If you like, add the stems and fry for a few minutes until lightly caramelised before adding a splash of water and the leaves. Cover with a lid and steam until wilted, then remove and decant into a serving bowl. Drizzle with balsamic vinegar, season and serve.</span><span data-ccp-props="{}"> </span></p>

<h3>Method</h3>

<li><span data-contrast="auto"> Heat oil in a large deep pan.</span></li>
<li><span data-contrast="auto"> Fry onion, leeks and garlic for 3-5 minutes.</span></li>
<li><span data-contrast="auto"> Add bay leaves, thyme and rice. Cook for 2-3 minutes until fragrant.</span></li>
<li><span data-contrast="auto"> Add wine (if using) and cook, while stirring, for 3-4 minutes or until liquid is almost evaporated.</span></li>
<li><span data-contrast="auto"> Reduce heat to low.</span></li>
<li><span data-contrast="auto"> Add  cup stock, allowing it to absorb before pouring in next  cup. </span></li>
<li><span data-contrast="auto"> Repeat this process while stirring continuously until all stock is added, about 15-20 minutes. </span></li>
<li><span data-contrast="auto"> Once all the stock is added, there should be a thick, creamy sauce covering the rice. It should be cooked through and plump, but still have a bite.</span></li>
<li><span data-contrast="auto"> Discard bay leaves and thyme.</span></li>
<li><span data-contrast="auto"> Season risotto and stir through cream and Parmesan.</span></li>
<li><span data-contrast="auto"> Add peas, spinach, lemon juice, zest, mint and chilli to a food processor and blitz until smooth. Season well.</span></li>

<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Blanch green vegetables (except celery) in salted boiling water for a minute, then plunge into a bowl of ice water to refresh. Drain well.</span></li>
<li><span data-contrast="auto"> Add vegetables and beans to food processor and pulse until ground.</span></li>
<li><span data-contrast="auto"> Fry celery, onion and garlic in 1 Tbsp oil for 5 minutes. Combine with ground vegetables.</span></li>
<li><span data-contrast="auto"> Mix in oats, basil, soy sauce and seasoning. </span></li>
<li><span data-contrast="auto"> Shape mixture into 4 patties. Cover and refrigerate for 15 minutes to firm up.</span></li>
<li><span data-contrast="auto"> Heat 1 Tbsp oil in a non-stick pan and cook patties for 3-5 minutes on each side until golden.</span></li>
<li><span data-contrast="auto"> Halve rolls and toast in a warm pan. Drizzle with extra oil.</span></li>
<li><span data-contrast="auto"> Serve patties on buns garnished with avocado, hummus, tomatoes and fresh greens.</span></li>

<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Combine pesto ingredients (except oil) in a food processor. Then add two tablespoons of olive oil and pulse until still chunky.</span></li>
<li><span data-contrast="auto"> Drizzle with remaining oil while blending until smooth. Season and set aside.</span></li>
<li><span data-contrast="auto"> Boil beans in a pot of salted water for 30-35 minutes. Drain well.</span></li>
<li><span data-contrast="auto"> Heat olive oil in a pan. </span></li>
<li><span data-contrast="auto"> Pat fish dry and season generously.</span></li>
<li><span data-contrast="auto"> Fry fish skin-side down for about 3-4 minutes. Flip over and fry for about 2-3 minutes. Remove and cover to keep warm. </span></li>
<li><span data-contrast="auto"> Add onion to pan and sauté until golden. Add garlic and cook for another 30 seconds.</span></li>
<li><span data-contrast="auto"> Add butter, beans and tomatoes, and cook for 2-3 minutes. Season. </span></li>
<li><span data-contrast="auto"> Toss through spinach, remove from the heat and stir through ¾ of pesto.</span></li>
<li><span data-contrast="auto"> Serve bean sauté topped with fish, extra pesto, Parmesan and lemon juice.</span></li>

<p><b><span data-contrast="auto">Chef’s Tip: </span></b><span data-ccp-props="{}"> </span><span data-contrast="auto">To prevent fish from sticking to the pan, thoroughly dry the fish using kitchen towel, then season with salt and pepper. Add a small splash of oil to a super-hot pan, then place </span><br />
<span data-contrast="auto">the fish skin-side down into a stainless-steel pan. It will take 2-3 minutes before the fish skin releases from the pan. If you feel any resistance when trying to flip the fish, leave it for a little longer before trying again.</span><span data-ccp-props="{}"> </span></p>

<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Preheat oven to 180°C. </span></li>
<li><span data-contrast="auto"> Generously season beef and lightly dust with flour. </span></li>
<li><span data-contrast="auto"> Heat oil in large pot and brown beef in batches. Set aside. </span></li>
<li><span data-contrast="auto"> Add another glug of oil and sauté onion, carrots and celery for 3-5 minutes or until golden. </span></li>
<li><span data-contrast="auto"> Add garlic and thyme and fry for 1-2 minutes. </span></li>
<li><span data-contrast="auto"> Return beef to pot and pour in tomatoes, beer and stock. Cover and simmer for about an hour or until meat is tender. </span></li>
<li><span data-contrast="auto"> Stir through coriander and simmer for another 10-12 minutes. Season well. </span></li>
<li><span data-contrast="auto"> Roll pastry out on a floured surface to about 3mm thick. </span></li>
<li><span data-contrast="auto"> Place half the pastry into a greased round oven dish and prick the base with a fork. </span></li>
<li><span data-contrast="auto"> Blind bake pastry for 6-8 minutes and set aside. </span></li>
<li><span data-contrast="auto"> Pour filling into pie crust and cover with remaining pastry. </span></li>
<li><span data-contrast="auto"> Brush with egg and bake for 20-25 minutes or until golden. Serve hot. </span></li>

<ol>
<li><span data-contrast="auto"> Preheat oven to 180°C. </span></li>
<li><span data-contrast="auto"> Roll out pastry onto a lightly floured surface to about 3cm thick. </span></li>
<li><span data-contrast="auto"> Cut out 12 circles, larger than the cups of a 6-cup muffin tray. </span></li>
<li><span data-contrast="auto"> Grease your muffin tray and line each cup with pastry, taking care to leave some above the rim of the cup. Prick with a fork and chill in fridge for 15 minutes. Set aside remaining pastry circles. </span></li>
<li><span data-contrast="auto"> Blind bake pastry for 10-12 minutes. Set aside to cool. </span></li>
<li><span data-contrast="auto"> Heat oil in a large pan and sauté onions for 3-5 minutes. </span></li>
<li><span data-contrast="auto"> Add garlic and cook for another minute. Set aside to cool. </span></li>
<li><span data-contrast="auto"> Combine pork, nutmeg, mustard and cooled onions. Season well. </span></li>
<li><span data-contrast="auto"> Spoon filling into muffin cups and level with the back of a spoon. </span></li>
<li><span data-contrast="auto"> Cover filling with remaining pastry and crimp edges with excess pastry to enclose. </span></li>

<strong>100 g</strong> baby potatoes<br />
<strong>130 g</strong> kale (1 packet)<br />
<strong>3 tbsp</strong> parsley, roughly chopped<br />
<strong>½ tsp</strong> ground cumin<br />
<strong>½ tsp</strong> paprika<br />
<strong>250 g</strong> phyllo pastry<br />
Olive oil<br />
Salt and pepper, to taste<br />
Sesame seeds<br />
<strong>For the sunflower mayo</strong><br />
<strong>1 cup</strong> sunflower seeds, soaked<br />
<strong>100 ml o</strong>live oil<br />
<strong>1</strong> garlic clove, grated<br />
<strong>1 tbsp</strong> apple-cider vinegar<br />
Salt and pepper, to taste<br />
Water to dilute <strong>(±1 cup)</strong></p>
<p><strong>METHOD</strong><br />
<strong>For the kale spanakopita</strong><br />
<strong>1.</strong> Preheat oven to 180°C. Bring the potatoes to a boil until cooked. Wilt the kale in salted water and pat dry. Once the potatoes are cooked and cooled, quarter them and add to the kale along with the spices.<br />
<strong>2</strong> .To assemble, layer 4 sheets of phyllo pastry, brushing each sheet with olive oil before adding the next one. Cut the sheets in half, lengthways. Spoon half the lling into each half of the pastry, season and roll snug like a sausage roll. Brush the top with olive oil, sprinkle with sesame seeds and bake for 20–25 minutes until crisp.<br />
<strong>For the sunflower mayo</strong><br />
<strong>1.</strong> Place the sun ower seeds, oil, garlic, vinegar and seasoning in a blender, blend until smooth. Use water to dilute the mayo if needed.<br />
<strong>2.</strong> To serve, portion the spanakopita and serve with the mayo.</p>

</b></span><b>1.</b> Preheat oven to 200°C.<br />

Roast for 45 minutes</span>, <span class="s4">until cooked and slightly charred</span>. Reduce the oven temperature to 160°C and cook for 20 minutes to dehydrate the tomatoes. Take them out and leave to cool.<br />
<b>3.</b> Place the cashews in a food processor and blitz until they turn <span class="s3">into a fine powder. Add the roast </span>tomatoes, peppers, cheese and <span class="s5">½ cup oil. Pulse to form a </span>smooth paste.<br />
<span class="s3"><b>4.</b> Place in a sterilised jar. Pour </span><span class="s6">over just enough oil to cover the </span>surface of the pesto. Seal and store in the fridge</p>

<p class="p1"><b>MAKES 500 ml // cooking time 5 min</b></p>

<b>4.</b> Place in a sterilised jar. Pour <span class="s3">over just enough oil to cover the </span><span class="s5">surface of the pesto. Seal and </span>store in the fridge</p>

<p class="p1"><b>MAKES 500 ml // cooking time 5 min </b></p>

<b>100 g</b> kale<br />
<b>80 g</b> macadamia nuts, toasted<br />
<b>80 g</b> Parmesan, finely grated<br />
<b>3</b> garlic cloves, peeled<br />
Juice and zest of <b>1</b> lemon<br />
Salt and black pepper</p>

<p class="p4"><b>1.</b> Place all the ingredients, plus ⅓ cup water, in a food processor. Pulse to combine until a coarse paste forms. Add more water if necessary. Season to taste.<br />

<p class="p1"><b>MAKES 500 ml // COOKING TIME 1 hour 10 min<br />

</b></span><b>2</b> medium brinjals<br />
<b>50 g</b> almonds<br />
<b>¼ cup</b> olive oil, plus extra to cover<br />
<b>1</b> garlic clove, peeled<br />
Juice and zest of <b>1</b> lemon<br />
<b>1 tsp</b> sumac<br />
<b>½ cup</b> sesame seeds, toasted<br />
Salt and black pepper</p>
<p class="p4"><span class="s2"><b>METHOD<br />
</b></span><b>1.</b> Preheat oven to 220°C.<br />
<span class="s4"><b>2. </b>Place the brinjals on a baking </span><span class="s3">tray and prick a few times with </span>a fork. Bake for 45–50 minutes until they are cooked through and the flesh is soft (the skin may be slightly blackened). Remove and leave to cool.<br />
<b>3. </b>Peel the skin off.<br />
<span class="s5"><b>4.</b> Place all the ingredients in a food processor. Pulse until a coarse paste forms. Season to </span>taste.<br />
<b>5.</b> Place in a sterilised jar. Pour <span class="s3">over just enough oil to cover the </span><span class="s6">surface of the pesto. Seal and </span>store in the fridge.</p>
