<li><span data-contrast="auto"> In a food processor, pulse the sesame seeds and pepper until ground. Add the flour, butter and salt. Pulse until combined.</span></li>
<li><span data-contrast="auto"> Add the water, 1 Tbsp at a time, until the mixture comes together into a dough.</span></li>
<li><span data-contrast="auto"> Turn out the dough out on a lightly floured surface and knead until smooth. Roll into a ball, wrap in cling film and place in the fridge to rest for 1 hour.</span></li>

<li><span data-contrast="auto"> Heat 1 tsp butter and fry the garlic until golden.</span></li>
<li><span data-contrast="auto"> Melt ¼ cup butter in a pot over low heat. Remove from the heat and mix in flour, mustard, fried garlic, and salt and pepper.</span></li>
<li><span data-contrast="auto"> Return the pot to the heat. Gradually add the milk, stirring, until the sauce is smooth.</span></li>
<li><span data-contrast="auto"> Remove from the heat again and add the cheeses. Mix until melted.</span></li>
<li><span data-contrast="auto"> Heat 3 Tbsp olive oil, another 3 Tbsp butter and thyme in a pan. Add the mushrooms and fry until golden. Mix half the mushrooms into the cheese mixture.</span></li>

<li><span data-contrast="auto"> Cut the ball of pastry in half. On a floured surface, roll out half to fit the tin. Press it into the tin and blind bake it for 10 minutes.</span></li>
<li><span data-contrast="auto"> Pour the cheese filling into the pastry case. Top with the remaining mushrooms.</span></li>
<li><span data-contrast="auto"> Roll out the rest of the pastry and cut into 1cm strips. Lay out all the horizontal strips on top of the pie first. Fold half of them back on themselves. Working from the middle of the pie out, lay down a vertical strip, then weave it in.</span></li>

<li><span data-contrast="auto"> Tip mixture onto a plate and chill in the fridge for 15 minutes. </span></li>
<li><span data-contrast="auto"> Preheat oven to 180°C. </span></li>
<li><span data-contrast="auto"> Roll pastry out onto a lightly floured surface to make a rectangle of about 50cm in length. Brush edges with egg yolk. </span></li>
<li><span data-contrast="auto"> Mix cheese through cooled vegetables and spoon along the length of one half of the pastry. </span></li>
<li><span data-contrast="auto"> Fold over pastry to cover filling and crimp edges to seal. </span></li>
<li><span data-contrast="auto"> Shape log into a ring and seal two ends together. Place onto a greased and lined baking tray. </span></li>

<li><span data-contrast="auto"> Heat oil and butter in a large 6-8L pot. </span></li>
<li><span data-contrast="auto"> Fry leeks, thyme and garlic for 5 minutes or until softened. </span></li>
<li><span data-contrast="auto"> Add potatoes, stock, water, salt and pepper. Simmer for 20-25 minutes or until potatoes are soft. </span></li>
<li><span data-contrast="auto"> Add cream and simmer gently for 10 minutes. </span></li>
<li><span data-contrast="auto"> Toss cauliflower with olive oil and roast for 25-30 minutes or until golden. </span></li>
<li><span data-contrast="auto"> Remove thyme and blitz soup with a stick blender until smooth. </span></li>
<li><span data-contrast="auto"> Toast pumpkin seeds, almonds and hazelnuts in a dry pan until fragrant. Remove and chop finely. </span></li>

<li><span data-contrast="auto"> Season lamb well and heat oil in a large pot. Brown meat in batches, remove and set aside. </span></li>
<li><span data-contrast="auto"> Add blitzed vegetables to pot and sauté. Add a glug of olive oil if needed. </span></li>
<li><span data-contrast="auto"> Add garlic and fry for 1-2 minutes. </span></li>
<li><span data-contrast="auto"> Stir in tomato paste, harissa paste, spices and bay leaves. Fry until fragrant. </span></li>

<li><span data-contrast="auto"> Heat oil and butter in a large 6-8L pot. </span></li>
<li><span data-contrast="auto"> Fry leeks, thyme and garlic for 5 minutes or until softened. </span></li>
<li><span data-contrast="auto"> Add potatoes, stock, water, salt and pepper. Simmer for 20-25 minutes or until potatoes are soft. </span></li>
<li><span data-contrast="auto"> Add cream and simmer gently for 10 minutes. </span></li>
<li><span data-contrast="auto"> Toss cauliflower with olive oil and roast for 25-30 minutes or until golden. </span></li>
<li><span data-contrast="auto"> Remove thyme and blitz soup with a stick blender until smooth. </span></li>
<li><span data-contrast="auto"> Toast pumpkin seeds, almonds and hazelnuts in a dry pan until fragrant. Remove and chop finely. </span></li>

<li><span data-contrast="auto"> Add garlic, bay leaves and thyme and fry for 1-2 minutes. </span></li>
<li><span data-contrast="auto"> Increase heat and stir in tomato paste, Worcestershire sauce, sugar and paprika and cook until sticky. </span></li>
<li><span data-contrast="auto"> Add white wine, if using, and cook for 2-3 minutes. </span></li>

<p><span data-contrast="auto">It all started as a way to keep the blues away. Trish van der Nest launched a weekly cook-off between herself, her husband and four adult children during the 2020 lockdown. The teams were judged on their table settings and food according to a theme. The result? </span><span data-ccp-props="{}"> </span></p>
<p><span data-contrast="auto">Huge laughter, showstopper meals and a reason to look back on that frightening time with at least a bit of warmth. During that period, lawyer and homeopath Trish wrote not one but two cookbooks. </span><span data-ccp-props="{}"> </span></p>
<p><span data-contrast="auto">A friend of Trish’s commented on her first book, Home Food, that he was grateful that the recipes that made his life so full have been preserved and shared. Aren’t we lucky to have a second volume, and perhaps we should take a leaf out of her book and remember to jot some of our own recipes down&#8230; </span><span data-ccp-props="{}"> </span></p>

<li><span data-contrast="auto"> Steam the cauliflower until just tender. Place in a blender or food processor and process until smooth. Add half the grated Parmesan and mozzarella and process until combined. (Don’t add salt, as the Parmesan is salty enough). Set aside. </span></li>
<li><span data-contrast="auto"> Heat the olive oil in a pan on medium, and stir-fry the leeks until soft. </span></li>
<li><span data-contrast="auto"> Arrange the salmon and leeks in an ovenproof dish and season to taste. Spoon over the crème fraîche and pour over the cream. </span></li>
<li><span data-contrast="auto"> Spoon over the cauliflower mash, spreading it to the edges of the dish. Sprinkle with the remaining Parmesan and mozzarella. </span></li>
<li><span data-contrast="auto"> Bake in a preheated oven at 180°C for 20 minutes, until the salmon is cooked and the cauliflower mash is golden. Scatter over some chopped dill or leafy herbs before serving.</span></li>

<p><strong>FOR THE CARAMEL  </strong></p>

</span><span data-contrast="auto">¼ cup <strong>water </strong></span><span data-ccp-props="{}"><strong> </strong><br />
</span><span data-contrast="auto">¼ tsp <strong>cream of tartar </strong></span><strong> </strong></p>

<p><strong>FOR THE CUSTARD  </strong></p>
<p><span data-contrast="auto">2 cups (500 ml) <strong>milk </strong></span><span data-ccp-props="{}"><strong> </strong><br />
</span><span data-contrast="auto">1 tsp <strong>vanilla past</strong>e or the seeds of </span> <span data-contrast="auto">1 <strong>vanilla pod </strong></span><span data-ccp-props="{}"><strong> </strong><br />
</span><span data-contrast="auto">3 <strong>eggs</strong> plus</span><span data-ccp-props="{}"> </span><span data-contrast="auto">2 <strong>egg yolks </strong></span><span data-ccp-props="{}"><strong> </strong><br />
</span><span data-contrast="auto">¼ cup <strong>castor sugar </strong></span><strong> </strong></p>

<h3>Method</h3>
<p><strong>FOR THE CARAMEL  </strong></p>
<ol>
<li><span data-contrast="auto"> Place the sugar and water in a small saucepan and bring to the boil, stirring, until the sugar dissolves. As it comes to the boil, add the cream of tartar. </span></li>
<li><span data-contrast="auto"> When the caramel starts to turn golden-brown, remove from the heat. </span></li>
<li><span data-contrast="auto"> Spray a mould or baking dish with non-stick cooking spray. Carefully pour the caramel into the mould, swirling it around so the caramel forms a thin, even layer on the base, then turn it upside down and let any excess caramel drain away onto baking paper. Take care, as the caramel will be extremely hot. (This can be done up to a day ahead). </span></li>

<p><span data-ccp-props="{}"> </span></p>
<p><strong>FOR THE CUSTARD  </strong></p>
<ol>
<li><span data-contrast="auto"> Place the milk in a pot and bring almost to the boil, then remove from the heat and stir in the vanilla paste or seeds. </span></li>
<li><span data-contrast="auto"> Combine the eggs, egg yolks and sugar in a bowl. Beat until thick. Pour the warm milk into the egg mixture and stir through. Strain the custard through a fine sieve into the mould. </span></li>
<li><span data-contrast="auto"> Stand the mould in a deep roasting pan and pour in enough water to come half-way up the sides. </span></li>
<li><span data-contrast="auto"> Bake in a preheated oven at 180°C for 1 hour, or until just set. Remove the mould from the water bath, place on a tray and chill in the fridge for at least 3 hours, or up to a day. </span></li>
<li><span data-contrast="auto"> To release the crème caramel, run a sharp knife around the edge of the custard, then dip the base of the mould in hot water. </span></li>
<li><span data-contrast="auto"> Cover the mould with a serving plate and invert it, then carefully remove the mould, allowing any extra caramel to drizzle over the top of the custard. </span></li>

<ul>
<li><span data-contrast="auto"> To make individual crème caramels, use ramekins or small moulds. </span></li>
<li><span data-contrast="auto"> Instead of castor sugar, you can use xylitol castor sugar or a baking sugar </span>alternative (a finely textured blend that is ideal for baking).<span data-ccp-props="{}"> </span></li>

<p class="p1"><b>SERVES</b> 6–8 <b>// COOKING TIME </b>2 hours 10 min</p>
<p class="p1"><b>INGREDIENTS<br />
</b><b>For the black pepper shortcrust pastry<br />
</b><b>290 g</b> butter, cubed<br />
<b>4 cups</b> flour<br />
<b>2 tsp</b> cracked black pepper<br />
<b>¾ cup</b> cold water<br />
<b>1</b> egg, whisked<br />
<b>For the beef and leek pie filling<br />
</b><b>2 tbsp</b> butter, for frying<br />
<b>1 </b>garlic clove, crushed<br />
<b>5</b> leeks, finely chopped<br />
<b>1 tbsp</b> grated ginger<br />
<b>½ tsp</b> allspice<br />
<b>½ tsp</b> nutmeg<br />
<b>½ tsp</b> cinnamon<br />
<b>½ tsp</b> cardamom<br />
<b>500 g</b> beef chuck, cubed<br />
<b>400 g tin</b> chopped tomatoes<br />
<b>2 cups</b> beef stock</p>
<p class="p1"><b>METHOD<br />
</b><b>For the black pepper shortcrust pastry<br />
</b><b>1. </b>Use your fingers to rub the butter, flour and black pepper together until the mixture forms fine crumbs.<br />
<b>2.</b> Add the water and bring together until a dough forms.<br />
<b>3.</b> Lightly knead into a ball. (Do not overwork, or it will lose its ‘shortness’.) Wrap in cling film and refrigerate for 30 minutes.<br />
<b>4. </b>Preheat oven to 180°C. Grease a square pie tin or casserole dish.<br />
<b>5. </b>Roll out the dough on a floured surface to 5 mm thick.<br />
<b>6.</b> Cut the dough in half. Press one half into the bottom of the pie tin. Roll the leftover dough into a ball and refrigerate. Blindbake the shell for 5 minutes.<br />
<b>For the beef and leek pie filling<br />
</b><b>1. </b>Fry garlic and leeks for 5 minutes. Add the spices, then the beef, tomatoes and stock.<br />
<b>2.</b> Roast in the oven for 1 hour, until beef is tender. Pull beef apart and mix with 2 tsp flour.<br />
<b>3. </b>Roll out the remaining dough. Spoon the filling into the pastry shell and top with the dough. Crimp the edges with a fork.<br />
<b>4. </b>Brush with egg wash and bake for 35 minutes.</p>
