<h3>Method</h3>
<p><span data-contrast="auto">1. Heat oil in a large pot and add onions.<br />
</span><span data-contrast="auto">2. Fry onions over a medium-low heat for about 15–20 minutes, stirring often until golden brown.<br />
</span>3. Reduce heat and add butter, thyme and bay leaves. Cook for another 3–5 minutes.<br />
4. Sprinkle sugar over the onions and allow to melt for about 5 minutes. Do not stir in the sugar.<br />
5. Increase the heat and allow the sugar to caramelise and the onions to develop a deep golden colour. This should take about 5 minutes.<br />
6. Add the balsamic vinegar and give it a stir.<br />
7. Reduce heat and simmer for 5–6 minutes or until mixture becomes sticky.<br />
8. Remove the herbs and discard. Season onion marmalade to taste.</p>

<p class="p1"><b>INGREDIENTS<br />
</b><b>1.2 kg</b> oranges, scrubbed, halved, sliced crossways and pips removed<br />
<b>2 L</b> water<br />
<b>1</b> lemon, juiced<br />
<b>1</b> cinnamon stick<br />
<b>1</b> clove<br />
<b>1 </b>star anise<br />
<b>±1.6 kg</b> sugar</p>
<p class="p1"><b>METHOD<br />
</b><b>1.</b> Place oranges and water in a glass bowl. Cover with cling film and leave overnight.<br />
<b>2. </b>Transfer to a pot. Add lemon juice, cinnamon, clove and star anise. Bring to the boil.<br />
<b>3. </b>Simmer for 1 hour or until reduced by . Remove cinnamon stick, clove and star anise.<br />
<b>4.</b> Cool slightly. Add 1 cup sugar per cup of orange mixture. Stir until the sugar dissolves.<br />
<b>5.</b> Bring to the boil and cook for 45 minutes. Spoon into sterilised jars and seal.</p>

<b>400 g</b> baby rainbow carrots<br />
<b>¾ cup</b> orange juice<br />
<b>2 tbsp</b> brown sugar<br />
Salt and black pepper</p>
<p class="p1"><b>METHOD<br />
</b><b>For the candied pecans<br />
</b><b>1. </b>Preheat oven to 180°C. Line a baking tray with baking paper.<br />
<b>2. </b>Place the sugar and water in a pot over high heat and simmer until the sugar has dissolved, 5–10 minutes. Remove from the heat and allow to cool.<br />
<b>3. </b>Add the pecans to the syrup. Let them soak for 5 minutes, then remove and spread out on the baking tray. Roast for 8 minutes.<br />
<b>4.</b> Remove the nuts from the oven and allow to cool; they should turn crispy as they do so.<br />
<b>For the carrots<br />
</b><b>1.</b> Melt the butter in a large pot over medium-high heat. Stir in the marmalade, then add carrots, orange juice, sugar, and salt and pepper.<br />
<b>2.</b> Bring the marmalade mixture to a boil, then cover and reduce the heat to medium-low. Simmer, stirring occasionally, until carrots are almost tender, about 15 minutes. Remove the carrots from the pan.<br />
<b>3.</b> Increase the heat to medium-high and cook the liquid for 8–10 minutes, until reduced to a glaze.<br />
<b>4.</b> Place the carrots on a serving platter, drizzle with the marmalade glaze and sprinkle with the candied pecans.</p>
