<p class="p1"><b>INGREDIENTS<br />
</b><b>For the broth<br />
</b><b>1 L</b> chicken stock<br />
<b>5 cm</b> piece ginger, cut into matchsticks<br />
<b>1</b> stalk lemon grass, bashed<br />
<b>For the chicken<br />
</b><b>2</b> chicken breasts<br />
<b>1 </b>egg, whisked<br />
<b>1/4 cup</b> sesame seeds<br />
<b>1 tbsp</b> sesame oil<br />
<b>To serve<br />
</b><b>1 cup</b> bulgar wheat, cooked<br />
<strong>Handful</strong> baby pak choi<br />
<b>3</b> mini spring onions, sliced</p>
<p class="p1"><b>METHOD<br />
</b><b>For the broth<br />
</b><b>1.</b> Bring the chicken stock to a rapid boil, then add the ginger and lemon grass. Boil for 10 minutes.<br />
<b>For the chicken<br />
</b><b>1. </b>Dip the chicken breasts in the egg and then in the sesame seeds.<br />
<b>2. </b>Heat the sesame oil and fry the chicken for 5–7 minutes on each side, until golden and cooked through.<br />
<b>3. </b>Slice and set aside.<br />
<b>To serve<br />
</b><b>1.</b> Spoon the bulgar wheat into bowls and ladle in some of the broth.<br />
<b>2.</b> Add chicken, baby pak choi and spring onions.</p>
