<li><span data-contrast="auto"> Mix dry ingredients and add to wet mixture until smooth and well combined. </span></li>
<li><span data-contrast="auto"> Pour batter into a greased 25-30cm oven dish and bake for 25-30 minutes. </span></li>
<li><span data-contrast="auto"> While pudding is in the oven, combine all ingredients for the brandy syrup over medium heat. </span></li>
<li><span data-contrast="auto"> Stir until the sugar has dissolved and allow to simmer for about 10-15 minutes. </span></li>

<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Combine flour, baking powder and salt in a large bowl. </span></li>
<li><span data-contrast="auto"> Whisk together eggs, milk, vanilla and melted butter in a jug. </span></li>
<li><span data-contrast="auto"> Pour wet ingredients into dry ingredients and mix well until smooth. </span></li>
<li><span data-contrast="auto"> Heat some oil or butter in a large pan over medium-low heat. </span></li>
<li><span data-contrast="auto"> Place three round 9cm cookie cutters sprayed with non-stick spray in pan and pour ¾ cup batter into each. </span></li>
<li><span data-contrast="auto"> Cook for 1-2 minutes until golden, remove cutters and flip to cook the other side for another 1-2 minutes. Repeat with remaining batter. </span></li>
<li><span data-contrast="auto"> Heat butter in a separate pan until foaming. </span></li>
<li><span data-contrast="auto"> Add brown sugar then bananas and fry for 4-5 minutes until well browned but still firm. Set aside. </span></li>
<li><span data-contrast="auto"> Combine orange zest and juice with icing sugar and whisk together until smooth. </span></li>
<li><span data-contrast="auto"> Pile crumpets onto plates, top with caramelised banana, drizzle with citrus icing and top with chopped pecans. </span></li>

<h3>Method</h3>

<li><span data-contrast="auto"> Melt butter in a saucepan and add rosemary. Remove from heat and cover with a lid and infuse for five minutes. Discard rosemary and allow butter to cool. </span></li>
<li><span data-contrast="auto"> Whisk together cooled butter, eggs, citrus juice and yoghurt. </span></li>
<li><span data-contrast="auto"> Add sugar, flour and baking powder. Mix well. </span></li>
<li><span data-contrast="auto"> Pour batter into a large greased Bundt tin and bake for 50-60 minutes, or until a skewer inserted comes out clean. Cool in tin. </span></li>
<li><span data-contrast="auto"> Whisk together icing ingredients to create a smooth and thick icing. </span></li>
<li><span data-contrast="auto"> Drizzle cake with icing, and garnish with fresh citrus slices and fresh rosemary to serve. </span></li>

</b><b>1. </b>Peel the grapefruit and slice into ½ cm thick rounds.<br />
<b>2.</b> Separate the cabbage leaves. Drizzle with 2 tbsp olive oil, and season with salt and pepper.<br />
<b>3. </b>Char cabbage in a searing-hot pan until soft and slightly blackened on the edges.<br />
<b>4. </b>For the dressing, mix the red-wine vinegar and remaining 2 tbsp oil until emulsified.<br />
<b>5. </b>To serve, arrange grapefruit and cabbage on a plate, drizzle with dressing and scatter with mint leaves.</p>

</b><b>250 g</b> mascarpone<br />
<b>230 g</b> cream cheese<br />
<b>¼ cup </b>honey<br />
<b>2 tsp</b> vanilla essence<br />
<b>2</b> grapefruits, peeled and cut into segments<br />
<b>4 sprigs</b> thyme<br />
<b>2 tbsp</b> flaked almonds, toasted</p>

</b><b>For the crust<br />
</b><b>1. </b>Preheat oven to 180°C. Grease a rectangular baking tin.<br />
<b>2.</b> Whisk together flour, sugar and salt. Add butter and egg, mixing until the dough comes together in a ball.<br />
<b>3. </b>Press the dough evenly into the baking tin and prick all over with a fork. Bake for 20–30 minutes, until golden.<br />
<b>4. </b>Remove the tin from the oven and place on a rack to cool.<br />
<b>For the filling<br />
</b><b>1. </b>Mix together the mascarpone, cream cheese, honey and vanilla.<br />
<b>2.</b> Spoon into the cooled crust. Arrange grapefruit segments, thyme sprigs and flaked almonds on top.</p>

<p class="p1"><b>INGREDIENTS<br />
</b><b>1 × 400 ml tin</b> coconut milk<br />
<b>½ cup</b> water<br />
<b>2 cups </b>oats<br />
<b>½ tsp </b>salt<br />
<b>2 tsp</b> honey<br />
<b>1 tsp</b> vanilla essence<br />
<b>1</b> grapefruit, cut into segments, to serve<br />
<b>¼ cup</b> coconut flakes, toasted, to serve<br />
<b>¼ cup</b> cashew nuts, toasted, to serve<br />
<b>2 tsp</b> honey, to serve</p>
<p class="p1"><b>METHOD<br />
</b><b>1. </b>Bring coconut milk and water to a boil in a pot over medium heat. Add the oats and salt and reduce the heat. Simmer for 5 minutes, stirring occasionally, until liquid has been absorbed and the oats are soft.<br />
<b>2. </b>Mix in the honey and vanilla essence.<br />
<b>3. </b>Dry-fry grapefruit in a hot pan until slightly caramelised, about 3–5 minutes.<br />
<b>4. </b>Top the oats with grapefruit segments, coconut flakes and cashew nuts. Drizzle with honey.</p>
