<li><span data-contrast="auto"> Parboil beetroots for about 8 minutes. </span></li>
<li><span data-contrast="auto"> Char onion halves over an open flame until almost blackened. (Alternatively, heat a griddle- or non-stick pan over medium-high heat and dry-fry to get a similar result.) </span></li>
<li><span data-contrast="auto"> Place vegetables in a single layer in a 5–8cm deep dish. Season. </span></li>
<li><span data-contrast="auto"> Whisk together juice, oil, vinegar and honey and pour over vegetables. Season well. </span></li>
<li><span data-contrast="auto"> Roast for 40–45 minutes until tender, but vegetables still have bite. </span></li>
<li><span data-contrast="auto"> Spoon vegetables onto a serving platter, separating onion petals if you like. Set platter aside, keeping warm. </span></li>
<li><span data-contrast="auto"> Reduce cooking liquid on the stove over medium-high heat for about 15 minutes until slightly thickened. </span></li>

<h3><span data-contrast="auto">Method</span><span data-ccp-props="{}"> </span></h3>
<ol>
<li><span data-contrast="auto"> Preheat oven to 200°C</span></li>
<li><span data-contrast="auto"> Pierce brinjals all over with a fork, place in an oven tray and brush with a li le olive oil and balsamic vinegar. </span></li>
<li><span data-contrast="auto"> Roast for 20-25 minutes, then remove baby brinjals. Set aside. </span></li>
<li><span data-contrast="auto"> Roast the large brinjals for another 20-30 minutes until they look limp and deflated, with almost blackened skin. </span></li>
<li><span data-contrast="auto">Cool large brinjals slightly, then scoop out flesh, discarding seeds. </span></li>
<li><span data-contrast="auto">Blitz large brinjal flesh with olive oil, garlic, tahini, and ground cumin. Season. </span></li>
<li><span data-contrast="auto"> Toss baby brinjals with bulgar wheat, herbs, feta and lemon juice and peel. </span></li>
<li><span data-contrast="auto"> Spread mixture on a platter and scatter with bulgar wheat salad mix, cucumbers, rocket and crimson salad leaves. </span></li>
<li><span data-contrast="auto"> Garnish with spring onion, chilli and sesame seeds just before serving.</span></li>

Do a mental inventory of what you&#8217;ve eaten throughout the day and see what you&#8217;ve missed. Most often, it&#8217;s going to be fruits, vegetables or dairy. <p>Walking down the supermarket aisle, there’s no denying the beautiful colours and shapes that decorate the fresh-produce section. Although in store, they might not be in season and at optimum consumption level.</p>
<p>Certain produce thrives under different conditions. For example, the heat of summer makes strawberries juicy while winter makes pumpkins sweeter. Cultivating fruit and veg to be harvested outside of their natural seasons results in a loss of nutrients, sometimes smaller fruit and veg, and a reduction in flavour.</p>
<p><strong>Seasonal secrets</strong></p>
<p>Winter is commonly marked with colds and flu, and in summer we need more water to stay hydrated and thankfully nature provides us with exactly what we need to stay healthy during those seasons.</p>
<p>Vitamin C-rich citrus – such as orange, kiwi, lemon, guava, grapefruit, and vegetables such as broccoli, cauliflower, Brussel sprouts and capsicums – is in abundance during the cold, cloudy months when our immune-systems must work slightly harder. In the same sense, watermelon and tomatoes are picked in the hot months to nourish our cells with foods naturally high in water.</p>
<p><strong>The better choice</strong></p>
<p>Besides the fact that certain foods appear at certain times of the year to fulfil the specific nourishing roles our bodies need, eating seasonally has a great effect on the economy and environment too.</p>
<p>Out of season fruit and veg is imported from across the world, which pushes up costs as well as carbon dioxide emissions. Buying seasonal produce benefits the local market and boosts our own economy. Your body, the earth and your budget will thank you for it!</p>

<strong>Serves: </strong>9-10</p>
<h3>Ingredients</h3>
<p>1 large watermelon<br />
2 apples, cored and sliced, extra to serve<br />
2 cups strawberries, sliced, plus extra to serve<br />
4 kiwis, peeled and sliced, plus extra to serve<br />
¼ cup raspberries, plus extra to serve<br />
¼ cup blueberries, plus extra to serve<br />
1 cup full cream yoghurt<br />
3 mint sprigs<br />
Tip: You can use your watermelon rinds to make a lovely konfyt.</p>
<h3>Method</h3>
<p>1. Cut the rind from the melon and shape into a cylinder. Slice into layers. Reserve the offcuts.<br />
2. Place a layer of melon on a serving platter and arrange the apple, strawberry and kiwi slices on top. Fill any gaps with raspberries and blueberries.<br />
3. Continue layering in this way, finishing with a layer of watermelon. You can use the skewer to hold it together.<br />
4. Spoon the yoghurt on top of the watermelon and decorate with extra fruit and mint.</p>
