<li><span data-contrast="auto">Heat oil in an ovenproof pan and sauté onions and garlic for about 8-10 minutes until golden.</span></li>
<li><span data-contrast="auto">Add mushrooms and cook for another 8-10 minutes.</span></li>
<li><span data-contrast="auto">Stir through butter, cream and thyme, then simmer gently for 3-4 minutes. Stir through mustard and season. </span><span data-ccp-props="{}"> </span></li>

<li><span data-contrast="auto"> For the béchamel, heat the butter in a pot and whisk in the flour until smooth.</span></li>
<li><span data-contrast="auto">Pour in milk while stirring and cook over a low heat for 8-10 minutes until mixture has thickened.</span></li>
<li><span data-contrast="auto">Add nutmeg, Cheddar, coriander and season, then stir until melted.</span></li>
<li><span data-contrast="auto">Preheat oven to 200°C.</span></li>
<li><span data-contrast="auto">Arrange 3 flapjacks onto a greased, lined baking tray. </span><span data-ccp-props="{}"> </span></li>

<li><span data-contrast="auto"> For the pork filling, heat the oil in a pan and fry pork until crispy, remove from the heat.</span></li>

<li><span data-contrast="auto">Place baby marrows and potatoes in a clean tea towel and squeeze to remove excess moisture.</span></li>
<li><span data-contrast="auto">In a large bowl, combine baby marrows, potatoes, onion, eggs, flour, herbs and season well.</span></li>
<li><span data-contrast="auto">Press mixture into a large greased and lined baking tray. Bake for about 20-25 minutes until golden and cooked through.</span></li>
<li><span data-contrast="auto">Heat the oil in a pan and fry peppers, onion and garlic for about 5-6 minutes.</span></li>
<li><span data-contrast="auto">Add red wine vinegar and sugar and cook over a low heat for about 15 minutes or until sticky.</span></li>
<li><span data-contrast="auto">Once cool, blitz the mixture for a few seconds and set aside.</span></li>
<li><span data-contrast="auto">Combine the yoghurt, garlic powder and cumin. Season well and set aside.</span></li>
<li><span data-contrast="auto">Serve latke, topped with boiled eggs, yoghurt and red pepper relish. </span><span data-ccp-props="{}"> </span></li>

<p class="p1"><b>MAKES</b> 12 <b>// COOKING TIME</b> 30 min</p>
<p class="p1"><b>INGREDIENTS<br />
</b><b>1 kg</b> potatoes, peeled and grated<br />
<b>2</b> onions, peeled and grated<br />
<b>¼ cup</b> flour<br />
<b>2 tsp</b> salt<br />
<b>½ tsp</b> black pepper<br />
<b>2</b> eggs, lightly beaten<br />
Vegetable oil, to shallow-fry</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Press out any excess liquid by placing the grated potatoes and onions between two clean dish towels with a heavy pot on top.<br />
<b>2.</b> In a bowl, mix together the flour, salt and pepper. Whisk in the eggs. Add the potatoes and onions and mix well.<br />
<b>3. </b>Heat 1 cm oil in a pan until medium hot. Carefully drop in 2 tbsp latke mixture at a time, leaving some space in between. Flatten slightly with a spatula or fork. Cook 3–4 minutes per side, flipping over, until crispy and golden brown.<br />
<b>4. </b>Transfer the latkes to a wire rack and season with salt. Place in the oven to keep warm while you fry the rest.<br />
<b>5.</b> Serve with sour cream or apple sauce.</p>
