<li><span data-contrast="auto">For the baba ganoush, preheat the oven to 180°C. Create 2 foil parcels, each with 2 brinjals a garlic clove. Drizzle with oil, season well and wrap tightly. Bake for 40 minutes. Open the foil packets and bake for another 20 minutes. Remove and set aside.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">For the onion rings, mix flaxseed flour with the water. This will be your “egg wash”. Dip the onion slices in the egg wash, then the flour to form a coating. Dip in flax seeds for a crispier  Fry the onions in 180°C oil for roughly 4-6 minutes, until golden and crispy. Leave in a warm oven until ready to serve.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">For the tomato paste, place all the ingredients in a blender and blend until smooth. Season with salt and pepper.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">To serve, place the brinjals on a plate, break open with a fork and mash the flesh. Season with salt, pepper and olive oil. Top with tomato paste, onion rings and fresh chilli. Enjoy with crackers or bread.</span><span data-ccp-props="{}"> </span></li>

<li><span data-contrast="auto">Add garlic, herbs and ¾ of the cauliflower and fry for 1 minute. </span></li>
<li><span data-contrast="auto">Pourin milk and cream, then simmer gently for about 10-15 minutes or until liquid is reduced by half. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Mash cauliflower to create a sauce and stir through the cheese. </span><span data-ccp-props="{}"> </span></li>

<li><span data-contrast="auto"> Preheat oven to 220°C. Grease and line a loaf tin.</span></li>
<li><span data-contrast="auto"> Discard cauliflower leaves. Chop florets into chunks. Pulse in a food processor until it resembles rice.</span></li>
<li><span data-contrast="auto"> Add remaining ingredients, except the cheddar and avocado, and blend.</span></li>
<li><span data-contrast="auto"> Spoon the mixture into the loaf tin, smooth out the top and sprinkle with both cheeses.</span></li>
<li><span data-contrast="auto"> Bake for 10 minutes at 220°C, then decrease the temperature to 180°C and bake for another 45–50 minutes, until a skewer comes out clean.</span></li>

<li><span data-contrast="auto"> Carefully heat the oil in a pan over medium heat until smoking. Remove from the heat and allow to cool for 1 minute. Stir in the chilli flakes and chilli and set aside to infuse. </span></li>
<li><span data-contrast="auto"> While the oil is infusing, steam the cauliflower for 4 minutes. </span></li>
<li><span data-contrast="auto"> Mix the breadcrumbs and Moroccan spice together.</span></li>
<li><span data-contrast="auto"> Dip cauliflower into the beaten egg and then into breadcrumbs. Once evenly coated, place on the prepared tray. Bake for about 10 min, until golden brown. </span></li>
<li><span data-contrast="auto"> Mix the syrup into the chilli oil. Drizzle half over the crispy cauliflower and toss to coat. Add more if needed.</span></li>

<li><span data-contrast="auto"> Heat 2 Tbsp olive oil in a large pot over medium heat. Fry the onion for 5 minutes, until translucent. Add the garlic and 1 chopped chili, and fry for 1–2 minutes, until fragrant.</span></li>
<li><span data-contrast="auto"> Add the chopped cauliflower and vegetable stock. Bring to a simmer, then reduce the heat to low, cover the pot and simmer for 20 minutes, until the cauliflower is tender.</span></li>
<li><span data-contrast="auto"> Heat a drop of oil in a pan and fry the reserved cauliflower florets for a few minutes, until they are slightly charred.</span></li>
<li><span data-contrast="auto"> To make the chili oil, place the remaining olive oil and chilies in a pan over medium heat. Fry until chilies are slightly browned. Pour the oil out of the pan and allow to cool down.</span></li>
<li><span data-contrast="auto"> Purée the soup with a stick blender. Add the coconut cream and season with salt and pepper.</span></li>
<li><span data-contrast="auto"> Serve with charred cauliflower florets, toasted coconut flakes and a drizzle of chili oil.</span></li>

<h3><b><span data-contrast="auto">Method </span></b><span data-ccp-props="{}"> </span></h3>
<ol>
<li><span data-contrast="auto">Preheat oven to 200°C. </span></li>
<li><span data-contrast="auto">Heat butter and oil in a pan and sauté the onion until golden. </span></li>
<li><span data-contrast="auto">Add garlic, herbs and ¾ of the cauliflower and fry for 1 minute. </span></li>
<li><span data-contrast="auto">Pour in milk and cream, then simmer gently for about 10-15 minutes or until liquid is reduced by half. </span></li>
<li><span data-contrast="auto">Mash cauliflower to create a sauce and stir through the cheese. </span></li>
<li><span data-contrast="auto">Toss pasta through sauce and transfer into a greased ovenproof dish. </span></li>
<li><span data-contrast="auto">Top with tomatoes and bake for 15-20 minutes or until golden and cheese has melted.</span></li>

</span><b>1</b> carrot, diced<br />
<b>1 cup </b>diced butternut (±140 g)<br />
<b>1 cup</b> coconut milk<br />
<b>3 tbsp</b> coconut oil<br />
<b>1 tsp</b> paprika<br />
<b>½ tsp</b> cayenne pepper<br />
<b>1</b> clove garlic, crushed<br />
<b>300 g</b> wholewheat fusilli, cooked</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Place potato, carrot and butternut in a pot. Fill with water until the vegetables are just covered. Simmer until they are tender.<br />
<b>2. </b>Add all the remaining ingredients, except pasta. Simmer for 5 minutes.<br />
<b>3. </b>Blend the mixture until smooth; season with salt and pepper. Return to the pot and simmer for 20–30 minutes, until thickened.<br />
<b>4. </b>Stir the cooked fusilli through the sauce and serve.</p>

</b></span><b>85g</b> butter<br />
<b>⅓ cup</b> flour<br />
<b>1L</b> milk<br />
<b>200g</b> mature cheddar, grated<br />
Salt and pepper<br />
<b>250g</b> brown mushrooms, sliced<br />
Olive oil, to fry<br />
<b>1 tsp</b> smoked paprika<br />
<b>1 tsp</b> chopped thyme<br />
<b>500g</b> macaroni, cooked as per packet instructions<br />
<b>2</b> eggs<br />
<b>1 tbsp</b> chopped parsley</p>
<p class="p4"><span class="s2"><b>METHOD<br />
</b></span><b>1.</b> Preheat oven to 200°C.<br />
<b>2.</b> Place the butter and flour <span class="s3">in a pot. Cook for about 2 minutes,</span> whisking constantly. <span class="s3">Add the milk slowly, while whisking.<br />
</span><b>3.</b> Simmer the sauce over low heat until it thickens. Add two-thirds<span class="s3"> of the cheese and season </span>well with salt and pepper.<br />
<span class="s3"><b>4.</b> </span>Fry mushrooms in oil until <span class="s4">browned, 10 minutes. Season</span><span class="s3"> well and add paprika and thyme.<br />
</span><b>5.</b> Stir the mushrooms through the cooked pasta, along with the white sauce, eggs and parsley.<br />
<span class="s3"><b>6.</b> Spoon into an ovenproof dish, </span><span class="s4">top with the remaining cheese </span>and bake for 20–30 minutes.</p>

</b></span><b>4 packets</b> mushroom-flavoured two-minute noodles<br />
<b>1½ cups</b> milk<br />
<b>1 cup</b> cream<br />
<b>3 tbsp</b> flour<br />
<b>200g</b> cheddar, grated<br />
<b>½ cup</b> breadcrumbs</p>
<p class="p3"><span class="s2"><b>METHOD<br />
</b></span><b>1.</b> Preheat oven to 180°C and grease a 20 × 20 cm ovenproof baking dish.<br />
<b>2.</b> Boil the noodles with the <span class="s3">mushroom seasoning </span>in a large pot <span class="s3">for</span> <span class="s4">about 2 minutes, until cooked. </span>Drain, but don’t rinse. Set aside.<br />
<b>3.</b> Whisk together milk, cream and flour in a bowl. Add half of the cheese.<br />
<b>4.</b> Add in the noodles, then pour <span class="s5">the mixture into the baking dish</span>.<br />
<span class="s3"><b>5.</b> Mix the remaining cheese with </span><span class="s6">the breadcrumbs and sprinkle </span>over the noodles.<br />
<span class="s3"><b>6.</b> Bake uncovered until the sauce</span> <span class="s3">bubbles and the cheese is golden</span>, about 20 minutes.<br />
<b>7.</b> Remove from oven and leave to stand for 10 minutes. Serve.</p>

<b>200g</b> cheddar, grated<br />
Salt and pepper<br />
<b>½</b> broccoli, broken into florets<br />
<b>500g</b> macaroni, cooked as per packet instructions</p>
<p class="p1"><b>METHOD<br />
</b><b>1.</b> Preheat oven to 200°C.<br />
<b>2.</b> Melt the butter in a large pot over medium heat, then whisk in the flour and garlic. Fry for 1 minute then remove from the heat and whisk in the milk slowly, a little at a time.<br />
<b>3.</b> Return the pot to the heat, stirring constantly until the mixture begins to thicken. Turn off the heat when it starts to bubble. Stir in the mustard and 150g of the cheese, and season.<br />
<b>4.</b> Bring a pot of water to the boil. Add the broccoli and cook for 2 minutes.<br />
<b>5.</b> Toss the macaroni with the cheese sauce, then spoon it into a large oven dish. Stud with the broccoli florets and sprinkle with the remaining cheese. Bake for 10 minutes until golden and bubbling. Season with pepper and serve warm.</p>
