A fabulous meat-free dinner to add to your flexitarian menu planning.  </em></p><h3><span data-ccp-props="{}">Ingredients</span></h3><p>Olive oil blend<br />2 onions, chopped<br />4 cloves garlic, sliced<br />5 sun-dried tomatoes in olive oil, sliced (reserving the oil)<br />5 sprigs thyme <br />3 sprigs rosemary or oregano<br />100g tomato paste<br />1-2 tsp chilli flakes(optional) <br />2 cups vegetable or chicken stock<br />1-1½ cups cream<br />Salt and milled pepper<br />2 cans (400g each) butterbeans<br />Lemon<br />Parmesan  <br />Flatbread, toasted ciabatta bread or pasta, for serving </p><h3><span data-ccp-props="{}">Method </span></h3><ol><li><span data-contrast="auto">Heat oil in a large pan over medium heat. </span><span data-ccp-props="{}"> </span></li><li><span data-contrast="auto">Sauté onions for 8-10 minutes until golden. Add garlic and fry for a minute while stirring. </span><span data-ccp-props="{}"> </span></li><li><span data-contrast="auto">Add sun-dried tomatoes, a glug of the sun-dried tomato oil, herbs and tomato paste to the pan. Cook for 1-2 minutes, stirring to break down the paste. </span><span data-ccp-props="{}"> </span></li><li><span data-contrast="auto">Add chilli flakes, stock, cream and seasoning. Stir to combine and simmer for 5 minutes.</span><span data-ccp-props="{}"> </span></li><li><span data-contrast="auto">Add butterbeans and continue cooking for 8-12 minutes until sauce is thick and creamy. Remove from heat</span><span data-ccp-props="{}"> </span></li><li><span data-contrast="auto">Grate lemon zest and Parmesan over just before serving with bread, pasta or any side of your choice to mop up the delicious, creamy sauce. </span><span data-ccp-props="{}"> </span></li></ol><h3><b><span data-contrast="auto">Make it meaty:</span></b><span data-ccp-props="{}"> </span></h3><p><span data-contrast="auto">Swap one can of butterbeans for 2 sliced chicken breast. Start by frying your chicken in a pan and cooking until golden. Remove and continue with the recipe, adding par-cooked chicken with beans. You can also omit beans completely to make the original viral “Marry me chicken” recipe, using 4 chicken breast fillets.</span><span data-ccp-props="{}"> </span></p><p><span data-ccp-props="{}"> </span></p>								</div>

<p><span data-contrast="auto">¼ cup butter, softened </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">1 bulb garlic </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">4-6 slices of crusty bread </span><span data-ccp-props="{}"><br />
</span><span data-contrast="auto">200g grated Cheddar or Gouda </span><span data-ccp-props="{}"> </span><span data-ccp-props="{}"> </span></p>
<h3><b><span data-contrast="auto">Method </span></b><span data-ccp-props="{}"> </span><span data-ccp-props="{}"> </span></h3>
<ol>
<li><span data-contrast="auto">Preheat oven to 200°C. </span></li>
<li><span data-contrast="auto">Place tomatoes and onions on a baking tray, cut side facing up. Drizzle with oil, add seasonings and sugar. </span></li>
<li><span data-contrast="auto">Roast for about 45 minutes until charred and fragrant. Set aside. </span></li>
<li><span data-contrast="auto">Cut the top of garlic bulb off so cloves are just exposed. Drizzle with oil and season. Wrap in foil or baking paper and roast for 35-40 minutes. Cool and reserve for toast. </span></li>
<li><span data-contrast="auto">Heat oil in a pot and sauté sliced 6 cloves of garlic until fragrant, about 2-3 minutes. </span></li>
<li><span data-contrast="auto">Add rosemary and thyme and cook for another minute until fragrant. </span></li>
<li><span data-contrast="auto">Tip in roasted tomato mixture, including pan juices. Add stock and simmer, covered, for 15–20 minutes. </span></li>
<li><span data-contrast="auto">Remove herb stalks, add basil and blend until smooth. Season to taste with the lemon juice.</span></li>
<li><span data-contrast="auto">For the cheesy toasties, squeeze the soft roasted flesh of garlic out. Combine butter and garlic until smooth. </span></li>
<li><span data-contrast="auto">Spread on the outside of each slice of bread. Top half the slices with cheese, then sandwich close. Toast in a hot pan until golden and cheese has melted. </span></li>
<li><span data-contrast="auto">Slice the toastie and serve with hot soup, garnished with basil.</span></li>

<li><span data-contrast="auto"> Heat oil in a pot over medium heat. Add onion and fry for 5 minutes or until soft. Add garlic and ginger and fry for 1 minute.</span></li>
<li><span data-contrast="auto"> Dissolve miso paste in soy sauce and chicken stock, then add to the pot. Bring to the boil, then reduce heat and simmer for 10 minutes.</span></li>
<li><span data-contrast="auto"> Add the broccoli and mushrooms and simmer for a further 10 minutes, until broccoli is tender.</span></li>
<li><span data-contrast="auto"> Remove from the heat and stir in the sprouts and Swiss chard.</span></li>
<li><span data-contrast="auto"> Cook noodles according to packet instructions. Drain and divide between bowls.</span></li>
<li><span data-contrast="auto"> Pour broth over the noodles and top with coriander, spring onion and chilli flakes.</span></li>

<li><span data-contrast="auto"> Chop the beetroot into small pieces and add them to the pot along with the ginger. Fry for an additional 5 minutes.</span></li>
<li><span data-contrast="auto"> Add the vegetable stock and bring to the boil, then reduce the heat and simmer for 35 minutes until the beetroot is tender.</span></li>
<li><span data-contrast="auto">Using a hand blender, blend the soup until smooth. Slowly pour in the coconut cream and blend again.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto"> To make the croutons, coat the bread in olive oil. Place on the baking tray and bake for 10 minutes. Toss halfway through.</span></li>

<li><span data-contrast="auto"> Drizzle the garlic with 1 Tbsp oil and wrap in foil. Toss carrots with 1 Tbsp butter, thyme, salt and pepper. Place the garlic and carrots in a roasting tin and roast for 30 minutes.</span></li>
<li><span data-contrast="auto"> Heat remaining oil and butter in a large pot. Fry the shallots for 5 minutes.</span></li>
<li><span data-contrast="auto"> Add the lemon zest, ginger, turmeric and chilli. Cook, stirring, until fragrant. Add the stock and lentils, and stir well.</span></li>
<li><span data-contrast="auto"> Unwrap the roast garlic and squeeze it out of its skin. Add it to the pot, along with half the carrots. Bring to the boil, then reduce to a simmer and cook for 10 minutes.</span></li>
<li><span data-contrast="auto"> Add lemon juice and coconut cream. Blend soup until smooth.</span></li>
<li><span data-contrast="auto"> Serve your red lentil soup topped with remaining roasted carrots, sunflower seeds and micro rocket.</span></li>

<li><span data-contrast="auto"> In a food processor, pulse the sesame seeds and pepper until ground. Add the flour, butter and salt. Pulse until combined.</span></li>
<li><span data-contrast="auto"> Add the water, 1 tbsp at a time, until the mixture comes together into a dough.</span></li>
<li><span data-contrast="auto"> Turn out the dough on to a lightly floured surface and knead until smooth. Roll into a ball, wrap in cling film and place in the fridge to rest for 1 hour.</span></li>
</ol>
<p><i><span data-contrast="auto">For the mushroom pie filling</span></i><span data-ccp-props="{}"> </span></p>

<li><span data-contrast="auto"> Heat 1 tsp butter and fry the garlic until golden.</span></li>
<li><span data-contrast="auto"> Melt 4 Tbsp butter in a pot over low heat. Remove from the heat and mix in flour, mustard, fried garlic, and salt and pepper.</span></li>
<li><span data-contrast="auto"> Return the pot to the heat. Gradually add the milk, stirring, until the sauce is smooth.</span></li>
<li><span data-contrast="auto"> Remove from the heat again and add the cheeses. Mix until they melt.</span></li>
<li><span data-contrast="auto"> Heat 3 tbsp olive oil, another 3 tbsp butter and the thyme in a pan. Add the mushrooms and fry until they are golden. Mix half the mushrooms into the cheese mixture.</span></li>
</ol>

<li><span data-contrast="auto"> Preheat oven to 180°C and grease a 23 cm baking tin.</span></li>
<li><span data-contrast="auto"> Cut the ball of pastry in half. On a floured surface, roll out half to fit the tin. Press it into the tin and blind bake it for 10 minutes.</span></li>
<li><span data-contrast="auto"> Pour the cheese filling into the pastry case. Top with the remaining mushrooms.</span></li>
<li><span data-contrast="auto"> Roll out the rest of the pastry and cut into 1 cm strips. Lay out all the horizontal strips on top of the pie first. Fold half of them back on themselves. Working from the middle of the pie out, lay down a vertical strip, then weave it in.</span></li>
<li><span data-contrast="auto"> Brush the pastry lattice with egg and bake for 40 minutes, until golden.</span></li>

<li><span data-contrast="auto"> Place all ingredients, except the chocolate chips and sea salt, in a food processor. Blend until smooth. Stir in chocolate chips with a wooden spoon.</span></li>
<li><span data-contrast="auto"> Pour the batter into the tin and spread evenly. Sprinkle with chocolate chips and sea salt.</span></li>

<li><span data-contrast="auto"> Beat the eggs in a bowl, then stir in the breadcrumbs, milk, mayonnaise, mint, half of the grated cheese and the cumin. Stir in the cauliflower and peas, and season with salt and pepper.</span></li>
<li><span data-contrast="auto"> Grease a non-stick, ovenproof pan and pour in the mixture. Top with the rest of the cheese.</span></li>
<li><span data-contrast="auto"> Preheat the grill. Cook over low heat for 10–15 minutes until almost set.</span></li>

<li><span data-contrast="auto"> Mix the spinach with the feta and divide it between the pastry cases. Place the filling on one side and fold over to create a half-moon, pressing the edges down to seal. Freeze.</span></li>

<li><span data-contrast="auto"> In a food processor, pulse the sesame seeds and pepper until ground. Add the flour, butter and salt. Pulse until combined.</span></li>
<li><span data-contrast="auto"> Add the water, 1 Tbsp at a time, until the mixture comes together into a dough.</span></li>
<li><span data-contrast="auto"> Turn out the dough out on a lightly floured surface and knead until smooth. Roll into a ball, wrap in cling film and place in the fridge to rest for 1 hour.</span></li>

<p><i><span data-contrast="auto">For the mushroom pie filling</span></i><span data-ccp-props="{}"> </span></p>

<li><span data-contrast="auto"> Heat 1 tsp butter and fry the garlic until golden.</span></li>
<li><span data-contrast="auto"> Melt ¼ cup butter in a pot over low heat. Remove from the heat and mix in flour, mustard, fried garlic, and salt and pepper.</span></li>
<li><span data-contrast="auto"> Return the pot to the heat. Gradually add the milk, stirring, until the sauce is smooth.</span></li>
<li><span data-contrast="auto"> Remove from the heat again and add the cheeses. Mix until melted.</span></li>
<li><span data-contrast="auto"> Heat 3 Tbsp olive oil, another 3 Tbsp butter and thyme in a pan. Add the mushrooms and fry until golden. Mix half the mushrooms into the cheese mixture.</span></li>

<li><span data-contrast="auto"> Cut the ball of pastry in half. On a floured surface, roll out half to fit the tin. Press it into the tin and blind bake it for 10 minutes.</span></li>
<li><span data-contrast="auto"> Pour the cheese filling into the pastry case. Top with the remaining mushrooms.</span></li>
<li><span data-contrast="auto"> Roll out the rest of the pastry and cut into 1cm strips. Lay out all the horizontal strips on top of the pie first. Fold half of them back on themselves. Working from the middle of the pie out, lay down a vertical strip, then weave it in.</span></li>

<h3><b><span data-contrast="auto">Method</span></b><span data-ccp-props="{}"> </span><span data-ccp-props="{}"> </span></h3>
<ol>
<li><span data-contrast="auto"> Mix flour and icing sugar. Rub in the butter with your fingertips until the mixture forms fine crumbs.</span></li>
<li><span data-contrast="auto"> Add water and mix until a dough forms. Knead lightly to form a ball. Wrap in cling film and refrigerate for 30 minutes.</span></li>
<li><span data-contrast="auto"> Preheat oven to 180°C and set out a pie tin.</span></li>
<li><span data-contrast="auto"> Roll out the dough to 5 mm thick. Cut out a circle a little bigger than the pie tin. Drape it over the tin and press into the sides and base. Crimp the edges.</span></li>
<li><span data-contrast="auto"> Roll the remaining dough into a ball and return it to the fridge.</span></li>
<li><span data-contrast="auto"> Mix all the filling ingredients and spoon into the pie shell.</span></li>
<li><span data-contrast="auto"> Roll out the remaining dough and cut it into 5 strips.</span></li>
<li><span data-contrast="auto"> Lay 3 strips across the pie and weave the other 2 strips through them. Trim any excess dough and crimp the edges.</span></li>
<li><span data-contrast="auto"> Brush the top of the pie with egg and sprinkle with sugar. Bake for 50–60 minutes, until the pastry is golden.</span></li>
