, </span><span style="font-weight: 400;">to serve</span></p>
<p><strong>METHOD</strong><br />
<span style="font-weight: 400;"><strong>1.</strong> Preheat the oven to 200C. Grease a 1.5-litre ovenproof dish.</span><br />
<span style="font-weight: 400;"><strong>2</strong>. Combine the milk, cream, cinnamon and vanilla in a pot. Bring to the boil over medium heat. Remove from the heat and discard the cinnamon stick.</span><br />
<span style="font-weight: 400;"><strong>3.</strong>  Whisk together the eggs and sugar in a bowl until light and frothy. Whisk in the flour, then gradually pour in the warmed cream mixture, whisking constantly as you pour.</span><br />
<span style="font-weight: 400;"><strong>4.</strong> Sprinkle the berries into the prepared dish. Pour the cream mixture over the berries. Bake the clafoutis for 35 min or until lightly golden and set. </span><br />
<span style="font-weight: 400;"><strong>5.</strong> Dust the clafoutis with sifted icing sugar and serve warm with ice cream.</span></p>
<p><strong>Quick Tip: </strong>Add the zest of one lemon to the clafoutis mixture for a fresh flavour boost.</p>
