</b></span><span class="s3"><b>400 g roll</b></span> puff pastry<br />
<span class="s3"><b>5</b></span> eggs (3 whole, 2 yolks)<br />
<span class="s3"><b>250</b></span> <span class="s3"><b>ml</b></span> cream<br />
<span class="s3"><b>1</b></span> <span class="s3"><b>clove</b></span> garlic, peeled and crushed<br />
Salt and pepper<br />
<span class="s3"><b>250 ml</b></span> frozen peas, defrosted<br />
<span class="s3"><b>2</b></span> <span class="s3"><b>tbsp</b></span> chopped mint<br />
<span class="s3"><b>100 g</b></span> goat’s cheese, crumbled</p>
<p class="p3"><span class="s2"><b>METHOD<br />
</b></span><span class="s4"><b>1.</b></span><span class="s2"> Roll out the puff pastry on a lightly floured</span> surface to about 5 mm thick.<br />
<span class="s3"><b>2.</b></span> Line a lightly greased tart tin with the pastry and place in the fridge to chill for 30 minutes.<br />
<span class="s3"><b>3.</b></span> Preheat oven to 180°C.<br />
<span class="s3"><b>4.</b></span> Blind-bake the pastry for 15 minutes, until just cooked and lightly golden.<br />
<span class="s3"><b>5.</b></span> Whisk the whole eggs, egg yolks, cream and garlic, and season with salt and pepper.<br />
<span class="s3"><b>6.</b></span> Pour the peas into the pastry <span class="s2">shell and scatter the mint on top.</span> Pour the egg mixture over and dot with the cheese.<br />
<span class="s3"><b>7.</b></span> Bake for 20–25 minutes, until just set.<br />
<span class="s3"><b>8.</b></span> Allow to cool slightly, then serve with a salad.</p>

</b></span><span class="s7"><b>1. </b></span><span class="s4">Place the goat’s cheese rounds in the freezer for 15 minutes.<br />
</span><span class="s6"><b>2.</b></span> Place the flour, the egg, and the breadcrumbs and salt in 3 separate bowls.<br />
<span class="s6"><b>3.</b></span> Remove the cheese from the freezer and dip in the flour, then egg and then the breadcrumbs, completely covering in crumbs.<br />
<span class="s6"><b>4.</b></span> Heat the oil in a pot over medium heat.<br />
<span class="s6"><b>5.</b></span> Make the salad dressing by mixing all the ingredients with a hand blender.<br />
<span class="s6"><b>6.</b></span> Carefully place the cheese in the hot oil and fry until golden brown. Remove and drain on paper towel.<br />
<span class="s6"><b>7.</b></span> Arrange the salad leaves on a platter with the strawberries, <span class="s4">cucumber, onion and deep-fried</span> goat’s cheese croutons.<br />
<span class="s6"><b>8. </b></span>Drizzle with the dressing and serve.</p>

<b>3.</b> To serve, top bulgar with the cheese and plums. Drizzle over the dressing.</p>

</b><b>1.</b> Brush the mushrooms with oil and grill on a griddle pan until softened (or place under the grill for 10 minutes).<br />
<b>2.</b> Slice the cheese into 1 cm discs, sprinkle with zest and place inside the mushrooms. Season. Place them back on the griddle pan or under the grill until the cheese softens.<br />
<b>3. </b>Serve each mushroom on a slice of toast with a drizzle of pesto and and a handful of rocket.</p>

<p class="p1"><b>INGREDIENTS<br />
</b><b>For the goat’s cheese<br />
</b><b>1 L</b> goat’s milk<br />
Juice of <b>2</b> lemons<br />
<b>2 tbsp</b> vinegar<br />
<b>½ tsp</b> salt<br />
<b>For the crispy carrots<br />
</b><b>500 g</b> rainbow carrots, thinly sliced<br />
<b>⅓ cup</b> olive oil<br />
Salt and pepper<br />
<b>To serve<br />
</b><b>3 tbsp</b> olive oil<br />
<b>3 tbsp</b> red-wine vinegar<br />
<b>1 tsp</b> dried origanum</p>
<p class="p1"><b>METHOD<br />
</b><b>For the goat’s cheese<br />
</b><b>1.</b> Line a colander with 2 or 3 layers of fine cheesecloth or a clean dish towel.<br />
<b>2.</b> In a heavy-based pot, heat the milk until it reaches 82°C (it should be steaming, but not boiling). Stir frequently to ensure it heats evenly throughout.<br />
<b>3.</b> Remove from the heat. Add lemon juice and vinegar. Set aside for 10 minutes.<br />
<b>4. </b>Slowly pour into the cheesecloth. Add the salt and stir gently.<br />
<b>5. </b>Gather the ends of the cheesecloth and tie them together with kitchen string. Allow the cloth to hang and drip for about 1 hour (hanging it over the sink works well).<br />
<b>6. </b>Once all the excess moisture has dripped from the cheese, remove the cheesecloth and refrigerate it.<br />
<b>For the crispy carrots<br />
</b><b>1.</b> Preheat oven to 180°C. Line a baking tray.<br />
<b>2.</b> Toss the carrots with oil, salt and pepper.<br />
<b>3. </b>Spread them out on the baking tray (ensure they are evenly spaced and lying flat, so that each strip becomes crispy). Bake for 30–35 minutes.<br />
<b>4.</b> Serve the crispy carrots with the goat’s cheese. Drizzle with oil and vinegar, and sprinkle with origanum.</p>

<p class="p1"><b>INGREDIENTS<br />
</b><b>For the chive pesto<br />
</b><b>2</b> garlic cloves, fried<br />
<b>100 g</b> almonds, plus extre to garnish<br />
<b>100 g</b> goat’s cheese, plus extre to garnish<br />
<b>50 g</b> chives, plus extre to garnish<br />
<b>±½ cup</b> olive oil<br />
<b>For the spinach gnocchi<br />
</b><b>1 kg</b> floury potatoes<br />
<b>300 g</b> spinach, steamed<br />
<b>Handful</b> chopped parsley<br />
<b>3 </b>eggs, whisked<br />
<b>±300 g</b> cake flour</p>
<p class="p1"><b>METHOD<br />
</b><b>For the chive pesto<br />
</b><b>1. </b>Place the fried garlic, almonds, cheese and chives in a food processor. Blitz until very finely chopped.<br />
<b>2.</b> With the food processor running, trickle in the oil through the top. Add a little more if needed to create a smooth paste. Season.<br />
<b>For the spinach gnocchi<br />
</b><b>1.</b> Place the potatoes in a large pot and bring to the boil. Decrease the heat and simmer for 20–30 minutes, until just soft (a knife should cut through easily when testing them).<br />
<b>2. </b>Meanwhile, blitz the spinach in a food processor. Place in a tea towel and squeeze out any excess liquid.<br />
<b>3. </b>Drain the potatoes, then peel them using a tea towel (to prevent your hands burning).<br />
<b>4.</b> Pass the potatoes through a ricer, if you have one, or mash them until completely smooth and lump-free.<br />
<b>5. </b>Make a well in the mound of potatoes. Add the spinach, parsley and eggs. Sprinkle with half the flour. Mix with your hands, without kneading the dough. Add a little more flour if needed, mixing until the dough no longer sticks to your hands.<br />
<b>6. </b>Very gently roll the dough into logs. Cut them into 10 cm pieces.<br />
<b>7. </b>Bring a pot of salted water to the boil and cook the gnocchi for 5–7 minutes, until they rise to the surface of the water.<br />
<b>8. </b>Heat a little oil in a pan and fry gnocchi until golden brown. Serve with the pesto, toasted almonds, goat’s cheese and chives.</p>
