<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Preheat oven to 180°C. </span></li>
<li><span data-contrast="auto"> Cut lengthways into the side of each chicken breast, creating a pouch. </span></li>
<li><span data-contrast="auto"> Stuff with cheese, close and season. </span></li>
<li><span data-contrast="auto"> Heat oil in a pan and fry chicken until golden on both sides, about 10 minutes. </span></li>
<li><span data-contrast="auto">5. Finish chicken in the oven until cooked through, about 15 minutes. </span></li>
<li><span data-contrast="auto"> For pickled pear slaw, begin by making pickling liquid. Bring water, sugar and vinegar to the boil. Simmer until sugar has dissolved. </span></li>
<li><span data-contrast="auto"> Remove pickling liquid from heat. Place fennel and pears in liquid, cover with clingfilm, and leave to pickle for 20 minutes. </span></li>
<li><span data-contrast="auto"> Strain fennel and pears and combine with remaining slaw ingredients. </span></li>
<li><span data-contrast="auto"> Layer rolls with lettuce, chicken and top with pickled pear slaw.</span></li>

<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Preheat oven to 200°C. </span></li>
<li><span data-contrast="auto"> Slice each pear Hasselback-style, without cutting all the way through. </span></li>
<li><span data-contrast="auto"> Heat sugar and water in a large ovenproof pan over medium heat. </span></li>
<li><span data-contrast="auto"> Stir until sugar dissolves and boil until liquid is amber and has the consistency of caramel. Remove from heat and whisk in butter. </span></li>
<li><span data-contrast="auto"> Arrange pears cut-side up in pan, spooning caramel over to coat evenly. </span></li>
<li><span data-contrast="auto"> Roll puff pastry out onto a floured work surface. </span></li>
<li><span data-contrast="auto"> Cut out a large circle, slightly bigger than your pan, and cover pears with pastry, crimping the edge lightly to seal. </span></li>
<li><span data-contrast="auto"> Brush pastry with egg and pierce with a fork. </span></li>
<li><span data-contrast="auto"> Bake for 20-25 minutes or until pastry is golden. </span></li>
<li><span data-contrast="auto"> Remove and set aside to cool for a few minutes, then carefully turn out onto a serving platter. </span></li>
<li><span data-contrast="auto"> Drizzle with remaining caramel, and serve with scoops of ice cream and mint sprigs.<br />

<h3>Method</h3>
<ol>
<li><span data-contrast="auto"> Place all ingredients, except sugar and seasoning, in a large pot. Bring to the boil and simmer for 20-25 minutes or until the apples and pears have softened slightly. </span></li>
<li><span data-contrast="auto"> Add sugar and stir gently until dissolved. </span></li>
<li><span data-contrast="auto"> Simmer for 1-1 ½  hours, or until chutney evenly coats the back of a wooden spoon. </span></li>
<li><span data-contrast="auto"> Remove chutney from heat. Remove star anise and season. </span></li>
<li><span data-contrast="auto"> Spoon into sterilised jars, or set aside to cool slightly and serve. </span></li>

<p class="p1"><span class="s2"><b>INGREDIENTS<br />
</b></span><span class="s1"><b>200g</b> bread or pizza dough<br />
</span><span class="s1">Olive oil, to drizzle<br />
</span><span class="s1"><b>¼ cup</b> honey<br />
</span><span class="s1"><b>2</b> pears, thinly sliced<br />
</span><span class="s1"><b>70g</b> Gorgonzola<br />
</span><span class="s1"><b>Handful</b> rocket<br />
</span><span class="s1">Salt and black pepper </span></p>
<p class="p1"><b>METHOD<br />
</b><span class="s3"><b>1.</b> Preheat oven to 230°C and heat a griddle pan to smoking point. Flour a baking tray</span><span class="s4">.<br />
</span><b>2.</b> Roll out the dough into a circle 1 cm thick (about the size of the griddle pan). Drizzle with a little oil and place in the pan.<br />
<span class="s5"><b>3.</b> Cook the dough for about 3 minutes, </span><span class="s3">until done on one side (taking care that it doesn’t burn). Then flip over and cook on the other side. Remove from the pan and place on the baking tray.<br />
</span><span class="s5"><b>4.</b> Heat 3 tbsp honey in a pan. Cook the</span><span class="s3"> pears on both sides (in batches, to avoid overcrowding) until caramelised.<br />
</span><span class="s6"><b>5.</b></span><span class="s3"> Arrange the pear slices on the pizza base and crumble the Gorgonzola over it. Bake for 5–10 minutes, until the cheese is melted.<br />
</span><span class="s4"><b>6.</b> Scatter the rocket over the pizza, drizzle </span><span class="s5">with the remaining honey and season. </span><span class="s3">Serve warm.</span></p>

</b></span><span class="s1"><b>For the sweet potato gnocchi<br />
</b></span><span class="s1"><b>2</b> medium sweet potatoes, scrubbed<br />
</span><span class="s1"><b>1 tsp</b> salt<br />
</span><span class="s1"><b>1 cup</b> cornflour, plus extra to dust<br />
</span><span class="s1"><b>½ cup</b> potato flour<br />
</span><span class="s1"><b>1 packet</b> streaky bacon, sliced<br />
</span><span class="s1">Vegetable oil, to fry<br />
</span><span class="s1"><b>For the sauce<br />
</b></span><span class="s1"><b>¾ cup</b> cream<br />
</span><span class="s1"><b>3 tbsp</b> Gorgonzola<br />
</span><span class="s1">Black pepper<br />
Parsley, to garnish</span></p>
<p class="p1"><span class="s1"><b>METHOD<br />
</b></span><span class="s1"><b>For the sweet potato gnocchi<br />
1.</b> Preheat oven to 200°C.<br />
</span><span class="s1"><b>2.</b> Place the sweet potatoes on a baking tray. Roast for 1 hour, until soft. Set aside </span>to cool slightly for easy handling, then pee<span class="s1">l.<br />
</span><span class="s1"><b>3.</b> Mash the warm sweet potato until fine. Add the salt, corn and potato flours and mix until a dough forms. Turn on to a floured surface and knead to form a stiff dough.<br />
</span><span class="s1"><b>4.</b> Divide into 4 equal pieces and roll each piece into a 3 cm-thick rope. Cut into 2 cm pillows and score with a fork.<br />
</span><span class="s1"><b>5.</b> Drop a few pillows at a time into a pot of boiling salted water. Once they’ve floated to the top, remove with a slotted spoon.<br />
</span><span class="s1"><b>6.</b> In the meantime, fry the bacon in heated oil until crisp. Drain on paper towel.<br />
</span><span class="s1"><b>For the sauce<br />
</b></span><span class="s1"><b>1.</b> Heat the cream in a saucepan.<br />
<b>2.</b> Stir in the Gorgonzola.<br />
</span><span class="s1"><b>3.</b> Serve gnocchi with Gorgonzola sauce, crispy bacon and black pepper. Garnish with fresh parsley.</span></p>
